Thy Whisky Fad No° 16 REXThy Whisky no 16 - REX is a special bottling on the occasion of Her Majesty Queen Margrethe II's visit to their farm and distillery in August 2021. For this special occasion, they have chosen a type of whisky that they have never bottled before. The distillate is redes 'Kara' distillate with a hint of peat smoke. The whisky has been aged for 4-4 1?2 years in ex-bourbon and PX sherry casks.

Aromas of burnt caramel, the deep sweetness of PX sherry and fresh vanilla from the bourbon barrels merge into a very round and complex sweetness. The peat adds a touch of 'green', acidic notes such as grass and citrus fruits. They have bottled the whisky at 49.5 % alc.vol. where the whisky is intense and aromatic but at the same time feels very soft on the tongue. Thy Whisky No 17 STOVT Danish Single Malt Whisky 51,2%.

This Thy Whisky No 17 has been named STOVT - an organic Danish Single Malt Whisky at 51,2% Stovt is a very special whisky for Thy Whisky. It is blended from a selection of their single malt whisky barrels. Both bourbon and oloroso sherry casks, with and without smoke, with light and slightly burnt malt types and from different vintages.

Finally, it has been given a short finish in stout casks that have aged Limfjordsporter (their favorite stout) at Thisted Bryghus. This is the third time they have bottled a "Stovt". This time they have turned up the beechwood smoke a bit and the bourbon barrels have a larger part of the credit for the cask character. The whisky is composed of barrels that are 3-6 years old. The result is a lightly smoky whisky with a complex sweetness with notes of bourbon vanilla, fruit, soft toffee, burnt caramel and a hint of sweet licorice. Thy Whisky No 18 KORNMOD Danish Single Malt Whisky 47,3% This Thy Whisky No 18 has been named KORNMOD - an organic Danish Single Malt Whisky of 47,3% - After several months of waiting, Thy Whisky finally has a new single malt whisky ready. It has been named "Thy Whisky no 18 - Kornmod". Kornmod is made from the forgotten old Danish barley variety from the early 1900s "Imperial", which Thy whisky has helped to revive and multiply from a handful of kernels stored in a deep freezer in the Nordic Genebank to a quantity that makes sense to malt and make whisky from. The whisky has also been given a genuine Thy'sk cask maturation. The whisky is aged for just over 3 years in newly built oak barrels that previously held our own Spelt-Rye whisky, as well as a few small ex-bourbon barrels. The result is a soft, spicy and sweet whisky that smells of freshly picked apples, vanilla and summer... Only 929 pieces have been produced of this Thy Whisky No 18 Kornmod. Thy Whisky No 20 Maltmod Dansk Single Malt Whisky

Thy Whisky No 20 Maltmod is a single malt whisky shaped and created by experiments in Thy Whisky's own maltings. It is characterized by a rich and alluring aroma of caramel, which stems from experiments in their maltings with dark 'caramel malts', which otherwise hardly ever find their way into traditional whisky production. The intense 'Cara' new make has been aged in 12 small bourbon octaves (50 liters), then larger bourbon casks, and finally blended with two oloroso casks, which have then been given time to accumulate in the barrels.

The result is a whisky with great vanilla sweetness and intense burnt caramel with underlying fruit notes. On the nose, there are notes of leather and cedar with a faint hint of tobacco. The taste starts with sweet vanilla toffee, nougat and a little pickled fruit and ends in burnt caramel with a hint of cloves and oak. A sweet and unconventional single malt with complex flavors and aromas. Only 1634 of this Thy Whisky No 20

After the long maturation period in the cask, the whisky has developed a wonderfully intense aroma of tropical fruits, vanilla, baked apples, and cream caramel. The whisky is well-oiled, and the aftertaste lingers for a long time. It is the first time that Thy Whisky formally assigns an age statement to a bottle - because they believe it deserves it! In many ways, it showcases the direction in which they plan to work with their bourbon casks in the future.

The whisky is made from Odyssey barley, pale malt, and beechwood smoked malt, adding subtle warmth and smoke to its otherwise soft and oily mouthfeel. It balances sweetness and complexity with a lightly spiced finish and a hint of beechwood smoke that adds character without overpowering.

This is the first PX Limited Edition 2024 whisky drawn from specially selected old and intense PX sherry casks from our warehouse, bottled at cask strength. This whisky is intense, deep, and sweet, with flavor notes of raisins and dried fruits, combined with earthy, oxidized nuances from the old casks and a hint of peaty smoke. It is a vatting of four 1st fill casks, offering layers of complexity and a delightful, oily mouthfeel and warmth, with a slight touch of warming peaty smoke.
