    In Marseillan, where the Mediterranean laps against the Étang de Thau, the same oak casks have stood beneath the open sky for more than 200 years, while sun and salt air have slowly shaped an entire vermouth tradition. Noilly Prat Rouge Vermouth is the house's answer to Marseillan's warmer, spiced side.

    Noilly Prat Rouge Vermouth is a French Vermouth Liqueur from Maison Noilly Prat in Marseillan, made from white wine infused with a secret blend of herbs and spices, with an alcohol strength of 16%. The house was founded in 1813 by herbalist Joseph Noilly, who developed France's first vermouth roughly 50 years before the Italian house of Martini, and the Noilly Prat name remains inseparable from the Mediterranean port town of Marseillan. While the house's dry vermouth is traditionally aged outdoors in oak casks beneath the open sky, Rouge follows a different path: the wine, made from Picpoul and Clairette grapes grown in the Languedoc, is infused with around 20 selected herbs and spices, including sweet orange from Spain, cinnamon from Sri Lanka, cloves from Madagascar and cinchona bark from Ecuador. Half of the wine matures in oak casks in the house's Chai St Louis, while the rest rests in large vats, before the two parts are blended into the deep, reddish-brown vermouth.

    Noilly Prat Vermouth Dry is a French dry vermouth from Maison Noilly Prat in Marseillan, made from white wine infused with a secret blend of herbs and spices, with an alcohol strength of 18%. The house was founded in 1813 by herbalist Joseph Noilly, who developed the recipe roughly 50 years before the Italian house of Martini, creating France's first vermouth. The wine, made from Picpoul and Clairette grapes grown in the Languedoc, undergoes the house's signature method known as L'Enclos: after eight months in Canadian oak casks, the wine is transferred to half-hogsheads of Limousin oak, where it matures outdoors beneath the open sky for up to a year, exposed to Mediterranean sun and the salt air of the Étang de Thau. About Noilly Prat

Noilly Prat is a French vermouth from Marseillan in southern France, founded in 1813 and long a staple in bartenders' toolkits. For newcomers it's the dry vermouth that ties a classic Dry Martini together; for collectors it's notable that the vermouth is still aged outdoors in oak casks under open sky, a unique method called 'plein air' that lets temperature swings and sea air shape the flavour in a way no other vermouth producer practises at the same scale.

History & Background

Noilly Prat was founded in 1813 by Joseph Noilly, who specialised in fortifying and ageing wine in a new way that would later define the French vermouth style. After his death, the family and later his partner Prat carried the recipe forward, giving the brand its current name. The distinctive outdoor ageing in oak casks, where the wine is exposed to seasonal temperature swings right on the Mediterranean coast, became part of the house's signature and still sets Noilly Prat apart from most other vermouth producers.
