He is the smallest of the thirteen brothers. In mid-December he comes down from the mountains, creeps in while everyone sleeps, and heads straight for the frying pans. It is the crispy scrapings stuck to the bottom he is after. On the label he hovers in front of a red moon with a pan in each hand.

Sall Whisky Stúfur Julewhisky 3/16 is a Single Malt Danish Whisky from East Jutland, matured on 1st fill port casks, finished in small Oloroso casks and bottled at 50%.

This is number three in Sall Whisky's annual Christmas whisky series, and after Stekkjastaur and Giljagaur it is Stúfur's turn. The series is built around the Icelandic Yule Lads, the Jólasveinar, and their parents Grýla and Leppalúði. The idea came from the distillery's Icelandic Master Distiller, who brought the legend with him from his childhood. Each release has its own Yule Lad on the label, and the Stúfur illustration is by Jon Gotlev.

The whisky is made from pale malt of Prospect barley, harvested in 2022 on the field Højmark N near Mosevang, and it is not smoked. It is both Single Malt and Single Farm, and the bottle carries the EU organic logo and the Authentic Danish Whisky mark.

The cask story comes in two steps. Three years on 1st fill port casks, then a finish in small Oloroso casks. Only 700 bottles of 50 cl were filled.

Tasting Notes

Nose

Ripe dark fruit, raisins and dried figs, with a touch of red berries from the port casks. Behind them come toasted nuts and caramel, and some spiced oak from the Oloroso.

Taste

Sweetness and spice meet in good balance. There is dark chocolate, candied fruit and orange peel, with warm spices on top. At 50% it has weight and a full mouthfeel, but the cask notes are never drowned out.

Finish

Long and warm. Dried fruit, oak and nuts linger, and a gentle spiced sweetness closes it.

Seventeen of the gins are named on the box. The other seven are mystery gins, revealed only when the door is opened, and they sit at 40 to 43%. Among the named ones are Cotswolds Cloudy Christmas Gin from Warwickshire at 46%, Kirkjuvagr Yuletide Gin from Orkney, Whitby Distillery's Demeter Edition from North Yorkshire and Salcombe Gin's Start Point The Azores Edition from Devon. Further from British soil you find Forty Spotted Tasmanian Dry Gin from Hobart, Gin Provincia Andes Dry Gin from Colchagua in Chile, Sông Cái's Việt Nam Dry Gin from Hanoi and 3 Lacs Lemon & Sunflower Gin from Quebec.

The styles run wide. Some are classic and fresh, like Sky Wave's White Horse London Dry Gin from Oxfordshire and Great Glen's Light & Zesty Highland Gin from Loch Ness. Some are plainly Christmassy: Forged Spirits Winter Gin from West Yorkshire, St Davids Christmas Edition Gin from Pembrokeshire, Manchester Gin's Under the Tree Gin and Pennington's Lakeland Moon Snowfell Gin from Cumbria. Then there are the ones rooted in a place: The Fynoderee Distillery's Manx Dry Elder Shee Gin from the Isle of Man and Lantic's Morva Gin from Cornwall. Thicket & Thistle Sloe Gin from Hampshire is the weakest in the box at 26%, and the only one leaning towards sweet and velvety rather than dry.

Behind the box is Craft Gin Club, a British gin club based in Corby that sends its members a new craft gin every month. The calendar is that idea in fast-forward: 24 small bottles picked by the club from the distillers it calls its Family of Distillers. In total there are 120 cl of gin in the box.

Tasting Notes

Nose

Citrus dominates. Clementine and warm spice from Cotswolds, pink grapefruit and lemon thyme in the elderflower gin from the Isle of Man, juicy orange at Great Glen. Flowers arrive as elderflower and rose in Morva Gin, and the winter spices are clear in Kirkjuvagr, where frankincense and myrrh meet bright notes of ginger.

Palate

The range is wide. The Tasmanian gin is peppery and green with pepperberry and makrut lime leaves, while Great Glen sets watercress against the orange as a peppery counterweight. Sông Cái leans into spice and fruit from Vietnamese botanicals, Whitby towards flowers, spice and something coastal, and St Davids towards chestnut and fig. Thicket & Thistle is the opposite of dry: rich, fruity and sweet with a soft, velvety body.

Finish

Mostly smooth and rounded. Sky Wave's London Dry Gin is described with a long, balanced finish, while 3 Lacs ends softly after layers of citrus and spice.

Behind the calendar stands the Jutland spirits wholesaler Mac Y, and what sets this particular edition apart is that all six brands already sit in the company's own portfolio – nothing here has been borrowed in from outside. The journey starts in London with Hayman's, where the Hayman family has been distilling gin since 1863 and the business is now run by the fifth generation, siblings James and Miranda Hayman, with father Christopher still at the helm as gin's elder statesman. From London Dry and Old Tom to the punchy Royal Dock Gin Navy Strength and a couple of sweeter fruit and berry expressions, the whole Hayman's range is here – six bottles in total. Warner's draws its gin from Falls Farm in Northamptonshire, where Tom and Tina Warner started out in 2012 and have made a principle of using home-grown botanicals ever since – their rhubarb gin was the world's first of its kind, and it appears here alongside apple and pear, elderflower, raspberry, blackberry and sloe. Cotswolds Distillery in Warwickshire, founded in 2014 by the American ex-banker Daniel Szor, contributes its Dry Gin, while Icelandic Cubical from Eimverk Distillery in Garðabær brings two very different expressions in Mango and Ultra Premium. Tasting Notes

Nose

Juniper runs through the whole box as the common thread, but beyond that the scents are all over the place. Some bottles bring sharp citrus and a hint of rose, others warm Christmas spice, and a couple of the berry gins send sweetness and freshly picked fruit up out of the glass, while the Navy Strength expression carries a much boozier, more peppery nose.

Palate

On the palate it ranges from the dry, juniper-driven classic style through sweet, juicy fruit and berry expressions to a genuinely spiced Christmas edition with cinnamon and clove. The strongest bottles bite back clearly with heat and power, while the mildest are light and easygoing.

Finish

Short and fresh on most of the fruit and berry expressions, longer and warmer on the Navy Strength bottle and the more spiced Christmas gins.

The journey passes the Caribbean classic Plantation Barbados 5 YO from Barbados, moves on to 1731 Fine & Rare Guatemala Grand Reserva from Guatemala, and takes in two entirely different expressions from Cane Island – one from Trinidad, one from Australia. Naga Siam draws its rum from Thailand, Rhum J.M and Damoiseau represent the French agricole style from Martinique and Guadeloupe respectively, Worthy Park and Chairman's Reserve stand for Jamaica and Saint Lucia respectively, and Novo Fogo brings Brazilian cachaça into the mix. Whistler, usually known for Irish whiskey from Boann Distillery, appears here in a rum expression, while Batavia Arrack from By the Dutch draws on the Javanese arrack tradition. Some bottles bring warm molasses, brown sugar and toasted coconut, others fresh sugarcane, citrus and green notes from the French agricole styles, and a couple of the strongest send up a dry, almost peppery spice note alongside freshly cut oak.

Palate

On the palate the spread continues. Some of the 24 are light and soft with a touch of vanilla and tropical fruit, others dry and oak-driven with caramel, tobacco and dark fruit, and the strongest – led by Patridom XO Cask and Pusser's Gunpowder Proof – bite straight back with pepper and spice.

Finish

24 Days of Rum Blue Edition is a rum tasting calendar from the Danish spirits house 1423, made up of 24 miniature bottles at 2cl each from 24 different countries and bottled at 42.5%. The idea is simple: open a new bottle each day in December and travel to a new country – from classic Caribbean and Latin American sugarcane and molasses rums to takes on the category from Asia and Europe, plus a few rum-based spirits along the way that borrow rum's sweetness without quite being rum. Every miniature carries its own label and a QR code that opens the background story of that particular rum house, so the box works as much as a travel guide as a tasting kit. Bornholm Spirits Tasting Box No. 2 is a gift box containing eight 5 cl miniature bottles of schnapps, dram, coffee liqueur and gin from the Danish producer Bornholm Spirits, with ABV ranging from 18% to 40%.

The brand is run by three friends who bought Den Bornholmske Spritfabrik in Nexø in 2021 and carried on the factory's craft, which stretches back more than a century. Spirit production on Bornholm dates back to 1855, when a steam distillery in Hasle first made aquavit on the island. Today, Bornholm Spirits' range holds more than 30 organic products, and the tasting box has become one of the easiest ways to meet all of them at once.

The box holds Special Edition 1 – Rhubarb & Star Anise, a light, summery schnapps created with chef Casper Sobczyk. Alongside it sits Brew Coffee Liqueur, a full-bodied liqueur with notes of rum and vanilla, and Bornholmer Sevablødda, a cherry dram made from an old 1908 recipe. No. 3 Fig Schnapps and No. 8 Chili & Honey bring the spicier side of the range, while the final three bottles — Gin Bornholm Sunset, Gin Bornholm Cucumber & Lemon and Gin Bornholm Berries Gin Liqueur — carry the tasting into gin territory.

All eight products are organic and made with Bornholm's own water, drawn from bedrock that has settled for billions of years. The box comes with a cocktail card, pairing each bottle with its own drink recipe.

Nose

The aromas cover a lot of ground here — roasted coffee and brown sugar in Brew, tart cherries with a whisper of clove in Sevablødda, and rhubarb with sweet star anise in Special Edition 1. The gins bring cucumber, citrus and fresh berries.

Palate

On the palate the box swings between sweet and spiced: the roundness of honey in No. 8, the silky sweetness of fig in No. 3, and a gentle burn of chili that ties it all together. The gins are drier and fresher, with a clear juniper backbone.

Finish

The finish shifts from bottle to bottle — soft and creamy on the coffee liqueur, a light spiced bite on the schnapps, and a clean, refreshing close on the gins.

The box covers a lot of stylistic ground. Saint James VO from Martinique is made from fresh sugarcane juice in the French agricole tradition, and it tastes nothing like the molasses-based rums around it. Ron Cartavio Solera 12 year old comes from Peru, Mocambo Ron Añejo 20 year old from Mexico and Caracas Club Salvaje from Venezuela. Further east you'll find Marama Origins from the Philippines and Naga Anggur from Indonesia. Whistler Ltd. comes from South Africa, and Constellation Alfa from Spain. Ninefold Dormont Spiced is made in Scotland, and the tenth bottle is Arcane Delicatissime.

The Spirit Drink label on the box isn't a mistake. Under EU rules, a rum can't have spices or flavourings added and still be called rum. That puts a spiced bottle like Ninefold Dormont Spiced in the Spirit Drink category, and so the whole box has to be labelled that way.

The box comes from 1423 in Odense. They don't distil themselves; they buy and pick spirits from producers around the world. It's the same approach as in their advent calendars, just in a smaller, more flexible format with 5 cl in every bottle. That leaves enough to taste each one twice, or to share with a friend.

Tasting Notes

Nose

Every bottle smells different. Saint James VO has the grassy, fresh-cut cane aroma that marks out agricole rum. The older Spanish-style rums like Mocambo and Cartavio lean towards caramel, vanilla and dried fruit, while Ninefold Dormont Spiced is clearly spice-driven from the first sniff.

Palate

Sweetness runs through most of the ten, though never in the same way. It's soft and rounded in the solera-aged rums, drier and woodier in the older ones. The spiced Scottish bottle stands apart from the rest.

Finish

It varies a lot. Short and fresh after the agricole, longer and warmer where cask and age have had time to do their work.

Caribbean Bay Navidad is a rum-based Christmas Spirit Drink from the Caribbean, bottled at 35% in a 50 cl bottle. It's the festive release in the Caribbean Bay series, joining siblings like Carmelita, Tropicana, Estrella and Mariposa.

The rum comes from the Caribbean and is shipped to Denmark, where it's blended and finished in the sweet, creamy style the whole series is built on. The name Caribbean Bay nods to the bay from which rum and other colonial goods were once sent out across the world.

For Christmas, the blend gets fresh orange peel, rich caramel fudge and creamy vanilla. Because it sits at 35% and is flavoured, EU rules don't allow it to be called rum, since rum needs at least 37.5%. That's why it's labelled a Spirit Drink. The bottle holds 50 cl, which the producer says is just right for a sweet tooth. Or two.

Nose

Dried fruit and coconut first, with vanilla and pale caramel behind. The African and Asian bottles pull in another direction with green cane juice, ripe banana and a trace of spice, and a couple of doors smell clearly of orange peel.

Palate

The breadth shows up most on the tongue. The aged rums are round and cask-sweet with raisin, dried apricot and toasted oak, while the Indian cane juice rum is tight and juicy with sweetness straight from the cane. The spiced bottling lays cinnamon and nutmeg over the top, and the strongest at around 54% deliver real pressure.

Finish

From short and fresh to long and dry. The oldest hang on with dark syrup, tobacco and dry wood, while the youngest let go faster on cane and citrus peel.

The format is the whole point. 5 cl is a generous measure rather than a taster, so every door stretches to a proper Gin and Tonic with a garnish chosen for the bottle of the day. There is room to taste the gin neat first and then watch what the tonic does to it.

The spread is wide. Distilleries from Wales, Cornwall, Yorkshire, the Isle of Man, Orkney, Ireland, Denmark, the Czech Republic, Monaco, Tasmania and Vietnam all turn up. Juniper runs through the lot, but rarely the same way two days running. Some doors smell sharply of citrus peel and fresh herbs, others of baked apple, dried fig and warm spice. One arrives with orange and cocoa.

Palate

The range is broad. The dry gins are tight and peppery with juniper right at the front, while the winter releases are rounder and fuller, with fruit sweetness and a baking-spice floor. Strength moves between 40% and 45%, and the difference is easy to feel from one day to the next.

Finish

From short and dry to long and spiced. The classics sign off cleanly on juniper and citrus, while the Christmas gins hang on with baking spice and orange peel.

The two glasses are included so the rum can be tasted properly from 1 December rather than poured into whatever tumbler is nearest.

Geography is the real content here. There is heavy molasses-based rum from Jamaica and Guyana, aged Spanish style bottlings from Panama, Peru, Guatemala and El Salvador, and rhum agricole pressed from fresh cane juice in Martinique, Guadeloupe and Réunion. Further afield come bottles from Mauritius, Indonesia, Brazil, Australia and Cambodia, where Kampot pepper has been steeped into the rum. One is distilled on Orkney, an island known for something rather different from sugar cane.

A couple of the doors hold rum-based spirit drinks rather than straight rum, and that is deliberate: the calendar is meant to show the edges of the category as well as its centre. The running order stays hidden, but the full list of all 24 bottles sits under the FAQ tab. 

Tasting notes

Nose

Molasses and dark brown sugar form the base note throughout, but the French bottles break the pattern with green cane, olive and something earthy. Along the way banana, coconut and dried apricot turn up, and on one day there is a clear smell of freshly cracked pepper.

Palate

From tight and dry to round and cask-sweet. The aged Central American rums are soft with vanilla, caramel and toasted oak, while the Jamaican and Guyanese ones are sharper-edged with liquorice, dark fruit and an oily weight. The agricole bottles cut through with acidity and cane juice, and the 54.5% of the navy bottling registers from the first sip.

Finish

Length varies as much as the styles do. The lightest let go quickly on cane and citrus, while the heavy ones hang on with tobacco, dark chocolate and spiced wood.

The five expressions have individual strengths ranging from 48.2% to 50.4%, reflecting the natural variations from the individual casks in the series. Braunstein Destilleri in Køge was founded in 2005 by brothers Michael and Rudi Braunstein and is one of Denmark's oldest and most established whisky distilleries. Nose

Douglas Laing Remarkable Regional Malts is a set of six Blended Malt Scotch Whisky in 5 cl bottles, bottled between 46% and 46.8%.

The range is Douglas Laing’s attempt to translate the geography of Scottish whisky into six bottles. Each release draws malt from a single area, so the difference between a Lowland and an Islay becomes something you taste your way towards rather than read about. All six are bottled at a minimum of 46% and without chill filtration.

The set holds The Epicurean from the Lowlands at 46.2%, Timorous Beastie from the Highlands at 46.8%, Scallywag from Speyside at 46%, The Gauldrons from Campbeltown at 46.2%, Rock Island from the Islands at 46.8% and Big Peat from Islay at 46%.

Tasting notes

Nose

The range is the entire point. From the bright citrus and cut grass of The Epicurean, through the sherry sweetness of Scallywag, to the tar, smoked ham and sea salt of Big Peat.

Palate

Timorous Beastie gives honey and heather, The Gauldrons salted caramel and apple, Rock Island a soft smoke with seaweed underneath. Tasted side by side, regional character stops being an abstraction.

Finish

Short and clean at the pale end, long and sooty at the smoky one. Order matters here. Begin with Big Peat and the rest of the evening tastes of peat.
