SALL WHISKY DISTILLERY RELEASES FIRST BATCH OF ORGANIC NEW MAKE AT WHISKY FAIR

Sall Whisky Distillery began as an idea conceived in a construction trailer amidst biting frost during an archaeological excavation in the Jutland soil several years ago. The seven young founders have since found great success with a crowdfunding campaign and, with strong support from the local community in Sall, they have realized a new organic whisky distillery in East Jutland. Here, the seven young men produce whisky exclusively with organic grain from Lars’ fields, who is one of the owners and an organic farmer. Since the beginning, their dream has been to sow, cultivate, and harvest the crops to create a hyperlocal, organic whisky where they can even include the field names on their bottles.

After a few intense years of financing, self-building, and installing and commissioning the distillery’s equipment, the guys from Sall now have a finished first batch, which was casked in 2019.

Giljagaur is the second release in the atmospheric Christmas whisky series from the Danish Sall Whisky Distillery – a collection inspired by the 13 Icelandic Yule Lads and their dark, mythical world. Each bottle in the series pays tribute to one of these legendary figures who, according to Icelandic folklore, descend from the mountains one by one in the days leading up to Christmas, often with mischievous or frightening intentions.

This time it is Giljagaur who emerges from the ravines. Known for hiding in mountain crevices and sneaking into the cowshed at night to steal the creamy foam from milk buckets, he is one of the more cunning and playful Yule Lads. Sall has transformed this character into a Danish single malt with personality and edge – a true Christmas malt that balances tradition, storytelling, and craftsmanship.

The whisky is made from 100% Vienna malt, based on Prospect spring barley harvested in 2021 from the Gejlund field. It has matured for three years in a First Fill PX-sherry Hogshead and then received a finish in smaller First Fill Ex-Oloroso Quarter Casks. The result is a non-peated whisky with depth, sweetness, and spicy nuances – perfect for the dark winter evenings.

Only 540 bottles of this edition have been produced, all bottled at 50% ABV and delivered in 50 cl. A collector’s item for whisky lovers and a taste experience that brings both warmth and storytelling to the Christmas table.

GLØD 3.2 is the second release in the characterful GLØD series from Sall Whisky – a tribute to the cooper’s craft and the glow that emerges when the inside of the cask is charred, unlocking the whisky’s full potential. This is Danish single malt with warmth, depth, and colour – matured entirely or partially in fortified wine casks, which are the hallmark of the GLØD series.

This edition has been aged in a combination of ex-bourbon, Oloroso, and Pedro Ximénez sherry casks, giving the whisky a beautiful glow and a complex flavour profile. Expect deep notes of caramel, raisins, and prunes, balanced by a light touch of fresh citrus. A whisky with both richness and finesse – clearly inspired by classic sherry maturation.

GLØD 3.2 is made from Evergreen spring barley grown on the Kvolbæk field, malted as Pale and Vienna for a rounded and aromatic malt profile. Fermented with Distillamax MW and distilled in small batches before maturing for three years. Each bottle is 100% organic and fully traceable – from grain to glass.

Bottled at 52.2% ABV and released in 798 numbered bottles of 70 cl. GLØD is Danish terroir with warmth at its core and craftsmanship in its soul.

MULD 1.2 is the second release in the series and a distillate-driven expression where the natural flavor of the grain and malt is preserved and allowed to shine.

The whisky is made from Prospect and Evergreen spring barley grown on the fields of Kvolbæk and Stadsgård, malted as Pale and Vienna to create a balanced and full-bodied malt profile. It has matured for three years in ex-bourbon casks, where gentle aging has added light fruity notes, vanilla, and honeyed sweetness – without overshadowing what makes MULD special: the pure taste of Danish terroir.

Using the yeast strains Distillamax MW and Kveik Hornindal, the distillate gains an extra layer of complexity and aroma. Each bottle is 100% organic and fully traceable – from the distillation batch to the exact field where the barley was harvested.

TØRV 2.3 is the third release in the smoky series from Sall Whisky – a whisky that draws its distinctive smoke from elegant peat sourced by the peat guild in Moseby. This special peat gives the TØRV series its signature character: a soft, aromatic smoke with both sweet and floral undertones.

This edition has matured in a combination of ex-bourbon, Oloroso, and Pedro Ximénez sherry casks, creating a complex and balanced profile. The smoke is present but never overpowering – it harmonizes beautifully with the sweetness and depth of the sherry casks.
