Koval Gin

In 2008, Koval did something no one had done in Chicago since Prohibition: opened the city's first new distillery in over a hundred years. Robert and Sonat Birnecker built the company around organic ingredients and single-barrel whiskey, long before that became a trend in the American craft scene. It's the city's whisky story, restarted from a completely blank chapter.

History & Background

The family behind Koval opened the distillery in 2008 as the first in Chicago since Prohibition ended in the 1930s, becoming part of the wave of American craft distilleries that truly took off in the following decade.

Production & Style

Only the heart of the distillate is used in the final spirit, a method that removes unwanted heads and tails and gives a cleaner, more concentrated flavour.
