  Banyuls Rimage is a classic Vin Doux Naturel from southern France, made from Grenache Noir harvested at optimal ripeness. The grapes come from steep, schist-rich vineyards that cannot be mechanized, where both red and white grape varieties are grown at varying altitudes – from 10 to 350 meters above sea level – with a northeast-facing orientation.

  The wine undergoes alcoholic fermentation in stainless steel tanks, followed by “mutage sur grains” – the addition of vinic alcohol during the still-active maceration. Five weeks of extraction with daily pumping over ensure maximum aroma and structure from the grape skins. It is aged in a reduced environment and bottled early to preserve freshness and fruit intensity.

  The flavor profile is generous and full-bodied, with an intense nose of small red fruits, black cherry, blackberry, blackcurrant, and blueberry jam. On the palate, it is rich in tannins, juicy, and impressively long. It pairs beautifully with blue cheese, chocolate desserts, figs, or even pigs in blankets. Best served at 12–16°C.

  Sélection Parcé Frères Rivesaltes Ambré is a noble and complex Vin Doux Naturel from southern France, made from old vines grown in schist-rich soil near the town of Rivesaltes. The vines are densely planted and interspersed with several grape varieties in the same parcel – primarily Grenache Gris, Grenache Blanc, and Macabeu.

  The wine has been aged for a minimum of 20 years in oak barrels under oxidative conditions, which imparts a distinctive rancio character – a nutty, deep, and lightly oxidized profile that only develops through long maturation.

  Its color is an intense amber with beautiful clarity. The nose reveals rich aromas of nuts, honey, and dates. The palate is both full-bodied and fresh, unfolding layers of caramel, dried fruit, and nuts.

  This wine is ideal for gastronomic pairings and goes especially well with blue cheese, foie gras, apricot tart, and dark chocolate. A wine of great age, finesse, and depth – perfect for those who appreciate classic craftsmanship and southern French elegance.
