Oloroso is a dry sherry cask with a rich, nutty and fruity character, and 8 years of maturation gives this cask ample opportunity to integrate with the organic Funen distillate.   Pedro Ximenez (PX) is a grape grown in the Jerez region of southern Spain. The grapes are sun-dried to raisins, concentrating the sugar content to the extreme.
