Pernod

Henri-Louis Pernod founded his distillery in 1805, when his refined absinthe-based pastis, with its characteristic green color, quickly won the hearts of the French. Today the name lives on as the very symbol of French pastis culture. It's over 200 years of continuous history, bottled beneath the Paris skyline.

    Expert description

Pernod is a French Anise Liqueur made from distillates of star anise and fennel and bottled at 40%.

Alongside star anise and fennel there are fourteen other aromatic plants, coriander and mint among them. The star anise comes mainly from Vietnam and southern China and is distilled to draw out a clean, potent anethole. The liquorice content is low, and that is precisely where Pernod parts company with pastis: less sweetness, more anise, and a drier, more floral line.

The story starts in 1805, when Henri-Louis Pernod opened Pernod Fils in Pontarlier and made absinthe. After the absinthe ban a wormwood-free version appeared in 1920, and the Pernod we know today was created in 1938.

    Tasting notes

    Nose

Clean star anise, sharp and obvious. Fennel behind it, and a light minty coolness lifting the whole thing.

    Palate

Anise takes up most of the room, but without the heavy liquorice sweetness. Coriander brings a light citrus spice, and there is a floral tone through the middle.

    Finish

Clean and fairly short. The anise ebbs away and leaves a cool, almost menthol sensation.

    Did you know?

Pernod is a fixture in French kitchens. A splash into the pot with fish soup or mussels burns off the alcohol and leaves the anise behind — that is how a proper bouillabaisse gets its spiced undertone.

About Pernod

The Pernod Ricard distillery was founded by Henri-Louis Pernod back in 1805. His refined absinthe-based pastis, with its characteristic green color, quickly achieved great popularity and broad recognition among the French in the early 1800s, a popularity that has since grown to make Pernod synonymous with French pastis itself. For newcomers, Pernod is an immediate, easily recognizable introduction to the French aperitivo tradition, while connoisseurs will appreciate the house's long, unbroken history and the characteristic anise flavor that has defined the category for more than 200 years.

History & Background

Henri-Louis Pernod founded his distillery in 1805 in Pontarlier near the Swiss border, then the very center of French absinthe production, and his recipe quickly became a popular favorite. When absinthe was banned in France in 1915, the house shifted its production to the anise-based pastis that has carried the Pernod name forward through the entire 20th century. In 1975 the company merged with rival Ricard to form Pernod Ricard, today one of the world's largest spirits producers, though the Pernod name still lives on as an independent, historic brand.

Production & Style

The spirit is distilled from anise and other herbs, and like raki and pastis, turns cloudy and whitish when water is added.

Signature Style

Anise, Sweet, Fresh
The flavour is sweet with a clear anise character and a fresh finish.
