    Amontillado is sherry's shape-shifter - a Fino that has lost its flor partway through ageing and begun to oxidise instead, giving it two characters at once.

    Expert's Description

    Lustau Almacenista Amontillado is an Amontillado Sherry from Jerez, Spain, with an alcohol content of 18.5%. Amontillado starts life as a biologically aged Fino under protective flor, but is at some point moved to casks where the flor dies or is removed, after which the wine begins to oxidise like an Oloroso. The result is a sherry that combines Fino's sharp freshness with Oloroso's depth and nutty character. This edition comes from Lustau's Almacenista programme, which since 1981 has sought out and bottled unique wines from small, family-run stockholders in Jerez.

    Tasting Notes

    Nose

    Powerful on the nose, with figs and nuts.

    Palate

    Full-bodied and dry on the palate, with a distinct complexity from the long, two-stage ageing.

    Finish

    The finish is lovely and long, with a light spice.

    Serve at 12-14°C in a sherry glass. Enjoy as an aperitif or with mature cheeses and nuts.

    Amontillado literally means "in the style of Montilla" and refers to the sherry originally resembling wines from the neighbouring Montilla-Moriles district, even though the two are now entirely separate appellations.
