The self-assurance that previously characterized the Cognac region has, in the last decade, turned into despair. The well-established image of the cigar-smoking wholesaler sitting in his plush armchair and swirling a bowl of cognac has, in line with increased consumer social consciousness and the economic depression affecting the once promising Asian market, shifted away from the district. However, every cloud has a silver lining. Often, in economically challenging times, the most significant changes and initiatives occur. In recent years, the Cognac style has been improved and refined, resulting in the production of better cognac than ever before.

The Cognac region is divided into 6 areas: Bois Ordinaires and Bons Bois are in the outermost zone. Closer to the main town are Fine Bois and Borderies, and around the town of Ségonzac, we find the two last areas, Petite Champagne and Grande Champagne. In total, the district covers 1,132,500 hectares, of which 80,000 are mainly planted with Ugni Blanc. Each of the mentioned areas imparts its characteristics, but if one wants to know why cognac is the world's best brandy, Petite Champagne and Grande Champagne are the areas to explore. The choice of base wine in cognac distillation is crucial. The wine is reduced during the process, and only the right base wines can bring out and enhance the best fundamental qualities, similar to a chef reducing a sauce to intensify concentration. The liquid is distilled twice. The first distillation, "brouillis," has an alcohol percentage between 27 and 30%, but it is distilled once more to increase the alcohol content. The first distillate, also called "la tête" (the head), and the last "la queue" (the tail) are collected separately. The middle part is called "le coeur" (the heart), with an alcohol percentage between 69 and 72%, and is subsequently aged.

2 1/2-3 years is typically the standard cognac for Cognac houses, often labeled with 3 stars. VSOP is a smooth and friendlier cognac with a minimum of 4 1/2 years of aging. Designations like XO, Napoléon, Très Vieux, etc., guarantee that the cognac is a minimum of 6 1/2 years old. Fine Champagne is a blend of cognac from Grande and Petite areas, with Petite making up at most 50%. It is the aging process in oak barrels that gives the cognac its soul and quality, and prices are often based on the duration of aging.

    The aroma has unmistakable notes of plums and raisins. The taste is smooth with a slight sweetness that hides the alcohol and gives the brandy a pleasant and rounded aftertaste.

    The Ximenez-Spinola winery was founded in 1729 by Phelipe Zarzana Spinola, and from the very beginning it was dedicated to exclusively producing Pedro Ximenez. At the time, the winery bottled the wine under the name Zarzana Spinola, but as this name was a challenge, if not impossible to pronounce in English, a large English customer demanded that they change it to Ximenez - Spinola, which they have since done.
    Today, they still make wines exclusively from Pedro Ximenez, and although they are still very traditional in their vinification, they try to experiment with the grape type so that they don't just make sherry. One example is the Late Harvest, which is the only one of its kind in the district.

    What makes Spinola Brandy Criaderas exceptional is the use of chestnut barrels during the aging process. Until the Spanish Civil War in 1939, there was a tradition of using chestnut barrels in Spain, but as a large part of the forest areas were cut down during the war, the coopers then increasingly switched to using American oak and eventually stopped using chestnut wood altogether. The barrels at Bodegas Spinola are all a minimum of 70 years old and therefore only release a very limited amount of tannin, which gives the brandy a rounder and softer flavor.

    Vinification
    The wine that is distilled is taken from a Solera that was started in 1984. It is distilled on a pot still before the spirit is poured into used chestnut wood barrels where it is aged for a minimum of 12 years

    Courvoisier Luxe Cognac is a French Cognac from Jarnac in the heart of the Cognac region, bottled at 40%. This "Luxe" 3 Star bottling dates from an era when Courvoisier still marketed itself under the royal warrant "By Appointment to the Late King George VI" – a reference to the British court that the house was permitted to carry in its branding for decades. The bottle was imported into Germany by Charles Hosie in Hamburg, a detail that tells its own story about the Cognac's journey from the French cellars out into Europe. Courvoisier is one of the so-called big four Cognac houses and has, since its founding in 1809, cultivated a soft and approachable style that sets it apart from some of the more angular, powerful houses in the region. The Cognac is blended from several crus around Jarnac and matured in French oak casks in the house's own cellars, which gives it the rounded, elegant profile the house is known for.

    Courvoisier Luxe Cognac is a French Cognac from Jarnac in the heart of the Cognac region, bottled at 40%. This "Luxe" 3 Star bottling dates from an era when Courvoisier still marketed itself under the royal warrant "By Appointment to the Late King George VI" – a reference to the British court that the house was permitted to carry in its branding for decades. The bottle was imported into Germany by Charles Hosie in Hamburg, a detail that tells its own story about the Cognac's journey from the French cellars out into Europe. Courvoisier is one of the so-called big four Cognac houses and has, since its founding in 1809, cultivated a soft and approachable style that sets it apart from some of the more angular, powerful houses in the region. The Cognac is blended from several crus around Jarnac and matured in French oak casks in the house's own cellars, which gives it the rounded, elegant profile the house is known for.
