The whisky was distilled in 2011 and has spent time in fresh Palo Cortado hogsheads since 2020, where the Spanish sherry style has folded sweetness and spice into an already heavy, oily spirit. Balmenach is one of the last distilleries in Scotland still running triple distillation, and the spirit condenses through old-fashioned worm tubs rather than modern shell-and-tube condensers – a combination that produces a slow-maturing, robust character unusually well suited to sherry wood. The malt is unpeated. The whisky is non-chill filtered and carries no added colouring, so what reaches the glass is whatever the spirit and the cask actually made.

Most of what comes out of Aultmore's quiet stills goes straight into Dewar's blends, so a standalone release like this one is a rare find. The whisky was distilled in 2011 and has spent time since 2022 in fresh Manzanilla Sherry casks, where Aultmore's light, grassy spirit has taken on the dry, saline sweetness of the sherry. A Speyside distillery hides behind a single word: Enigma. No name on the label, no clue to which glen or burn shaped the spirit inside. Just a promise that after seventeen years in the dark, what is in the bottle can speak for itself.

Cadenhead's Enigma SPY.3.B is a 17 year old Speyside Single Malt Scotch Whisky, fully matured in Oloroso Sherry hogsheads and bottled at 46%. The Enigma series is where Cadenhead's tucks the distillery's name away and lets the flavour carry the whole story on its own. This bottling is the second time the firm has drawn from this same secret parcel — the first release, SPY.3.A, arrived in October 2025 at a cask strength of 64.5%, while this one has been brought down to a gentler 46%.

The whisky was distilled in 2008 and has rested in sherry wood ever since, until it was bottled in August 2026 in a run of 762 bottles. No chill filtration, no added colouring — just as the rest of Cadenhead's range has insisted on since 1842, showing the whisky exactly as it is.

There are seven distilleries in Dufftown, and locals like to say the town stands on quite as many stills as it does hills. Most of what runs out of Dufftown's stills never sees a bottle with its own name on it — it disappears into Bell's, Dewar's and Johnnie Walker's blends, unnoticed and unnamed. Cadenhead's caught a little of it anyway, and let it sit in bourbon casks since 2009.

The whisky was distilled in 2009 from unpeated malt, and has spent its entire life in bourbon hogsheads with no finish or additional cask change along the way. It was bottled in August 2026, carrying Cadenhead's usual plain label — distillery, age and strength, nothing more.

Nose

In the small town of Rothes, deep in Speyside, sits a distillery most people have never heard of, even though they have probably tasted it without knowing. Glen Spey brews almost exclusively for blends, and only rarely does a cask escape before it disappears into the mix. This time, Cadenhead's got there first.

Glen Spey-Glenlivet 16 Year Old Amontillado Hogsheads is a Speyside Single Malt Scotch Whisky matured on Amontillado Sherry Hogsheads and bottled at 46%.

This bottling comes from Cadenhead's Original Collection, the independent bottler's range of smaller releases that showcase a distillery's typical character without embellishment. The whisky was distilled in 2009 and has spent time since 2022 in fresh Amontillado Sherry Hogsheads, picking up its final colour and spice before being bottled in August 2026.

Glen Spey was founded in 1878 by James Stuart under the name Mill of Rothes, and just nine years later he sold the distillery on to the English wine and spirit merchant W. & A. Gilbey, making it the first Scottish malt distillery in English hands. Through a string of mergers it ended up with Diageo in 1997, its current owner. The distillery's two pairs of stills carry an unusual lantern shape fitted with purifiers, sending part of the vapour back into the pot and producing a lighter, cleaner spirit. That makes it ideal for blending, but it rarely gets bottled on its own. The vast majority of the output goes into the J&B blend, and official single malt releases from Glen Spey can be counted on one hand. The malt is unpeated, so there is no smoke to speak of.

As with every Cadenhead's release, the whisky is non-chill filtered and free from added colouring.

Nose

Rhubarb and custard meet a touch of red wine, while the scent of freshly picked apples and ripe pears calls to mind a late-summer orchard.

Palate

On the palate there are red apples, a sweetness reminiscent of mango sorbet, and a warm bite of ginger cake.

The finish is spiced with cardamom and cloves, while a light, bitter note of orange peel ties it all together.

The south coast of Islay doesn't invite you to linger. Wind cuts sideways off the sea, and somewhere behind the spray, Laphroaig is quietly doing what it's done since 1815.

Expert's Description

Laphroaig 10 Year Old Cadenhead's Original Collection is an Islay Single Malt Whisky matured in bourbon barrels and bottled at 46%. The release belongs to Cadenhead's Original Collection, a series built from only a handful of casks at a time so the bottler's own reading of the distillery's character comes through, rather than the house style of the official range. This whisky was distilled in 2015 and bottled in August 2026, giving it a full ten years in wood. The barley is peated malt, and roughly a fifth of it is still floor-malted on-site at Laphroaig, a labour-intensive method most distilleries of comparable size gave up decades ago. The peat itself is cut on Islay, and it's what gives the spirit its trademark tarry, iodine-like edge. Distillation runs twice through seven copper pot stills, with an unusually long foreshot on the second run that keeps the heaviest, oiliest notes out of the final spirit. Only bourbon wood is used here, so there's no sherry or finishing cask softening the profile — this is Laphroaig stripped back to peat, brine and distillate character.

Smoke from the Lowlands is a rarity. For decades the region stood for the light and floral while peat was left to the islands. Glasgow Distillery decided to do it anyway, and laid the smoke down in Pedro Ximénez casks where it found sweetness to lean against.

The Expert's Description

1770 Glasgow Peated is a Lowland Single Malt Scotch Whisky matured in Virgin Oak and PX Sherry casks and bottled at 46%. The distillery calls it Rich & Smoky, and it is their peated core expression, made from peated malt during part of the production year.

The cask choice is what makes it. Virgin Oak gives spice, cinnamon and a drier wood edge, while the PX Sherry casks lay in a thick, almost syrupy sweetness: raisins, dates and dark sugar. The smoke sits between the two and comes out rounder for the company than it would have on neutral wood.

The whisky is neither chill filtered nor coloured, and bottling at 46% was chosen to keep the body intact. The water comes from Loch Katrine and fermentation runs beyond 72 hours.

Tasting Notes

Nose

Sweet smoke first, closer to singed raisins than a bonfire. Behind it come dates, dark sugar and a note of burnt orange. There is a layer of cinnamon and dried ginger from the new oak as well.

Palate

Full and sweet. Raisins and molasses open, then the smoke steps in as a dry earthy floor. The spices arrive last: cinnamon, clove, a touch of chilli. The texture is thick and slightly clinging, which is the PX cask signature.

Finish

Long. Smoke and dark sweetness go hand in hand, and a drier, almost coffee-like bitterness lingers at the end.

Norsemen once sailed along Arran's shore and called the island their own, long before the Scots took it back under a treaty in 1266. That same ground now sits beneath Lochranza Distillery, where spring water from Loch na Davie becomes whisky with the same stubborn character as the men who once settled here.

HSG-Whisky Lochranza 8 Year is a Single Malt Scotch Whisky from Isle of Arran, matured its entire life in one first fill sherry cask and bottled at cask strength 60.7%.

The bottle belongs to the HSG-Whisky series, a private single cask release from HSG Whisky ApS, whose label is built around Norse mythology, complete with runes, ravens and an Odin-like figure flanked by warriors. The whisky comes from Lochranza Distillery, which traded under the name Arran Distillery until 2019, when its sister distillery Lagg opened on the southern tip of the island and made the name split necessary.

The spirit was distilled on 13 February 2018 and has rested on that single sherry cask ever since, right up until bottling on 20 July 2026. Eight years on the same wood has given the whisky a dense, spicy character, where the sweetness of the sherry wood pushes deep into the spirit without drowning out the distillate's own fruitiness. Only 316 bottles were filled from this release.

High in the Monadhliath Mountains south of Inverness, Tomatin has been quietly maturing spirit in a cool mountain climate since 1897. One single refill hogshead from that stock, filled in 2014, has now been bottled — not by Tomatin itself, but by Woodrow's of Edinburgh, a bottler that treats its own bonded warehouse like a workshop for flavour.

Woodrow's of Edinburgh Tomatin 11 Year Old Warehouse Reserve is a Highland Single Malt Scotch Whisky matured in a Refill Hogshead and bottled at 57.8%.

The whisky belongs to Woodrow's Warehouse Reserve range, reserved for the casks that surprise the bottlers themselves. Woodrow's of Edinburgh often buys whole casks unseen and untasted, trading many of them on to fellow independent bottlers — but when they draw their own sample and it stops them in their tracks, that cask goes into Warehouse Reserve instead. This particular hogshead, cask 300931, was filled in September 2014 and bottled in July 2026. Eleven years of maturation have given the spirit Tomatin's signature soft, fruity Highland character without letting the oak take over. Only 259 bottles came from this single cask, none of them coloured or chill filtered, so nothing the wood gave up along the way has been filtered back out.

Bunnahabhain has always marched to its own beat on Islay. While the neighbours fill the air with peat smoke, this distillery keeps things unpeated, quietly stubborn about it. Thirteen years in, Woodrow's of Edinburgh has given this particular cask a final chapter in a barrel that had just been vacated by rum from Barbados, sending the spirit somewhere very few Islay whiskies go.

Woodrow's of Edinburgh Warehouse Reserve Bunnahabhain 13 Year Old Islay is an Islay Single Malt Scotch Whisky distilled at Bunnahabhain, matured in a Refill Hogshead and finished in a 1st fill Foursquare rum barrel, bottled at 61.3%.

The whisky belongs to Woodrow's of Edinburgh's Warehouse Reserve line, where the small Edinburgh outfit only bottles casks too good to pass on to anyone else. The spirit was distilled in March 2013 and spent its early years quietly resting in a used cask, before being re-racked in summer 2026 into a barrel that had just held rum from the Foursquare distillery in Barbados, one of the most respected rum houses in the world. The rum cask pulls Bunnahabhain's usually restrained, unpeated character somewhere warm and tropical, without losing its Islay roots entirely. Just 188 bottles came from cask number 7465, bottled in July 2026 at cask strength, non-chill filtered and with no added colour.

In the Gorgie district of Edinburgh, North British has been filling its stills with grain and patience since 1887. One barrel was set aside on the 29th of January 1991 and left untouched through three decades, while the city outside cycled through season after season. Eventually Keeble Cask Company found their way to it, and the result now joins the Fragrant Drops range.

Expert's Description

North British 33 Year Old Fragrant Drops is a Lowland Single Grain Scotch Whisky matured in two refill Ex-Bourbon casks and bottled at 41.0%. The whisky comes from the North British distillery in Gorgie, Edinburgh, where the grain spirit is distilled in continuous column stills — a very different process from the pot stills used for single malt whisky. The two casks, #204393 and #204403, were filled on the 29th of January 1991 and left to mature for almost 34 years before being married together and bottled on the 19th of December 2024 by Keeble Cask Company for their Fragrant Drops range. Only 240 bottles came from the two casks, and the whisky is neither chill-filtered nor coloured, so both strength and nuance come straight from cask and time.

Lavender arrives first, followed by a bright streak of lemon peel.

Palate

Marzipan, pecan and a soft note of porridge fill the mouth.

On June 5, 2025, twenty Sall Whisky Friends gathered in the village of Sall with empty glasses and open minds. In front of them stood five samples, each carrying its own story - bourbon, Amontillado, Palo Cortado, Oloroso and PX. By the end of the evening, the choice was made, and a new whisky was born from shared taste and a good dose of stubbornness.

Expert's Description

Sall Whisky Friend Blend #1 is a Danish Single Malt Whisky composed of five different sherry and bourbon casks and bottled at 61.2%.

The bottle is the result of a shared blending session at Sall Whisky Distillery, where twenty Sall Whisky Friends came together to taste their way to the best combination. Since every drop comes from the distillery's own spirit, this is technically closer to a vatting than a blend - but Friend Blend simply has a ring to it nobody wanted to trade away.

The foundation is five samples, each with its own character: 30 litres Ex-Bourbon, 4 litres Ex-Amontillado, 10 litres Ex-Palo Cortado, 30 litres Ex-Oloroso and 20 litres Ex-PX. The five whiskies were combined and filled onto a 2nd Fill Ex-Bourbon Quarter Cask, where they married for roughly a year before bottling in a limited run of 146 numbered bottles.

The release is dedicated to the Sall Whisky Friends, and every bottle carries its own number - a small reminder that this whisky was made together, not behind closed doors.

Out on the Jutland bog the peat waits in dark layers of old plant matter, cut and dried the old way. Sall Whisky digs it up with a local peat guild and smokes their malt with it until the smoke sits deep in the grain. Tørv 2.5 is round five in that story - same fields, same stubborn peat.

Tørv 2.5 is a peated Danish Single Malt Whisky matured in a combination of ex-bourbon and ex-sherry casks, bottled at 51%.

Tørv is the smoky side of Sall Whisky Distillery's core range, sitting alongside the softer Muld and the sherry-driven Glød. The barley for 2.5 is the organic varieties Prospect and Evergreen, grown on the distillery's own fields Kvolbæk and Gejlund - this time drawn from two harvest years, 2020 and 2021, because Sall would rather use what the fields actually gave than wait for one uniform crop. The malt is a mix of pale and Vienna malt, smoked with Danish bog peat from North Jutland, supplied by the distillery's friends at Tørvebisserne in Moseby. The whisky is double distilled in direct-fired copper pot stills - a slower, more hands-on method than most young distilleries bother with. From there it rests in a combination of ex-bourbon and ex-sherry casks before being bottled without chill filtration or added colour in August 2026. Only 850 bottles were filled from this batch.

Tasting Notes

Nose

Smoke arrives first - earthy and light, closer to fresh bog peat than a heavy Islay style. Behind it sits sweetness from the pale malt, with a touch of honey.

Palate

The smoke carries through onto the palate, met by a tart-sweet edge from the sherry casks and a rounder, softer character from the ex-bourbon casks.

Finish

Long and smoky, with a dry, peaty edge that slowly gives way to a faint malt sweetness.

The peat for the Tørv series isn't dug by Sall themselves - it comes from Tørvebisserne, a small group of friends in Moseby, North Jutland, who cut peat from the local bog the old-fashioned way. A bearded man in a wide-brimmed hat stares out from a red ribbon banner, flanked by the words "Grand Old Mac" - a name invented for a saloon that never stood anywhere in the American West, only in the imagination of a German importer's marketing department.

Grand Old Mac Straight Bourbon Whiskey is an American Straight Bourbon Whiskey matured in charred white oak casks and bottled at 40%.

The neck seal reads "Over 6 Years," and the label states it was distilled and aged under United States government supervision - Product of USA. But the reverse label carries a second, quieter line: "Ausländisches Erzeugnis in Deutschland fertiggestellt," meaning the bottling itself was finished in Germany. This points to a whole genre of mid-century bourbon that isn't much talked about today: American whiskey shipped in bulk to Germany and bottled locally under invented cowboy brand names for a German audience hungry for a taste of the Wild West.

The distillery behind the liquid is not stated on the label and appears to be lost to history - Grand Old Mac was distributed by Freiherr von Waldenfels Spirituosen-Vertriebsgesellschaft mbH, based in Köln-Junkersdorf, a company that has since disappeared from the German business register. What's left is the bottle itself: a small, stubborn piece of postwar drinking culture, marketed as "Very Smooth and Very Mild" and meant to be mixed into "all popular mixers, in cocktails or straight," as the original English-language back label puts it.

There's a quiet stubbornness to Billy Walker's pursuit of the perfect cask. At GlenAllachie in Speyside, wood management has become the beating heart of the distillery's identity, and the Sinteis Series is his most ambitious project yet. Its fourth chapter takes the whisky somewhere none of its predecessors have been – deep into the forests of Mongolia.

GlenAllachie Sinteis Part 4 2015 Mongolian Virgin Oak is a Speyside Single Malt Scotch Whisky matured in Pedro Ximénez and Oloroso Sherry casks and finished in Mongolian Virgin Oak, bottled at 58.5%.

Sinteis is Gaelic for synthesis, and the name captures exactly what the series is about: letting two very different types of wood meet inside the same whisky. The first three releases leaned on virgin oak from America, Scotland and France. This time, Billy Walker looked much further east. Distilled in 2015, the whisky spent its early years resting in Pedro Ximénez and Oloroso Sherry casks before being transferred into casks made from Mongolian oak, Quercus mongolica. It's a wood that almost never finds its way into a whisky warehouse, and it brings a character all its own: notes of caramel, honey, floral hints and warm spice layered on top of the Sherry's dark, fruity weight. The result is a whisky where GlenAllachie's familiar sweetness gets a genuinely exotic edge. It's bottled at cask strength, 58.5%, with no added colouring and no chill filtration, so nothing the casks gave it has been filtered away.

Nose

The nose opens with freshly baked pastry and butterscotch, where brandy-soaked fruit, cocoa and dark treacle mix with cinnamon and candied ginger.

Palate

On the palate it's rich and full-bodied, with candied hazelnuts, plum syrup and warm baking spices. Baked orange, vanilla, mocha, manuka honey and fig jam take over as it opens.

Finish

The finish is long and warming, with a dry, faintly spiced oak note from the young Mongolian wood that keeps the Sherry's sweetness anchored right to the end.

On Denmark's windswept west coast, where the North Sea weather rolls straight in, there's a distillery that once had the idea of resting its rye whisky in casks that used to hold maple syrup from Vermont. Back then it was pure curiosity. Today it's one of the most talked-about Danish whiskies ever made.

Stauning R.Y.E. Maple Syrup Cask Studio Series is a Danish Rye Whisky matured in new American oak casks and finished in Maple Syrup casks from Vermont, bottled at 53.5%.

The story starts with a single cask, No. 517, which Stauning experimented with a few years back. It turned out to be one of the most awarded Danish whiskies ever, winning the World's Best Single Cask Single Rye category at the World Whiskies Awards 2023. That exact cask sold out fast, and demand for another shot at the same combination never really stopped. With the Studio Series release, Stauning gets as close to the original as it can, even if it isn't the same bottle.

The grain is Danish rye and barley from local farms, floor-malted and kiln-dried at the distillery, using the same approach the distillery's nine founders started out with. The whisky is double distilled in Stauning's 24 small pot stills, heated by direct fire, an old-fashioned, labour-heavy method most other distilleries don't bother with anymore. From there, the spirit first rests in new, heavily charred American oak casks before moving into casks that once held maple syrup from Vermont. Those last casks are what really leave their mark: a rich sweetness, warm spices like vanilla and cinnamon, and a touch of liquorice and charred wood layered over the rye's natural spiciness. The release is limited to 2,500 bottles from 10 casks.

Tasting Notes

Nose

Warm spice meets dried fruit right away, cinnamon and vanilla from the maple syrup casks, with ripe raisin and a hint of fresh rye bread somewhere behind it.

Palate

Caramelised apple and ripe plum arrive first, followed by toasted oak. The sweetness is velvety and kept in check throughout by the rye's spicy, almost peppery edge.

Finish

Long and gently warming, with a fruity finish and a mouthfeel that feels softer than you'd expect at 53.5%.

190 years is a long time to keep faith with the same recipe, but that is exactly what the Grant family have done in Ballindalloch since 1836. No outside investors, no strategy reshuffles every decade – just sherry casks, patience and a distillery that still fires its stills with direct flame. For the anniversary, they have brought five decades of that whisky together in one bottle.

Glenfarclas 190 is a Speyside Single Malt Scotch Whisky married from 78 sherry casks and bottled at 51.4%. The bottle is the third and final release in the distillery's Anniversary Trilogy, following Glenfarclas 175 and Glenfarclas 185, and marks 190 years since the distillery was first licensed in 1836.

Behind the selection are Distillery Manager Callum Fraser and Managing Director Douglas Belford, who dug through the warehouses and pulled casks from the 1970s, 80s, 90s and 2000s. The idea was not simply to blend old and new, but to draw something specific from each decade: the fruitier notes from the 70s, the richer sherry character from the 80s and 90s, and the soft caramel from casks laid down in the 2000s. The whisky carries no added colouring and is non-chill filtered, and the strength is no accident either – 51.4% corresponds to 90 British proof, the unit Glenfarclas printed on its labels for the first 154 years of the distillery's history.

Glenfarclas has never strayed far from the sherry cask. Since being licensed in 1836, virtually everything the distillery makes has gone into sherry casks sourced through a long-standing arrangement with a family-run bodega in Jerez, and its direct-fired stills are among the last of their kind in Scotland. The label on the 190 release draws on designs from across the decades, wrapping the bottle in a piece of the distillery's own history rather than hiding it away.

Green apples and sherry sweetness arrive first, quickly followed by spiced Christmas cake and a touch of candied fruit.

Palate

This bottle comes from exactly that kind of batch – set aside for nearly a decade while the Grant family waited for the right moment to send it out as this year's Christmas release, this time made exclusively for the Danish market.

Glenfarclas Jule Malt 2026 is a Speyside Single Malt Scotch Whisky, built from Sherry casks spanning first to fourth fill and bottled at 49.7%.

This is the second release in Glenfarclas' ongoing Jule Malt series, and the whisky inside was distilled in December 2015 – among the last batches the distillery managed to run before Christmas that year. Only 900 bottles have been produced, and the entire batch has gone to the Danish market. Glenfarclas has drawn on casks from four separate generations of Sherry fill for this blend: the first-fill casks bring power and dark fruit, while the older, repeatedly refilled casks let more of the malt's own character come through. The result is a Sherry-matured whisky with more layers than a single cask type usually gives.

Glenfarclas has stayed in the hands of the Grant family since 1865, and the distillery is today one of the last in Scotland still owned and run by the same family across six generations. The whisky is still distilled using direct-fired pot stills, the largest of their kind in Speyside, and the finished whisky is never coloured or chill-filtered.

Stauning Miniature Gift Set Høst R.Y.E. RØG is a tasting set with three Danish whiskies from Stauning Whisky in West Jutland, each bottled in 5 cl miniatures.

Stauning was founded in 2005 by nine friends with no whisky-making experience whatsoever, but plenty of stubbornness. Since then it's grown into Denmark's best-known whisky distillery, still the only one in the country to floor-malt its own rye and barley and distil on traditional copper pot stills built in the Scottish tradition. The grain is grown locally within a bicycle-ride of the distillery by Ringkøbing Fjord, and every step, from field to bottle, happens under one roof.

The three whiskies in this box each show a different side of Stauning. In Ireland's Boyne Valley, a stone's throw from the 5,000-year-old Newgrange monument, sits a distillery that insists on doing things the hard way. Boann is a family project through and through – not a factory, but a place where the grain is still Irish, the water is their own, and every bottle carries the name of a river rather than a brand.

Boann Legacy Single Pot Still Irish Whiskey is an Irish Single Pot Still Whiskey matured across seven different cask types and bottled at 40%.

The whiskey is built on a complex mash bill of malted and unmalted barley, with oats and rye added in – the kind of mixed grain recipe that once defined Irish Pot Still whiskey, before the style nearly vanished during the 20th century. Boann Distillery is one of the first in over 50 years to properly revive that tradition. The spirit is triple distilled in copper stills built specifically for the distillery, before being split across seven cask types: Bourbon, Oloroso, Pedro Ximénez, Palo Cortado, Amontillado, Moscatel and French oak, sourced from some of the world's finest wine and cooperage regions.

Behind the bottle stands the Cooney family, who spent more than 50 years in the Irish drinks trade before building their own distillery from scratch in 2015. Legacy is named for exactly that – an inheritance, both the distillery's own and that of Irish whiskey as a whole, gathered into one bottle where seven casks meet and become something new.

Nose

Toffee apple and classic sherry warmth meet ripe orchard fruit, with a playful hint of sweet cola gummies sitting underneath.

The Sleat peninsula on Skye has held only one whisky distillery at a time for nearly 200 years – first Talisker, and since 2017, Torabhaig too. Here, where the sea batters the cliffs and peat runs deep in the ground, a whisky is made with roots firmly planted in the island's rough character. This bottle isn't just another vintage: it was made to mark 30 years of Mac Y as one of Denmark's most dedicated spirits importers.

Torabhaig Signature Reserve Mac Y 30th Anniversary Single Cask is a Skye Single Malt Scotch Whisky matured in a first-fill American oak bourbon cask combined with a first-fill European oak hogshead, bottled at 55%. It's one of the very first single cask releases Torabhaig has ever put out, created specifically to mark Mac Y's 30th anniversary in 2026.

At the heart of this bottle sits that European oak hogshead: heavily toasted and hand-built by Spanish master cooper Juan Pino. The cask was seasoned with Oloroso sherry for 24 months before it received Torabhaig's characteristic peated new-make spirit. The whisky was distilled in 2020 and has now, in the anniversary year itself, found its way into the bottle.

The malt behind this whisky is peated to over 100 ppm – an unusually heavy smoke level, even for an island whisky. That intense peat is carefully balanced against the bourbon cask's spiced sweetness and soft vanilla notes, which in turn play off the sherry cask's dried fruit and bright acidity. The result is a whisky with real depth: smoky, yet refined, powerful, yet elegant.

Nose

A bold, classic island character greets the nose first: maritime smoke, sea salt and tar sit heavy and unmistakable. The smoke runs deep, yet stays remarkably well balanced from the very first sniff.

Palate

Intense and full-bodied on the tongue. Charred cask and a rich, almost barbecue-like sweetness open things up, spiced by the toasted oak. Right in the middle, a surprising, fresh streak of mint and lime cuts through.

Finish

Long and pleasant. As the heavy smoke slowly lifts, the palate is left with delicate notes of ash and a deep sweetness from dried fruit – a beautifully balanced close.

There's a quiet confidence about a bonded warehouse in Leith. For centuries, Edinburgh's merchants bought, blended and sold on whisky from across Scotland here, long before single malt meant anything to ordinary drinkers. Woodrow's of Edinburgh found a cask they couldn't bear to pass on. It came from Ardmore – the distillery that spent over a hundred years hiding its peated character inside someone else's blend.

The Expert's Description

Ardmore 11 Year Old Woodrow's of Edinburgh Warehouse Reserve is a Highland Single Malt Scotch Whisky matured in a 1st fill bourbon barrel and bottled at cask strength, 60.2%.

Distilled on 4 December 2014 and bottled on 15 April 2026, the cask yielded 229 bottles in total. Ardmore was founded in 1898 by Adam Teacher to secure malt for the family's blend, Teacher's Highland Cream, and for decades the distillery stayed almost anonymous outside the trade – a workhorse whisky with someone else's name on the label. It wasn't until around 2007 that Ardmore began marketing itself seriously as a single malt. What sets it apart is the smoke: while most Highland distilleries moved to unpeated malt long ago, Ardmore still insists on locally cut peat from around Kennethmont. The smoke is softer and spicier than Islay's, but it's there, vintage after vintage.

Woodrow's of Edinburgh started out in 2020 as cask traders, run by brothers Mark and Chris Watt. They bought and sold casks on to other bottlers, but naturally tasted along the way – and some casks turned out too good to let go. Those become Warehouse Reserve, always bottled at cask strength, non-chill filtered and with no added colour. This particular 1st fill bourbon barrel has left the Ardmore with a layer of white chocolate, vanilla and light tropical sweetness sitting on top of the earthy smoke from the malt.

Nose

Smoky and slightly earthy, with citrus peel, forest floor, cedarwood and a hint of rose petal.

Palate

Creamy in texture with a light tannic grip. Orange zest and dark chocolate sit alongside old leather, a touch of tropical fruit and a lingering, earthy smoke underneath.

Long and aromatic, with lemon zest, cardamom and cinnamon that stay for a while.

Where the Clyde bends past old shipyards just outside Glasgow sits one of the Lowlands' last surviving distilleries. Auchentoshan does something almost no other Scottish distillery bothers with: they distill three times instead of two, and locals have long called the result their "breakfast whisky" – that's how light and gentle it is.

The Expert's Description

Auchentoshan 12 Years is a Lowland Single Malt Scotch Whisky matured in bourbon and sherry casks and bottled at 40%.

The distillery sits at the foot of the Kilpatrick Hills just outside Glasgow and has been making whisky since 1823. What sets Auchentoshan apart is its triple distillation – a method historically found almost nowhere else in Scotland outside the Lowlands, and more commonly associated with Ireland. The spirit runs through three copper stills instead of the usual two, producing a lighter, cleaner distillate that then matures in a combination of bourbon and sherry casks for at least 12 years. The name Auchentoshan comes from the Gaelic Achadh an Oisein, "corner of the field", and the distillery also goes by the nickname Glasgow's Malt Whisky, thanks to its closeness to the city.

The distillery is now owned by Suntory Global Spirits, who took it over in 1994 through Morrison Bowmore Distillers. During the Second World War, one of Auchentoshan's warehouses was hit by a German bomb, and production stood still for several years before resuming in 1948. The soft, lightly sweet character that still defines the whisky today has made it a natural first stop for anyone new to single malt.

Bouze-lès-Beaune sits deep in Burgundy, a long way from Scotland's peat smoke and the sun-baked bodegas of Jerez – and yet both worlds meet right here, in the cellar Michel Couvreur dug beneath the hillside. The whisky crosses the Channel young and peaty, and only really becomes itself after years spent in the dark alongside casks shipped up from Andalusia.

Michel Couvreur Candid is a French Blended Malt Whisky, distilled at undisclosed Scottish distilleries and matured in sherry half-casks in Burgundy, bottled at 49%.

Candid carries the subtitle "The New Disclosure Expression" – a reworking of the house's earlier Disclosure bottling. The spirit arrives in France as a peaty, iodine-driven malt whisky and is then laid down exclusively in half-casks that previously held Pedro Ximénez Sherry. Part of the maturation happens in the driest section of the cellar, and the rest is moved to the humid part, where the air is denser and ageing slows down. That's the whole point of Michel Couvreur's method: the cask does most of the work, not the distillate.

The house was founded by Belgian-born Michel Couvreur, who originally traded Burgundy wine before he began, in the 1970s, bringing Scotch malt whisky home and letting it mature further in his own wine cellars. Since his death in 2013, the tradition has been carried on by his son-in-law Cyril Deschamps and cellar master Jean-Arnaud Frantzen, who still travels to Jerez for the best used sherry casks and drives them back to Burgundy himself.

Linkwood sits a little apart on the edge of Elgin, where the distillery's two stillhouses have quietly built a reputation as one of Speyside's most sought-after – and least seen – malts. Most of what comes off Linkwood's stills ends up in Johnnie Walker and White Horse, never under its own name. When a single cask does make it into a bottle, it's almost always an independent bottler who found it.

Among whisky people, Linkwood is often called a "top dressing" malt – the kind of spirit blenders keep back to add an extra layer of finish and lift to their blends. Because Diageo, who own the distillery, so rarely release Linkwood as a single malt, it's the independent bottlers who have kept the name alive among enthusiasts. Signatory Vintage sourced this cask from the 2012 vintage and let it mature for ten years before drawing it straight from the cask in 2023, without colouring or chill filtration.

The cask is a 1st Fill Bourbon Barrel, meaning it held no other whisky before Linkwood – giving a cleaner, more direct read of both the grain and the wood than a refill cask would. At 59% there's plenty of power in the glass, and it's up to the drinker to find the balance with a little water.

Seagram's Seven Crown was the everyday whiskey people reached for without thinking twice, and this oversized bottle was practically the symbol of that habit.

Seagram's Seven Crown is an American Blended Whiskey bottled at 40%, here in the large 1.75 litre format with a carrying handle and built-in pourer, a bottle that was as much a piece of bar furniture as it was a whiskey.

Seven Crown was created by Joseph E. Seagram & Sons and grew into one of the best-selling whiskey brands in American history, with sales peaking at around 32 million cases a year in the early 1970s. It is a blended whiskey, combining a smaller share of straight whiskey with neutral grain spirit, a style built for easy, uncomplicated drinking rather than sipping complexity. The label still carries the old crest with the crown and the line "Distillers since 1857", a nod to the Seagram name's Canadian origins, long before the brand became an American household fixture.

Bottles like this one were sold by the millions for home use and bar service in the decades after the Second World War, and the handle-and-pourer format was built specifically for pouring straight from the bottle without any fuss.
