    The rye field lies three hundred metres from the stills. That is not a romantic turn of phrase, it is an address. At Arbikie everything is sown, harvested, distilled, matured and bottled on the same farm running down to Lunan Bay, and that makes this whisky something very few Scottish distilleries can imitate.

    The Expert's Description

    Arbikie 1794 Batch 22 is a Highland Single Grain Scotch Whisky matured in new charred American oak casks and bottled at 48%. The batch yielded 2,490 bottles, and the whisky is neither chill filtered nor coloured.

    The rye makes it a Single Grain rather than a Single Malt, since the term Single Malt is reserved for whisky made solely from malted barley. 1794 was the first rye whisky ever made in Scotland, and the name refers to the year distilling first took place at Arbikie. Maturation happens entirely in new charred oak, which is unusual in Scotland but entirely normal for American rye.

    Every batch turns out differently, because weather, field and grain variety shift from year to year. Batch 22 carries a deep rich amber colour from the new wood and aromas of hedgerow berries, black tea and caramel. The Stirling family has been farming since 1660 and has been at Arbikie for four generations.

    Tasting Notes

    Nose

    Hedgerow berries and black tea first, with a layer of warm caramel underneath. The rye reports in as dried dill and a peppery, almost green note. The new oak gives vanilla and a light resinous scent, more American than Scottish.

    Palate

    Spicy and dry from the start. The rye fills the mid-palate with pepper and a sweetish cereal character, while the charred oak lays caramel, cinnamon and burnt sugar on top. At 48% there is body enough to carry it without the whisky turning hard.

    Finish

    Long and spicy. Pepper, dried fruit and a dry woody close, where the rye hangs on longest.

    Espadín is the agave the whole world of mezcal is built on – the one that grows across Oaxaca's valleys, and the one every mezcalero learns to understand before anything else. At the Santiago family's palenque in Matatlán, handling it is a craft refined over generations.

    Hedonistas de la Fe Espadin is a Mexican Mezcal at 46% ABV, distilled from 100% Agave Angustifolia by the Santiago family in Matatlán, Oaxaca.

    Unlike the wild Tobalá, Espadín is cultivated, though at Hedonistas de la Fe the agave is still hand-selected by trained jimadors, who let the plants mature for 6-8 years before harvest. This release is limited to 330 bottles in total.

    The agave hearts are roasted over mesquite in a traditional earth oven, which gives the mezcal its smoky complexity. After roasting, the piñas are crushed with a tahona, and the mash ferments naturally in open wooden vats before being distilled twice in copper stills.

    Behind the bottle stands Hacienda de Oro, the Partida family's distillery in the Valle de Tequila near Amatitán. Don Partida founded the distillery in the 1970s, and his recipes and techniques are still used today by the current master distiller, his descendant David Partida. Mayaciel uses only agaves from its own fields, where the blue Weber agaves mature for six to eight years without artificial fertiliser before they're harvested and cooked into tequila a stone's throw from the distillery.

    What sets this Reposado apart from almost every other is the choice of barrel. Mayaciel uses only carefully selected rum barrels from the Caribbean for maturation - not the bourbon barrels the industry has otherwise made close to standard. The barrels are thoroughly prepared before the tequila fills them, and the nearly six months on wood give the spirit a layered aroma where the fresh agave still comes through, now joined by the sweetness of rum.

    Hvenus is assembled from no fewer than 42 American oak casks, all at least six years old, each contributing its own share to the final grain recipe. The result after blending is 78.6% rye, 11.9% wheat, 4.8% corn and 4.8% barley, a composition that gives the whisky unusual breadth for a rye-based expression.

    Neither chill filtration, added colour nor sugar is used in production, so the whisky stands entirely on its own, with only grain, cask and time as collaborators.

    Nose

    Intense vanilla meets freshly cut grass and a touch of menthol, an unusual combination for a rye whisky.

    Palate

    Smooth and soft on the tongue, with vanilla developing into spiced toffee notes, malt and a hint of dark chocolate.

    This akvavit pays tribute both to the old Scandinavian schnapps tradition and to the town of Landskrona, which Hven has administratively belonged to since 1959. It is distilled from locally grown plants wherever possible, and finished with maturation in oak casks, giving the spirit a smoothness it would not otherwise have.

    Tasting Notes

    Nose

    Fresh scent of elderflower and citrus, with a mature aroma of caraway and forest floor. Beneath that, anise and fennel appear, balanced by the spiced sharpness of wormwood, while the oak maturation ties the light and heavy notes together.

    Palate

    Round yet distinct in character. Even without added sugar, the akvavit feels smooth and gentle thanks to the oak maturation. The acidity is clear but not dominant, while the bitterness brings a light warmth and dryness towards the end.

    On Hven, a speck of land in the Öresund strait where nothing is ever quite ordinary, a corn whisky broke a few local rules the moment it appeared. MerCurious borrows its name from the quicksilver planet, and it distils almost pure Swedish corn into something closer to bourbon than to any Nordic single malt you have tried.

    Spirit of Hven MerCurious is a Swedish Corn Whisky matured in new, air-dried American oak casks and bottled at 45.6%.

    Behind the bottle stands Henric Molin, the distillery's restless distiller, who built MerCurious as a nod to the American bourbon tradition, using purely Swedish grain as its base. The recipe runs 88 percent corn, topped up with wheat, barley and rye, and every batch is drawn from fourteen casks of air-dried American virgin oak. Depending on each cask's character, the whisky matures for three to eight years before it is blended and bottled.

    The idea for Spirit of Hven took shape when Anja and Henric Molin realised this small island in the Öresund had almost everything a distillery could ask for: nutrient-rich soil, a mild microclimate and a position squarely between two countries. The distillery opened in 2008, and MerCurious has become one of its most personal expressions, a corn spirit that insists on doing things its own way.

    Tasting notes

    Nose

    Light, sweet aromas of caramel and ripe apple lead, spiced with a touch of lingonberry. Underneath sits a sweet note reminiscent of freshly baked cornbread.

    Palate

    The whisky opens almost sparkling and fresh before rounding out into a fuller, sweeter register of vanilla and cocoa. The corn stays clearly present, close to leaning over a pot of just-boiled sweetcorn, balanced by a light tartness that recalls a warm fruit pie.

    Finish

    Soft and warm, closing on a last trace of sugar-cane syrup and toasted oak.
