    The grapes come from vines around 55 years old, grown in clay and limestone soil. After manual harvest, the grapes undergo a cold pre-fermentation in vat, and fermentation takes place in tanks with regular manual punch-downs and pump-overs. The wine is aged for 12 months in oak casks and then 5 months in steel tanks.

    The vineyard sits on an 80-acre estate in Kennewick in eastern Washington and was, in 1990, the first certified organic vineyard in the state. The grapes are grown entirely without synthetic fertiliser or pesticides, and the wine is labelled NSA - No Sulfites Added - meaning the only sulfites in the bottle are the ones that occur naturally during fermentation.

    The grapes come from steep, schist-rich vineyards that cannot be mechanised, where the grapes are grown at varied elevations from 10 to 350 metres above sea level with a northeasterly exposure. The wine undergoes alcoholic fermentation in steel tanks followed by mutage sur grains - the addition of wine spirit during the still-ongoing maceration. Five weeks of extraction with daily pumping-over ensures maximum aroma and structure from the grape skins, and the wine is bottled early to preserve freshness and fruit intensity.
