    In 1859, the Benedictine monks of the Abbazia di Santo Spirito in Caltanissetta gifted their secret recipe to Salvatore Averna as thanks for his years of support to the abbey. Averna, an active member of the local community and benefactor of the monastery, began making the amaro on the family farmhouse for his guests, and by 1868 it was in full production. The tradition behind it stretches back to the fortified Benedictine abbeys, where monks produced herbal elixirs believed to hold both medicinal and tonic properties. According to the family, the recipe has remained unchanged since 1868 and uses only natural ingredients.

    An old apothecary bottle, a secret family recipe and half a century of refinement lie behind this bitter. Orange peel, wormwood and gentian root meet a distillate that has itself spent years in cask before it all comes together.

    Amaro Bitter Orange Nonino is an Italian amaro made from a herbal infusion enriched with Nonino's own grape distillate UE, cask-aged for at least 12 months and bottled at 35% ABV.

    The recipe dates back to 1933, when Antonio Nonino, third generation of the family's distillers, created "Amaro Carnia" with grappa as its base and herbs from the mountains of Friuli. Silvia Nonino, Antonio's wife and the family's first female master distiller, further developed the recipe in the 1940s with botanical ingredients from distant regions and named it "Amaro del Friuli". In 1992, third-generation sisters Cristina, Antonella and Elisabetta Nonino replaced the grappa in the recipe with the family's cask-aged grape distillate UE, and the amaro took on its current name: Amaro Nonino Quintessentia.

    The base is UE, Nonino's own grape distillate, distilled using the same artisanal method as the house's grappa and aged for at least 12 months in casks of Nevers, Limousin and ex-sherry oak. The family's secret herbal infusion is then added, including orange peel, gentian root, wormwood, galangal root, cassia bark and saffron. The bottle is shaped like an old apothecary bottle, a nod to the amaro's origins as a medicinal remedy.

    The name honours Albert Heinrich Riise, who in June 1838 was appointed pharmacist for the island of Saint Thomas in the Danish West Indies and given sole rights to produce alcohol from his pharmacy. Riise ran his "St. Thomas Apothecary Hall" in Charlotte Amalie from 1838 to 1878, and the shot is a modern tribute to that legacy. The base is premium vodka, blended with English liquorice, liquorice root powder and salmiac, giving a short, intense flavour hit rather than a slow-sipping digestif.

    In a wine cellar in Viby, a man and his cellar master spent months chasing the right balance of ginger, liquorice and saffron. The result became one of the most powerful Danish bitters ever made.

    Arnbitter is a Danish bitter at 50% ABV, bottled at 70 cl.

    The bitter was invented by Arne M. Hansen in a wine storage facility in Viby J. near Aarhus, together with cellar master Harald P. Sorensen; the exact starting date is unknown, but production is believed to have begun in the 1950s. Arnbitter spread commercially through the 1960s and had its breakthrough in 1970, winning gold at an international wine and spirits exhibition in Rotterdam on 2 October that year. The company Anthon Thorup acquired Arnbitter in 1978, and in 2015 the brand was sold to Just Drinks A/S, after which production moved to Copenhagen. The recipe is secret, but it is known to include ginger, liquorice root, cloves and saffron, blended in 2,500-litre copper tanks where it rests for three months before bottling.

Petrie approached the task from a culinary angle rather than the traditional method of blending many herbs together, instead making bitters built on single, clear botanical ingredients, coriander among them. The approach gave bartenders far greater control over the flavour of each drink, and Bob's Bitters is now used in some of the world's best bars. The bottle has a dropper cap, making it easy to dose 4 to 8 drops at a time.

    The bitter builds on the island’s long tradition of schnapps and bitters. The old steam distillery in Hasle was built in 1855 but closed shortly after the First World War, and for decades the Bornholmer name was kept alive elsewhere. It was not until 1994 that Bornholm got its own distillery back, when Den Bornholmske Spritfabrik was re-established in Nexø. Bornholmer Bitter is now one of the distillery’s core products alongside its aquavits, crafted as a rounded, easy-drinking bitter meant for a broad audience rather than a sharp, niche style, a lunch-table classic.

    This Campari Bitter is an Italian herb-based aperitif liqueur from Davide Campari Milano, bottled at 25% ABV for the German export market, most likely during the 1960s or 1970s.

    The bottle carries the older label reading "Fratelli Campari Successori" and "Davide Campari Milano," and the back of the label prints four classic serving suggestions in German — Campari with soda, Campari with orange juice, Campari on the rocks, and Campari Shakerato. Beneath the cap sits a gold-trimmed foil reading "Davide Campari Milano," a detail typical of Italian export bottlings from that period.

    Distribution to the German market was handled by Campari Deutschland GmbH in Munich, clearly stated on the label alongside the era's German import mark, "Ausländisches Erzeugnis." The cap is the old metal screw type, and the bottle appears to be an original, unopened vintage example.
