Chugoku-jozo Whisky

Deep inside a mountain near Hiroshima lies an old railway tunnel that never carried a single train. Instead it became home to barrels of whisky maturing in the dark, where temperature and humidity stay naturally stable thanks to the rock surrounding them. This is where Togouchi whisky from producer Chugoku-Jozo finds its distinctly Japanese character.

    The whisky comes from Sakurao Brewery and Distillery, which has developed the Togouchi brand since 1990. Like the other Togouchi releases, part of the whisky matures in an old railway tunnel with constant temperature and humidity, giving a softer, more rounded character than ordinary warehouse ageing.

What sets Togouchi apart is its ageing: part of the whisky matures in an abandoned railway tunnel with a constant temperature of 14°C and 80% humidity - conditions that produce an unusually soft, rounded maturation.
