Signatory Vintage Whisky

For nearly four decades, Signatory Vintage has been pulling single casks out of Scottish warehouses and pouring them straight into the glass, unadorned and uncompromising. This is whisky where the distillery's soul is never drowned in colouring or filtration, and where every cask tells its own story.

    Linkwood sits a little apart on the edge of Elgin, where the distillery's two stillhouses have quietly built a reputation as one of Speyside's most sought-after – and least seen – malts. Most of what comes off Linkwood's stills ends up in Johnnie Walker and White Horse, never under its own name. When a single cask does make it into a bottle, it's almost always an independent bottler who found it.

    Linkwood 2012 Signatory Vintage Cask Strength Collection is a Speyside Single Malt Scotch Whisky matured in a 1st Fill Bourbon Barrel and bottled at cask strength, 59%.

    Among whisky people, Linkwood is often called a "top dressing" malt – the kind of spirit blenders keep back to add an extra layer of finish and lift to their blends. Because Diageo, who own the distillery, so rarely release Linkwood as a single malt, it's the independent bottlers who have kept the name alive among enthusiasts. Signatory Vintage sourced this cask from the 2012 vintage and let it mature for ten years before drawing it straight from the cask in 2023, without colouring or chill filtration.

    The cask is a 1st Fill Bourbon Barrel, meaning it held no other whisky before Linkwood – giving a cleaner, more direct read of both the grain and the wood than a refill cask would. At 59% there's plenty of power in the glass, and it's up to the drinker to find the balance with a little water.

    Tasting Notes

    Nose

    Freshly cut hay and green apples meet a creamy vanilla note from the cask, with a hint of honey and a touch of grain underneath.

    Palate

    Delicate malted barley and ripe pear, carried by soft vanilla and a peppery warmth that makes the cask strength obvious.

    Finish

    Long, dry and lightly spiced, with a lingering note of citrus peel and good oak that stays with you.

    After Linkwood reopened in 1945, it was run for years by the Gaelic-speaking distiller Roderick Mackenzie, who was so convinced that even the cobwebs in the stillhouse affected the character of the spirit that he refused to let anyone touch them.

    Signatory Vintage Glen Spey 11 year Un-Chillfiltered Collection is a Single Malt Scotch Whisky from Speyside matured in 1st use hogsheads, bottled at 46% non-chill filtered. Glen Spey is one of the most retiring distilleries in all of Speyside. Founded in 1878 by grain merchant James Stuart, who initially built the site as a harbour mill before buying Macallan and selling Glen Spey to English wine merchants W. & A. Gilbey in 1887 — the first Scottish distillery to come into English hands. Since then the distillery has primarily been used as a supplier to blends.

    This bottle is released by Signatory Vintage as part of their Un-Chillfiltered Collection — always bottled at a minimum of 46% and without chill filtration, preserving all the natural oils and structure. The spirit was distilled on 16 September 2010 and rested in a pair of 1st use hogsheads before being bottled on 7 January 2022. The result is a full, rounded version of a distillery otherwise known for its light and delicate style — thanks to Glen Spey's distinctive purifiers on the spirit stills, which increase reflux and create a cleaner, more perfumed spirit.

    Tasting notes

    Nose

    Floral tones meet ripe pears and apples, spiced with a trace of vanilla from the casks. Beneath it all lies a light malty sweetness reminiscent of freshly baked cake.

    Palate

    Soft and rounded with a grainy sweetness, fresh fruit and a hint of honey. The unfiltered style delivers a slightly fuller body than one usually associates with this distillery's light character.

    Finish

    Medium-length with notes of malt, soft oak and a gentle spice that slowly fades.

    In the shadow of Ben Nevis at Fort William, where the highest mountain in Scotland looms over the distillery, sits some of the most understated character in whisky. No smoke, no noise, just malt, clay and time, caught in a pair of old sherry casks.

    Ben Nevis 2014/2023 Signatory Vintage 8 years Un-Chillfiltered Collection is a Single Highland Malt Whisky matured in two 2nd fill Oloroso sherry butts, casks no. 277 and 278, and bottled at 46 % without chill filtration and without added colour.

    The Un-Chillfiltered Collection is the Signatory range where everything is released unfiltered and uncoloured, so the whole character of the cask stays in the glass. The whisky was distilled on 8 December 2014 and bottled in January 2023 after eight years in wood.

    The two refill butts give a more restrained sherry influence than a first fill cask would, but enough to draw out dried fruit, nuts and a lightly spiced warmth. The Ben Nevis spirit is rustic and powerful and built for this kind of maturation, where the weight of the malt meets the sweetness of the cask without either taking charge.

    Tasting notes

    Nose

    Dried fruit, hazelnut and an earthy malt note. Behind it sit a hint of wet clay and orange.

    Palate

    Rustic and powerful with raisin, nut and spiced warmth. The malt takes up more room than the cask, and that is the whole point of the range.

    Finish

    Long and dry with nut, spice and an earthy undertone.

  • Fettercairn Signatory Single Highland Malt Whisky bottle from a single cask

    A cask filled on the last day of September 1996, and then seventeen years in which nobody touched it. Signatory left it standing until it was finished with itself, and bottled it as it was.

    Fettercairn 1996/2014 Signatory 17 Years Old is a Highland Single Malt Scotch Whisky matured in a single hogshead and bottled at 46%.

    The cask, number 4339, was filled on 30 September 1996 and bottled on 20 February 2014. Signatory Vintage of Pitlochry buys single casks from distilleries across Scotland and bottles them without chill filtration and without added colour, and it is exactly this kind of release where the character of Fettercairn is allowed to stand without being tidied up.

    Seventeen years in a hogshead is a calm maturation. The cask is large enough that the oak never takes charge, and the result is the clean, fruity house style in a more mature and restrained form than the official releases.

    Tasting notes

    Nose

    Soft notes of ripe barley, citrus oil and vanilla, with light tropical fruit and a touch of fresh oak and honey behind.

    Palate

    Round and full with classic Fettercairn tones of malt, pale caramel and fresh fruit, held together by a discreet spiced warmth from the cask.

    Finish

    Long, clean and lightly mineral with a dry elegance that reveals both the age and the quiet work of the cask.

    Ardmore 2010/2022 Signatory Vintage 12 Years Old is a Highland Single Malt Scotch Whisky matured in bourbon casks 800518, 800527 and 800531 and bottled at 46%. It was distilled in April 2010 and bottled in November 2022 in Signatory’s Un-Chillfiltered Collection.

    The Un-Chillfiltered Collection was created for those who want single malt in its most natural form: bottled without chill filtration and without added colour, so the whisky reaches the bottle as it came out of the cask, apart from an adjustment of strength to 46%.

    Three bourbon casks give a broader starting point than one. Each cask has its own small quirk, and vatted together they even each other out. The result is an Ardmore where the peat smoke and the malt sweetness hold each other in balance rather than one cask’s character dominating.

    Tasting Notes

    Nose

    Toasted malt and dry smoke first, with honey and baked apple behind. There is a light coconut and vanilla note from the bourbon wood and a fine, clean cereal floor running through it all.

    Palate

    Full and malty. Honey and vanilla open, then the smoke arrives as a dry earthy floor along with a touch of pepper and citrus peel. After twelve years the edges have been smoothed off, and balance is the real strength here.

    Finish

    Medium to long. Malt, honey and dry smoke, letting go slowly and cleanly.

The range gathers hand-picked releases from distilleries across Scotland, where the whisky is allowed into bottle in its most untreated form. Dailuaine delivers a heavier spirit than most of its Speyside neighbours, and twelve years in hogsheads is enough to give balance without erasing the malted core.

    Nose

    Fresh and cereal-led. Green apple, malt and vanilla, with a light herbal note and a touch of citrus peel.

    Palate

    Clean and malty. Cereal, honey and baked fruit, with vanilla from the oak and a dry, lightly spiced middle. The texture is fuller than filtered whisky at the same strength.

    Eight years and one month between filling and bottling. Signatory notes the dates precisely, down to the day, and that is not pedantry. It is the kind of information that makes it possible to understand why two bottles from the same distillery taste different.

    Please note: The cap on the bottle is rusty. It has no bearing on the whisky inside, but we would rather say so up front.

    The expert's description

    Ben Nevis 2013/2021 Signatory Vintage 8 years is a Single Highland Malt Whisky matured in hogsheads, casks no. 427 and 429, and bottled at 46 %.

    The whisky went into cask on 17 October 2013 and was drawn on 19 November 2021. Two hogsheads were bottled together, which gives a slightly larger outturn than a single cask, but it remains a limited release from two casks that lay side by side.

    This and the seven year old sister bottling come from the same distillation day. The difference lies purely in which casks were chosen and when they were drawn, which makes the pair an unusually good exercise in what a single year in cask actually means.

    Tasting notes

    Nose

    Malt, pear and pale oak with a note of melted butter. A hint of wet stone sits behind it.

    Palate

    Rounder than the seven year old with honey, cereal and a touch of cinnamon. The oily texture is still there, but the edges have been worn down a little.

    Finish

    Medium and warm with malt, oak and a dry close.

  • Benrinnes 2012 Signatory Dechar Rechar Speyside Single Malt Whisky

    Dechar and rechar is a violent treatment: the charred layer is scraped away and the wood is burned again. The cask gets a new life, and the whisky gets a toasted sweetness you will not find in ordinary bourbon wood.

    Benrinnes 2012/2023 Signatory Vintage 10 years Dechar Rechar is a Speyside Single Malt Scotch Whisky matured in a dechar/rechar bourbon hogshead and bottled at 58 % cask strength.

    Cask no. 310542 was filled on 25 June 2012 and emptied on 1 March 2023, yielding 270 bottles. The whisky is neither chill filtered nor coloured.

    The treatment removes the burnt inner layer of the cask, exposing fresh wood which is then charred anew. That gives a far more active surface than an ordinary refill cask, and in ten years the whisky draws vanilla, toasted sugar and spiced oak from the wood.

    Tasting notes

    Nose

    Warm bourbon notes with vanilla, toasted oak and caramelised sugar. Beneath the sweetness sit baked apples, citrus oil and a hint of malt biscuit.

    Palate

    Intense, full and oily. Vanilla pod, burnt sugar and spiced oak meet the heavy core of the spirit. The 58 % gives structure, and a few drops of water open a fresh fruit centre.

    Finish

    Long and warm with toasted wood, malt and a subtle spiced edge that lingers.

    Ardmore 2009/2020 Signatory Vintage 11 Years Old is a Highland Single Malt Scotch Whisky matured in bourbon casks that previously held Islay whisky and bottled at 46%. It was distilled in 2009 and bottled in 2020 in Signatory’s Un-Chillfiltered Collection.

    A cask does not forget. If it has held heavily peated Islay whisky, phenols remain in the staves and leach into the next filling.     Nose

    Dry smoke first, with a suggestion of seaweed and iodine behind it that has no business being in a Highland. Vanilla, malt and green apple from the bourbon wood sit underneath.

    Palate

    Malty and soft to begin, then the smoke arrives in two layers: first the dry earthy one, then a saltier, more medicinal note from the cask’s past life. At 46% there is good body, and the two kinds of smoke stand clearly beside each other.

    Finish

    Medium to long. Ash, salt and malt, with a dry close where the Islay inheritance lingers longest.

    The casks, numbers 4351 and 4356, were filled on 30 September 1996 and bottled on 29 October 2015. Two casks from the same filling day give a slightly broader profile than a single cask without losing the stamp of the individual vintage.

    Nineteen years is enough for the light, sweet spirit of the distillery to gain depth without turning woody. The whisky is bottled in natural colour and without chill filtration, so every nuance stands untouched.

    Nose

    The whisky was distilled on 9 April 2008 and bottled on 19 February 2025 from cask number 6, with an outturn of 681 bottles. The release belongs to Signatory's Cask Strength Collection. The combination of Dailuaine's fruity, malted base and the dark oloroso notes gives a whisky where sweetness and spice pull in different directions without fighting.

    Andrew Symington has spent almost four decades picking casks for other people. Symingtons Choice is the range where he picks for himself — and he started with a sherry butt from 1995.

    Clynelish 1995/2024 Symingtons Choice 28 years is a Highland Single Malt Scotch Whisky matured in an oloroso sherry butt and bottled at cask strength of 53.5%.

    The cask is numbered 11250, was filled on 21 November 1995 and emptied on 29 April 2024. It gave 447 bottles. The Symingtons Choice range is named after Signatory founder Andrew Symington, who entered the Whisky Magazine Hall of Fame in 2021. Leaving Clynelish for 28 years in oloroso is a bold call — the distillery's waxy core can easily be buried in sherry, but here the two hold each other in check.

    Tasting notes

    Nose

    Deep and dark. Raisin, fig and toffee first, then orange peel, walnut and a damp tobacco note from the old wood.

    Palate

    Full and oily. Dried fruit, dark chocolate, candied ginger and a layer of cocoa. Beneath the sherry, Clynelish still pulls with its waxy texture and a trace of salt.

    Finish

    Very long and warm, with fig, nuts, dark cocoa and a dry spiced close that keeps going.

    Auchroisk 2008/2025 Signatory 16 Years Old Symingtons Choice is a Single Speyside Malt Scotch Whisky matured in a 1st fill Oloroso sherry cask and bottled at cask strength, 57.9%. Cask no. 4 gave 339 bottles, and the whisky is neither chill filtered nor coloured.

    A first fill Oloroso cask is among the most active casks available. Over sixteen years it lays on dried fruit, nuts and spice in thick layers, and the strength of 57.9% holds it all together rather than letting it spread out.

    Auchroisk was built in 1974 to supply malt for the J&B blend, and the distillery’s bright, citrus-driven style is almost entirely covered here. It is the sherry that speaks, with the spirit holding the structure underneath.

    Nose

    Deep and dark. Raisins, dates and orange peel first, then walnut, dark chocolate and a dry spiced oak note. The alcohol is evident but not sharp.

    Palate

    Powerful and concentrated. Dried fruit and sherry sweetness hit first, then nuts, cinnamon, black pepper and a dry tanned oak note arrive. At 57.9% there is real weight, and the whisky takes water well.

    Finish

    The name Orkney, paired with the bracketed hint (HP), is Signatory Vintage's discreet compromise: the distillery cannot be named, but the cask code DRU17/A63 and the nickname point unmistakably to Highland Park. The whisky spent its entire maturation in a single cask, number 27 — nothing blended in, nothing added.

    The cask was filled on 7 May 2005 and bottled on 17 February 2023, yielding 612 bottles with natural colour and no further dilution.

    Benrinnes is known for a heavy, almost meaty spirit with a light sulphur edge, coming from worm tub condensers and from the old system of three stills in series. Nineteen years in a hogshead is enough to round the edges without removing the character.

    Nose

History & background

Signatory Vintage was founded in 1988 by Andrew Symington, then a young whisky enthusiast convinced that whisky should be bottled in its most natural form. The big turning point came in 2002, when Symington bought Edradour, Scotland's smallest distillery, giving the company its own home in the heart of Perthshire. Since then the firm has grown steadily, and today Signatory holds one of the largest cask inventories among independent bottlers, built up over decades of buying casks directly from distilleries.

Production & style

Since Signatory only distils at Edradour itself, the house style is really about selection rather than production: casks from across Scotland are chosen individually for flavour and potential, matured further in Signatory's own warehouses, and typically bottled without chill filtration or added colour.
