Signatory Vintage Whisky

For nearly four decades, Signatory Vintage has been pulling single casks out of Scottish warehouses and pouring them straight into the glass, unadorned and uncompromising. This is whisky where the distillery's soul is never drowned in colouring or filtration, and where every cask tells its own story.

    Some distilleries have never bottled a single drop under their own name. Allt-a-Bhainne is one of them. The entire output disappears into large blends, and if you want to taste the distillery on its own you have to go through an independent bottler. Here Signatory let a sherry cask sit for 21 years.

    The Expert's Description

    Allt-a-Bhainne 2000/2021 Signatory 21 Years Old is a Single Speyside Malt Scotch Whisky matured in a Sherry Butt and bottled at 52.4% cask strength. Cask 6 was distilled on 26 July 2000 and bottled on 13 August 2021, giving 703 bottles in Signatory's Cask Strength Collection.

    Allt-a-Bhainne was built in 1975 in Speyside by Chivas Brothers with one purpose: to supply malt for the company’s blends, Chivas Regal above all. The distillery is large, efficient and almost faceless to the outside world, and there are no official bottlings. That is why independent releases are the only route to the spirit.

    A Sherry Butt holds around 500 litres, and because the cask is large, maturation runs slowly. Twenty-one years in a single butt with no chill filtration and no colouring gives depth and dark fruit without the over-extracted weariness a smaller cask can produce over the same period.

    Tasting Notes

    Nose

    Prunes, figs and dark orange marmalade first. Walnut, cocoa and a dry resinous sherry note sit underneath. Given time in the glass, leather and a suggestion of old timber emerge, the kind of smell you know from a warehouse.

    Palate

    Full and dark. Raisins and bitter chocolate open, then spice and a firm oak tannin tighten things mid-palate. The 52.4% carries all of it without burning. A faint salinity in the background makes the whisky less sweet than the colour promises.

    Finish

    Long and dry. Dark chocolate, walnut and tobacco, with a final spiced warmth that lingers well past the last sip.

    Did You Know?

    The name Allt-a-Bhainne is Gaelic and means roughly the burn of milk. The distillery was built in 1975, during a period when Scotch was growing so fast that Chivas Brothers simply ran short of malt for their blends. A few years later the downturn hit, and many of the new distilleries from the 1970s were closed again. Allt-a-Bhainne survived.

    Ardlair is not a distillery. It is a name Ardmore uses when the smoke stays at home, the unpeated half of the house, named after a stone circle out in the surrounding landscape. Here it has spent eleven years in a sherry cask at 62.5%.

    Ardlair 2011/2023 Signatory Vintage 11 Years Old is a Highland Single Malt Scotch Whisky matured in a refill Oloroso Sherry Butt and bottled at 62.5% cask strength. Cask 900032 was distilled on 27 January 2011 and bottled on 11 January 2023 in Signatory's Cask Strength Collection, giving 597 bottles.

    Ardmore is one of the few Highland distilleries with peat smoke as a core style, and Ardlair is the name given to the unpeated production. Without the smoke the spirit’s own fruitiness and malt sweetness step forward more clearly, which makes the whisky far more receptive to a sherry cask.

    That the cask is refill rather than first fill matters here. A refill Oloroso Butt gives up less colour and less tannin, so the sherry settles as a layer on top instead of taking over. The whisky is bottled without filtration and without added colour.

    Tasting Notes

    Nose

    Raisins and figs first, with roasted nuts and honey behind. There is dried ginger and spice in it, and beneath the sherry sits a bright apple fruitiness that tells you the spirit is unpeated.

    Palate

    Dark chocolate and walnut open, followed by sweet sherry and spiced oak. The vanilla arrives late. At 62.5% the concentration is considerable, and the whisky takes water well, turning rounder rather than thinner.

    Finish

    Long and warming with persistent sherry sweetness and elegant oak tannins that let go slowly.

    Ardlair is named after a stone circle near the distillery. Ardmore itself was built in 1898 by Adam Teacher to secure malt for the family blend, Teacher's Highland Cream, and the house has made peated whisky ever since. Ardlair is the exception, the half that never sees peat.

    Two casks filled on the same day, in the same warehouse, with the same spirit. One was emptied in January, the other in March. Fourteen months and four digits separate them, and they do not taste alike. That is exactly why single casks are interesting.

Cask 900028 was distilled on 27 January 2011 and bottled on 8 March 2023, giving 622 bottles in Signatory's Cask Strength Collection.

    Ardlair is the Ardmore distillery’s unpeated whisky, and because there is no smoke to contend with, the cask can work directly on the spirit’s fruitiness. The refill sherry cask gives a complex, fruity profile without drowning the spirit’s own character, and that balance is the whole point of a refill cask over a first fill.

    The whisky is bottled without chill filtration and with natural colour. Ardmore sits at Kennethmont in Aberdeenshire and has been running since 1898.

    Tasting Notes

    Nose

    Fresh apples first, then pistachios and burnt almonds. A dry sherry note sits behind, along with a light salted caramel sweetness that ties it together. At 63.4% the alcohol is obvious, so give the glass a little time.

    Palate

    Creamy in texture despite the strength. Dried fruit and nuts open, then salted caramel and a clear sherry character with spiced oak underneath. The whisky is powerful, yet it has finesse enough not to be merely power.

    Finish

    Long and persistent. Nuts, dried fruit and a dry oak close, where the sherry lets go last.

    Did You Know?

    Ardmore makes medium peated whisky at around 12 to 14 ppm, which is low compared with Islay but unusual for a Highland distillery. It is one of very few in the region where peat smoke is the core style rather than a side project. Ardlair is the part of the production where the peat is left out.

    Norway buys its spirits through a state monopoly, and when Vinmonopolet picks a single cask it does so after a blind tasting with no regard for name or label. This cask made it through. It is number 21 in the series.

    Ardmore 2008/2015 Signatory Vintage 7 Years Old is a Highland Single Malt Scotch Whisky matured in a Bourbon Barrel and bottled at 40%. Cask 800083 was distilled in 2008 and bottled in 2015 as a single cask for Vinmonopolet, giving 357 bottles.

    The combination is unusual: a single cask at 40%. Most single cask releases go into the bottle at cask strength, but here the whisky has been reduced to standard strength. In return it is neither chill filtered nor coloured, which at 40% requires a cask with real body behind it.

    Ardmore makes peated whisky as its core style at around 12 to 14 ppm. After seven years in a bourbon barrel the smoke is still fresh and direct, with the cask’s vanilla and cereal standing clearly alongside.

    Tasting Notes

    Nose

    Vanilla and pale malt first, with peat smoke as a dry line underneath. There is honey and green apple in it, plus a light soot or ash note that tells you peat is in play.

    Palate

    Soft and straightforward. Malt, vanilla and baked apple open, then the smoke arrives as a dry earthy floor along with a light peppery spice. At 40% it drinks easily, and the smoke never dominates.

    Finish

    Medium length. Malt, honey and a dry smoky note that lets go calmly without bitterness.

    Medium. Single casks for Vinmonopolet are not reissued, and they exist only in the outturn the cask gave, here 357 bottles. Because they are distributed through one channel in one country, they rarely surface on the wider market afterwards.

    Vinmonopolet was established in 1922 and has since been Norway’s only legal channel for the sale of spirits. That is precisely what makes their single cask selections interesting: there are no competing chains to accommodate, and the choice is made by a buying team rather than by a brand.

    Ardmore 2009/2020 Signatory Vintage 11 Years Old is a Highland Single Malt Scotch Whisky matured in bourbon casks that previously held Islay whisky and bottled at 46%. It was distilled in 2009 and bottled in 2020 in Signatory’s Un-Chillfiltered Collection.

    A cask does not forget. If it has held heavily peated Islay whisky, phenols remain in the staves and leach into the next filling. When the contents are already peated Highland malt from Ardmore, you end up with two different kinds of smoke layered on each other: the dry earthy one from Aberdeenshire and a hint of the maritime one from the west coast.

    The whisky is neither chill filtered nor coloured. Bottling at 46% was chosen to preserve body and mouthfeel without going all the way to cask strength.

    Tasting Notes

    Nose

    Dry smoke first, with a suggestion of seaweed and iodine behind it that has no business being in a Highland. Vanilla, malt and green apple from the bourbon wood sit underneath.

    Palate

    Malty and soft to begin, then the smoke arrives in two layers: first the dry earthy one, then a saltier, more medicinal note from the cask’s past life. At 46% there is good body, and the two kinds of smoke stand clearly beside each other.

    Finish

    Medium to long. Ash, salt and malt, with a dry close where the Islay inheritance lingers longest.

    The difference from a first fill is marked. A second fill cask gives up less vanilla, less colour and less tannin, so Ardmore’s own peated character gets far more room. What Islay phenols remain in the staves are correspondingly muted, sitting as a suggestion rather than a layer.

    Thirteen years is a long time for a cask that gives little. The result is a whisky where the spirit stands at the front and the wood keeps to the background. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Dry smoke and toasted malt first, with honey and a light citrus peel behind. The vanilla is subdued, and a clean cereal note runs through it all. This is the spirit talking, not the cask.

    Palate

    Malty and dry. The smoke arrives early and stays, with honey and baked apple underneath. There is a light saline undercurrent from the cask’s Islay past and a dry, peppery turn mid-palate. At 46% the body is good without being heavy.

    Did You Know?

    Ardmore was the last Scottish malt distillery to use coal-fired stills. Only in 2001 did it switch to steam heating. Direct fire gives a slightly more scorched, meaty spirit, so whisky distilled at Ardmore before the turn of the millennium has a different character from what is made today.

    Ardmore 2010/2021 Signatory Vintage 11 Years Old is a Highland Single Malt Scotch Whisky matured in bourbon casks 800999 and 801000 and bottled at 46%. It was distilled on 6 May 2010 and bottled on 6 August 2021 in Signatory’s Un-Chillfiltered Collection, giving 480 bottles.

    Vatting two casks rather than bottling them separately is a deliberate choice. You lose the individuality of a single cask but gain a larger, better balanced release where one cask’s quirks get evened out. As long as all the whisky comes from one distillery, the term Single Malt Whisky still applies.

    Here there is no Islay past in the wood and no sherry, only plain bourbon casks. That gives Ardmore’s own peated character and malt sweetness a clear run, and the result is the most straightforward of Signatory’s Ardmore releases in this range.

    Tasting Notes

    Nose

    Vanilla and pale malt first, with dry smoke as a firm undercarriage. There is honey, green apple and a light coconut note from the bourbon wood. Clean and precise with nothing heavy about it.

    Palate

    Malty and soft. Vanilla and baked apple open, then the smoke arrives as a dry earthy note alongside white pepper. At 46% the body is good, and the balance between sweetness and smoke stays even the whole way.

    Finish

    Medium length. Malt, vanilla and a dry ash note that lets go cleanly without bitterness.

    Did You Know?

    Ardmore’s peat comes from the mainland in Aberdeenshire, not from Islay. Mainland peat is formed from heather, moss and wood rather than seaweed and salt water, so it gives a dry, earthy and almost sooty smoke without iodine or tar. It is the same difference you can taste between a Highland and an Islay without seeing the labels.

    Ardmore 2010/2022 Signatory Vintage 12 Years Old is a Highland Single Malt Scotch Whisky matured in bourbon casks 800518, 800527 and 800531 and bottled at 46%. It was distilled in April 2010 and bottled in November 2022 in Signatory’s Un-Chillfiltered Collection.

    The Un-Chillfiltered Collection was created for those who want single malt in its most natural form: bottled without chill filtration and without added colour, so the whisky reaches the bottle as it came out of the cask, apart from an adjustment of strength to 46%.

    Three bourbon casks give a broader starting point than one. Each cask has its own small quirk, and vatted together they even each other out. The result is an Ardmore where the peat smoke and the malt sweetness hold each other in balance rather than one cask’s character dominating.

    Nose

    Toasted malt and dry smoke first, with honey and baked apple behind. There is a light coconut and vanilla note from the bourbon wood and a fine, clean cereal floor running through it all.

    Palate

    Full and malty. Honey and vanilla open, then the smoke arrives as a dry earthy floor along with a touch of pepper and citrus peel. After twelve years the edges have been smoothed off, and balance is the real strength here.

    Finish

    Medium to long. Malt, honey and dry smoke, letting go slowly and cleanly.

    The 100 Proof series gathers single malts from different Scottish distilleries, all bottled at precisely the same strength. That makes the series an unusually clean comparison: with the alcohol content identical, the differences between distillery and cask stand out without the strength clouding the picture.

    Here Ardmore’s peated Highland spirit meets first fill Oloroso wood. It is a forceful combination, since fresh sherry casks give dark fruit, tannin and colour in quantity, and the smoke has to work to get through. The whisky is neither chill filtered nor coloured.

    Nose

    Dark fruit first: raisins, prunes and preserved cherries. Beneath sit dry smoke and roasted nuts, along with a resinous sherry note that only first fill casks provide.

    Auchentoshan 1999/2024 Signatory 24 Years Old Symingtons Choice is a Lowland Single Malt Scotch Whisky distilled in 1999 and bottled in 2024 at 55.6% cask strength. It belongs to Signatory’s Symingtons Choice range, created as a tribute to the house founder Andrew Symington.

    Auchentoshan is the only Scottish distillery that consistently distils everything three times. That gives a silky, elegant spirit which with age has developed a complex and refined character rather than turning heavy. Twenty-four years is a long time for that particular style.

    The whisky is bottled at cask strength without chill filtration and with natural colour. Auchentoshan sits at Dalmuir outside Glasgow and was founded in 1823.

    Tasting Notes

    Nose

    Delicate notes of honey, ripe stone fruit and fresh citrus open, beautifully balanced by vanilla and a light nutty tone from the maturation. At 55.6% the alcohol is up front, but the aromas carry it.

    Palate

    Full and harmonious with layers of caramelised malt, dried fruit, orange peel and subtle spice. The high cask strength gives intensity while Auchentoshan’s characteristic softness is preserved. There is no harshness despite the strength.

    Finish

    Long, warm and silky with persistent notes of oak, chocolate and a wisp of tobacco, testimony to the whisky’s long maturation.

    Auchroisk 1996/2022 Signatory 25 Years Old is a Single Speyside Malt Scotch Whisky matured for 25 years in sherry cask no. 2 and bottled at 48.5%. The cask gave 684 bottles, and the whisky is neither chill filtered nor coloured.

    Twenty-five years in a sherry cask is a long time, and the strength of 48.5% tells its own story: a fair amount has evaporated along the way, and what remains is concentrated. Signatory bottles at cask strength without adjustment, so the figure on the label is what the cask gave.

    Auchroisk was built in 1974 to supply malt for the J&B blend, and the distillery’s bright, citrus-driven style takes on an entirely different expression here. The sherry has had a quarter of a century to lay dark fruit and spice over the top.

    Tasting Notes

    Nose

    Dark and deep. Raisins, fig and orange marmalade first, then walnut, dark chocolate and a dry old oak note. A fine leathery note sits at the bottom.

    Palate

    Ben Nevis 2013/2021 Signatory Vintage 8 years is a Single Highland Malt Whisky matured in hogsheads, casks no. 427 and 429, and bottled at 46 %.

    The whisky went into cask on 17 October 2013 and was drawn on 19 November 2021. Two hogsheads were bottled together, which gives a slightly larger outturn than a single cask, but it remains a limited release from two casks that lay side by side.

    This and the seven year old sister bottling come from the same distillation day. The difference lies purely in which casks were chosen and when they were drawn, which makes the pair an unusually good exercise in what a single year in cask actually means.

    Nose

    Malt, pear and pale oak with a note of melted butter. A hint of wet stone sits behind it.

    Palate

    Rounder than the seven year old with honey, cereal and a touch of cinnamon. The oily texture is still there, but the edges have been worn down a little.

    The Decanter Collection is the Signatory range in the distinctive broad bottle. The series holds a fixed bottling strength of 46 %, and casks are chosen for their ability to carry sherry influence without the distillery style disappearing. This whisky was distilled in 2014 and lay eight years in cask.

    Sherry butts hold around 500 litres, giving a lower wood to liquid ratio than smaller casks. Maturation is therefore slower and more restrained, and after eight years the weight of the Ben Nevis spirit still sits clearly beneath the dried fruit.

    Ben Nevis 2014/2023 Signatory Vintage 8 years Un-Chillfiltered Collection is a Single Highland Malt Whisky matured in two 2nd fill Oloroso sherry butts, casks no. 277 and 278, and bottled at 46 % without chill filtration and without added colour.

    The Un-Chillfiltered Collection is the Signatory range where everything is released unfiltered and uncoloured, so the whole character of the cask stays in the glass. The whisky was distilled on 8 December 2014 and bottled in January 2023 after eight years in wood.

    The two refill butts give a more restrained sherry influence than a first fill cask would, but enough to draw out dried fruit, nuts and a lightly spiced warmth. The Ben Nevis spirit is rustic and powerful and built for this kind of maturation, where the weight of the malt meets the sweetness of the cask without either taking charge.

    Nose

    Dried fruit, hazelnut and an earthy malt note. Behind it sit a hint of wet clay and orange.

    Palate

    Rustic and powerful with raisin, nut and spiced warmth. The malt takes up more room than the cask, and that is the whole point of the range.

    BenRiach 2000/2021 Signatory Vintage 21 years Cask Strength Collection is a Single Speyside Malt Whisky matured in a sherry butt, cask no. 6, and bottled at 59.2 % cask strength without chill filtration and without added colour.

    The whisky went into cask on 24 May 2000 and was drawn on 13 August 2021. The cask yielded 685 bottles, which fits a butt of that size, and no water was added. The 59.2 % is the natural strength of the cask after twenty-one years.

    The Cask Strength Collection is the Signatory range for single casks bottled exactly as they come from the warehouse. The series is used for casks the house judges able to carry full strength, and the malted core of BenRiach has the body required.

    Nose

    Dark fruit, walnut and orange peel with a deep sherry note. Behind it sit cocoa and old leather.

    Palate

    Very powerful and dense with raisin, fig and spiced oak. The strength bites, but the fruit holds its ground and settles as a layer on top.

    Benrinnes is known for a heavy, almost meaty spirit with a light sulphur edge, coming from worm tub condensers and from the old system of three stills in series. Nineteen years in a hogshead is enough to round the edges without removing the character.

    Benrinnes 1996/2022 Signatory 25 years is a Speyside Single Malt Scotch Whisky matured in hogsheads and bottled at 53.2 % cask strength.

    Signatory Vintage filled two hogsheads, cask no. 11712 and 11716, on 28 October 1996 and emptied them again on 18 January 2022. The result was 537 bottles for the Cask Strength Collection, the range where Signatory lets the cask speak without water and without filtration. The whisky is neither chill filtered nor coloured.

    Until 2007 Benrinnes ran an unusual partial triple distillation, and the entire production still passes through worm tubs sunk in cold water outside. That gives a spirit with weight and an almost meaty texture — exactly the kind of body that can carry a quarter of a century in oak without tiring.

    Tasting notes

    Nose

    Old oak, dried apricot and a dry nuttiness reminiscent of walnut shells. Underneath sit honey, a little cinnamon bark and a faint oily note that only comes with age.

    Palate

    Full and warm from the first sip. Malt, dark orange marmalade and caramelised sugar meet a peppery edge from the oak. The 53.2 % pushes, but it is never harsh — a few drops of water open a fruity core of baked apple.

    Finish

    Long and dry with toasted malt, tobacco leaf and a layer of spiced oak that lingers. It ends where many younger whiskies have run out of things to say.

    Cask no. 9410 and 9428 were filled on 17 October 1997 and bottled on 21 February 2018. Signatory has neither chill filtered nor coloured the whisky, and the 43 % is a deliberate choice: a strength where the long maturation steps forward instead of the alcohol.

    Benrinnes sits in Speyside at the foot of Ben Rinnes, but the distillery is also classified as Highland — the region covers Speyside, and bottlers choose the label themselves. The distillery's worm tubs give a heavy, almost meaty spirit, softened here by twenty years in oak.

    Nose

    Baked apples, sweet malt and a little dried apricot. Beneath the fruit lies a hint of an old library — dusty oak and leather binding.

    Palate

    Soft and rounded with honey, vanilla and a light mineral tone. The fruit is ripe rather than fresh, and a fine bitterness from the oak sits in the middle.

    Finish

    Medium to long, dry and malty with a puff of nutmeg. It fades slowly and without hurry.

    Benrinnes normally goes almost entirely into blends for Diageo, and official bottlings are rare. Independent houses such as Signatory therefore provide the access to the distillery's own voice — here in a version where the bourbon cask pulls the whisky towards vanilla and light fruit rather than heavy sherry.

    Blair Athol 2007/2022 Signatory 14 Years is a Single Highland Malt Whisky from a Refill Hogshead finished for 35 months in a Sherry Butt and bottled at cask strength, 54.3%.

    Signatory Vintage bought the Blair Athol spirit, distilled on 7 September 2007, and bottled it on 19 January 2022 as part of the house's Cask Strength Collection. The run is 670 bottles, which fits a butt, and the whisky is neither chill filtered nor coloured.

    Blair Athol's heavy, nutty spirit is good company for a sherry cask. Thirty-five months is a long finishing period, so the cask has had the chance to reach further into the whisky than a typical six to twelve month finish.

    Tasting notes

    Nose

    Raisin and dark sugar with walnut, orange peel and a breath of leather.

    Palate

    Full and oily with dried fruit, cinnamon and roasted nuts. The sherry sits heavily, but the malty core of the spirit shines through.

    Finish

    Long and warm with nuts, dark chocolate and a trace of tobacco.

History & background

Signatory Vintage was founded in 1988 by Andrew Symington, then a young whisky enthusiast convinced that whisky should be bottled in its most natural form. The big turning point came in 2002, when Symington bought Edradour, Scotland's smallest distillery, giving the company its own home in the heart of Perthshire. Since then the firm has grown steadily, and today Signatory holds one of the largest cask inventories among independent bottlers, built up over decades of buying casks directly from distilleries.

Production & style

Since Signatory only distils at Edradour itself, the house style is really about selection rather than production: casks from across Scotland are chosen individually for flavour and potential, matured further in Signatory's own warehouses, and typically bottled without chill filtration or added colour. Many releases come at Cask Strength, so you get the whisky exactly as it left the cask.
