Serum Rum

During the construction of the Panama Canal, Cuban women mixed rum with dried fruit and spices to give workers strength. Serum still carries the name of the tonic born from that hardship.

  • Bottle of Serum Panama Seasons Vintage 2005 Dry Rum
    Item no.: 059763-615-912

No sweeteners, no artificial colouring - just fresh cane juice distilled into a dry, unadorned rum for anyone who wants to taste Panama without a filter.

    Expert description

Serum Panama Seasons Vintage 2005 Dry is a dry Rum from the Sèrum distillery, bottled at 45%.

The sugar cane is chopped and crushed into fresh cane juice, which is then distilled directly - unlike the more common molasses-based rum - to preserve a fine aroma of cane and fruit. Panama Seasons Dry Vintage 2005 is non-chill filtered and has no added sweetener or artificial colouring, giving a cleaner, more unadorned rum style than many other Panamanian releases.

Sèrum is a Panamanian rum brand founded in 2018 that draws inspiration from the history of the Panama Canal. With the Panama Seasons series, the distillery shows another side of the country's rum tradition, where the agricole-inspired approach using fresh cane juice contrasts with the brand's more classic molasses rum.

  • Bottle of Serum Panama Seasons Vintage 2005 Wet Rum
    Item no.: 059763-615-913

Where "Dry" shows off the cane's raw character, "Wet" goes the other way - a softer, rounder take on the same Panamanian cane juice.

    Expert description

Serum Panama Seasons Vintage 2005 Wet is a Rum from the Sèrum distillery, bottled at 40%.

Like its dry sibling, the Wet release is distilled from fresh, concentrated cane juice rather than molasses, giving a fine aroma of cane and fruit. Where the Dry release leans into the rum's raw, unfiltered side, the Wet version is composed for a softer, more approachable style, still built on the same 2005 vintage and the same respect for the cane's natural character.

Sèrum is a Panamanian rum brand founded in 2018, drawing on the history of the Panama Canal. The Panama Seasons series, to which both Wet and Dry belong, shows two sides of the same craft - one raw and unadorned, the other round and inviting.

About Serum Rum

Serum is Panamanian rum with a history as striking as its flavour. The name stems from the construction of the Panama Canal, where rum mixed with dried fruit and spices became known locally as "serum" - a drink believed to have healing properties and thought to ward off malaria.

History & Background

The story dates back to the late 1800s and the building of the Panama Canal (1880-1914), where thousands of workers from the Caribbean and Cuba lost their lives, mainly to malaria and brutal working conditions. A group of Cuban women came up with the idea of mixing dried fruit and spices with Panamanian rum to give workers the strength they needed under these harsh conditions - and the drink was named "serum" after the strength and healing effect it was believed to have.

Production & Style

The rum is made from 100% Panamanian-grown sugar cane and premium class A molasses. After fermentation, the fresh rum ("aguardiente") is matured in casks of American white oak previously used for bourbon, giving the series its characteristic round, sweet profile.

Signature Style

Sweet, Round, Spiced
The flavour offers caramel, dried fruit and warm spice, with a soft, rounded finish from the American oak maturation.

Did You Know?

The name "serum" comes from Panamanian canal workers believing the rum acted as a kind of medicine against malaria - hence the almost clinical name for a rum-based drink.
