    The journey begins in an earthen pit filled with glowing stones and black oak, where the agave slowly smokes to tenderness. Derrumbes Oaxaca is the first chapter of a brand that insists mezcal is bigger than any single place.

    Expert Description

    Derrumbes Oaxaca is a Mexican Joven Mezcal from Oaxaca, made from 70% Espadín and 30% Tobalá agave and bottled at 46.4%. The mezcal comes from Derrumbes, a distillery founded in 2012 by former chef Esteban Morales and tequila veteran Sergio Mendoza, who set out to showcase Mexican mezcal from more of the country's states than Oaxaca alone. The Oaxaca expression is produced by third-generation agave farmer and maestro mezcalero Javier Mateo and his family in the town of Santiago Matatlán, at the heart of Oaxaca's Central Valleys, where the region's greatest agave biodiversity is found. The agave is roasted in an underground stone pit with black oak, ground on a tahona, and wild-fermented with the help of pulque and water from the ancient Zapotec town of Mitla.
