    Item no.: 22227865479-1106-1972804790

Pinot Noir is known as the difficult grape that demands patience, and at 11th Hour Cellars that fits the philosophy perfectly - waiting until the last moment to make the crucial choices about harvest and ageing.

11th Hour Cellars Pinot Noir is a Red Wine from California, USA, made from Pinot Noir with an alcohol content of 13%. The grapes come from the Lodi area in the northern San Joaquin Valley, where cool evening breezes from the Sacramento Delta help preserve the grape's acidity and finesse throughout the long ripening period. • Bottle of pink rosé port from Altiva
    Item no.: 2222733-6663

Pink, light and made for warm days - this rosé Port breaks with the image of the heavy, dark dessert wine and invites you outside instead.

    Expert's Description

Altiva Rose Port is a rosé Port from the Douro Valley in Portugal with an alcohol content of 19.5%.

Unlike the classic, cask-aged Port styles, a rosé Port is made without extended ageing, preserving its fresh pink colour and crisp berry and fruit character. The style is relatively new within the Port category and appeals to those wanting a lighter, more summery take on fortified Douro wine.

Behind Altiva stands the Van Zellar family, whose involvement in the world of Port stretches all the way back to the early 1600s - fourteen generations in time. The Altiva brand itself is more recent, established in 1996 as the family's take on a more modern, approachable Port style.

    Tasting Notes

    Nose

The nose is fresh and aromatic with red berries and a hint of tropical fruit.

    Palate

The palate offers cherry and raspberry with a light caramel note, giving a soft but not heavy sweetness.

    Item no.: 22227865479-1106-197280249

Arensbak is not made from grapes. It is made from tea - kombucha, a fermented drink over 2000 years old - shaped by a Danish team consisting of a sommelier, a microbiologist and a branding expert, with the stated goal of recreating wine's complexity without a single grape in the recipe.

    Expert's Description

Arensbak Blanc is an alcohol-free, kombucha-based drink from Denmark with an alcohol content of max 0.5%. Arensbak was founded by sommelier Emilie Ost-Jacobsen, fermentation specialist Bram Kerkhof and Christian Arensbak, and has won awards at the World Alcohol-free Awards. The Blanc edition uses jasmine tea as its base, giving it its characteristic floral aroma.

  • Coole Swan Irish Cream Liqueur
    Item no.: 22227865479-306

There is a lake at Coole Park in County Galway where W.B. Yeats counted fifty-nine swans and wrote a poem about them. This bottle takes its name from that poem. What is inside comes from a farm in County Meath, where two dairy farmers needed 231 attempts before they were happy with the taste.

    The expert's description

Coole Swan Irish Cream Liqueur is an Irish Whiskyliqueur made with Single Malt Irish Whiskey, Belgian white chocolate and fresh Irish cream, bottled at 16%.

Behind the liqueur sits the family business The Scion Spirits Company, based at Otter Island in Tatestown near Navan, County Meath. Philip Brady and Mary Sadlier are dairy farmers themselves, and that is what makes the bottle interesting. Cream is the lead ingredient, not a binder. Only around four percent of milk is cream, and that is precisely the part this liqueur is built on.

The recipe reached the Irish market in March 2007. It holds fresh Irish dairy cream, Single Malt Irish Whiskey, Belgian white chocolate, water, milk protein, sugar, cocoa and vanilla. Nothing else. No artificial flavourings, and it is noticeably less sweet than most other Irish cream liqueurs. Bottling happens in Bailieborough, County Cavan. Coole Swan has taken a double gold at the San Francisco World Spirits Competition and a gold in the Irish Cream category at The Liqueur Masters in 2021.

The colour is not added. That pale, almost porcelain-white tone comes from the cream, the white chocolate, the cocoa and the vanilla. The bottle itself is modelled on a nineteenth century Irish milk bottle, and the matt finish is painted onto the glass.

    Tasting notes

    Nose

Cocoa butter and light milk chocolate first, then vanilla custard and a touch of spice. Something nutty sits behind it, and the whiskey does not hide.

    Palate

Light and creamy without turning heavy. White chocolate, vanilla and toffee apple, with a darker cocoa note and a little cinnamon towards the middle. The sweetness is kept in check.

    Finish

Long and clean. Malty, faintly cooling at the very end, and no sticky film left behind.

Brut Classic is the calling card of Champagne house Deutz, a dry, elegant style that has defined the house's reputation since its founding in Ay in 1838. It is the champagne you return to when you want the classic done right.

    Expert's Description

Deutz Brut Classic AOP is a Sparkling Wine from Champagne, France, made from Chardonnay, Pinot Noir and Pinot Meunier with an alcohol content of 12%. The champagne house was founded in 1838 by William Deutz and Pierre-Hubert Geldermann and has since held to a style defined by purity and finesse rather than power. Brut Classic is the house's flagship cuvee, blended from grapes across several vintages and villages to ensure consistency year after year, made via the Traditional Method with extended lees ageing before disgorgement.

    Tasting Notes

    Nose

Fresh and floral on the nose, with almond notes and a touch of white blossom.

    Palate

Clean and full-bodied on the palate, with good structure, finesse and a creamy texture carried by fine, persistent bubbles.

In the 3-kilometre cellar galleries beneath the chalk hills of Ay, Champagne house Deutz has aged its cuvees since 1838. Demi Sec is the house's take on a sweeter style, made for those who want champagne's finesse without the biting dryness.

    Expert's Description

Deutz Demi Sec is a Sparkling Wine from Champagne, France, made from Chardonnay, Pinot Noir and Pinot Meunier with an alcohol content of 12%. Champagne house Deutz was founded in 1838 by William Deutz and Pierre-Hubert Geldermann in the town of Ay, one of Champagne's most respected Grand Cru villages. Demi Sec carries a higher dosage than the house's Brut wines, giving a noticeable but balanced sweetness still carried by champagne's natural acidity. The bubbles are formed through the Traditional Method, with a second fermentation in bottle to the house's usual high standard.

    Tasting Notes

    Nose

A soft, inviting nose of ripe apples, honey and a touch of brioche.

    Palate

Clean and round on the palate with a noticeable, well-balanced sweetness, lifted by fresh acidity and a hint of citrus peel.

    Finish

    Item no.: 22227865479-1003

Where Brut Classic shows the house's dry, classic side, Rose AOP reveals a more sensual facet of Deutz. The colour alone - a pale, salmon-pink hue - tells the story of a champagne built to charm.

    Expert's Description

Deutz Rose AOP is a Sparkling Wine from Champagne, France, made from Chardonnay and Pinot Noir with an alcohol content of 12%. The rose colour is achieved by adding a small proportion of red wine from Pinot Noir to the white cuvee before the second fermentation, a method that gives Deutz precise control over colour and fruit character. The champagne house, founded in Ay in 1838, has made rose a permanent part of its range, keeping the style dry despite the more fruit-driven profile. The bubbles form through the Traditional Method, with extended lees ageing.

    Tasting Notes

    Nose

Red berries such as strawberry and raspberry, combined with a touch of rose petal.

    Palate

Round and fruity on the palate with a hint of red berries, carried by fresh acidity and a creamy texture.

    Finish

While the house's Rose AOP is a permanent fixture in the range year after year, Rose Vintage is reserved for the vintages Deutz's cellar master deems worthy of standing alone. 2014 is one of them - a rare, pure Pinot Noir champagne from a single harvest.

    Expert's Description

Deutz Rose Vintage 2014 is a Sparkling Wine from Champagne, France, made from 100% Pinot Noir with an alcohol content of 12%. Unlike the house's non-vintage rose, this is a vintage champagne where all the grapes come from the 2014 harvest - a year that, despite challenging weather across much of Champagne, allowed Deutz to select its finest Pinot Noir parcels for a concentrated, deeply coloured cuvee. The champagne has spent longer on the lees than the house's standard wines, giving it extra complexity and depth.

    Tasting Notes

    Nose

Intense on the nose, with ripe raspberry, cherry and a hint of pepper.

    Palate

Full-bodied and fruit-driven on the palate, with bold red berries, a creamy texture and acidity that keeps it all taut and fresh.

    Finish

    Item no.: 2222786539-1080

In a converted 18th-century chapel in the small fishing village of Vilanova i la Geltrú on the Costa Daurada, brothers Marc and Manuel Giró created a gin in 2007 that gathers the whole Mediterranean into one bottle, from Spanish olives to Italian basil.

    Expert's description

Gin Mare is a Spanish Mediterranean Gin distilled in Vilanova i la Geltrú and bottled at 42.7%.

Marc and Manuel Giró are grandsons of the founder behind the celebrated 1940 Spanish gin GinMG, and carried the family's distilling legacy forward with a new, Mediterranean-inspired concept.

Four key botanicals define the gin, each sourced from its own Mediterranean country: Arbequina olives from Catalonia, rosemary from Greece, thyme from Turkey and basil from Italy. Citrus botanicals such as Spanish orange peel, lemon peel and bergamot macerate for 40 days before distillation.

Nine botanicals are macerated and distilled entirely separately in a custom-built Florentine flask still in 250-litre batches. The Arbequina olive is the only olive variety in the world with Protected Denomination of Origin status, and its acidity shifts from year to year, so no two vintages of Gin Mare are identical.

    Tasting notes

    Nose

The nose is herbal and Mediterranean with rosemary, basil and a light salty olive note.

    Palate

The palate is complex with juniper in the background, spiced thyme and rosemary, and an earthy depth from olive.

    Finish

The finish is dry and herbal, with a last trace of citrus.
