Big Peat Christmas Edition 2021 is an Islay Blended Malt Scotch Whisky bottled at 52.8 % cask strength.
It is the eleventh edition in Douglas Laing's Christmas series, assembled from single malts from Ardbeg, Caol Ila, Bowmore and Port Ellen. The whisky is neither chill filtered nor coloured.
The Christmas release is bottled every year at cask strength and with its own composition, and the 2021 vintage is among the paler in colour — a sign that bourbon leaning casks dominate the vatting.
Tasting notes
Nose
Soot and stove glass, dried seaweed and a sharp medicinal edge. Under the smoke sit lemon, vanilla and a light sweetness.
Palate
High-octane peat smoke with sea salt, pepper and toasted barley. The 52.8 % gives a firm grip, and a dry, almost chalky minerality runs through the middle.
Finish
Long and dry with ash, salt and a hint of vanilla at the end.

The bottle is built from whisky distilled in the winter months, when Dalwhinnie's already cold position in the Cairngorms gives the slowest condensing of the year. Falkendal Snaps Vinter is a Danish Snaps from Thornæs Distillery, bottled at 41%. The snaps belongs to the distillery's Falkendal range, named after the farm in Kagerup near Helsinge, where founder Torben Thornæs Andersen swapped a career in communications for the dream of crafting Danish spirits in 2018. A trip through the Highlands and Speyside gave him the grounding he needed, and by 2019 production was under way in the converted horse stable on the farm.
The winter edition is built for the darkest months of the year. It is loaded with juicy orange, crisp apple and a touch of fennel, and the result is a round, full-bodied snaps with a pleasant sweetness and a warming finish that lingers. It is made to sit alongside the herring and roast duck of a Danish Christmas lunch, but it works just as well as a warm gesture on a cold winter afternoon.

The Snow Grouse is a Blended Grain Scotch Whisky bottled at 40% in a 2 cl bottle.
Where the rest of the Famous Grouse family builds on malt bound together by grain, Snow Grouse is grain whisky throughout. That is a deliberate choice, because grain whisky is softer, sweeter and carries fewer sharp edges, which is precisely why it can be served ice cold without the flavour disappearing the way it would in a malt.
The producer recommends keeping the bottle in the freezer and pouring it straight from there. The cold makes the whisky syrupy in texture and pushes it towards vanilla and cream. It is a different way of drinking whisky from the usual one, and that is the entire idea.

Nose
Discreet and clean. Vanilla, pale caramel and a touch of green fruit, more restrained still when the bottle comes straight from the freezer.
