    Summer on the Amalfi Coast: terraces of lemon trees stepping down towards the sea, and a scent that hangs in the air long after you have walked past. That is where Malfy took its name and its character from. The bottle itself is filled a good way further north, in Piedmont, behind frosted yellow glass the colour of a sun-bleached wall.

    Malfy Gin Con Limone is an Italian Gin distilled at Torino Distillati in Moncalieri, flavoured with lemon peel from the Amalfi Coast and Sicily and bottled at 41%.

    Behind the citrus sits a classic gin structure: Italian juniper, coriander, cassia, liquorice, grapefruit peel and orange peel. Distillation happens under vacuum at low temperature, and that is the whole point of this gin. Lemon peel is fragile, and boiling it drives off the volatile oils and leaves behind something closer to lemon candy than to fruit. At low pressure the alcohol evaporates far cooler, and the freshness of the peel makes it into the distillate intact.

    Malfy launched in 2016, created by Biggar & Leith together with the Vergnano family at Torino Distillati, who had been distilling gin since the 1970s. Con Limone was one of the first two expressions and is still the one most people know the brand by. Pernod Ricard bought Malfy in 2019.

    In a converted 18th-century chapel in the small fishing village of Vilanova i la Geltrú on the Costa Daurada, brothers Marc and Manuel Giró created a gin in 2007 that gathers the whole Mediterranean into one bottle, from Spanish olives to Italian basil.

    Gin Mare is a Spanish Mediterranean Gin distilled in Vilanova i la Geltrú and bottled at 42.7%.

    Marc and Manuel Giró are grandsons of the founder behind the celebrated 1940 Spanish gin GinMG, and carried the family's distilling legacy forward with a new, Mediterranean-inspired concept.

    Four key botanicals define the gin, each sourced from its own Mediterranean country: Arbequina olives from Catalonia, rosemary from Greece, thyme from Turkey and basil from Italy. Citrus botanicals such as Spanish orange peel, lemon peel and bergamot macerate for 40 days before distillation.

    Nine botanicals are macerated and distilled entirely separately in a custom-built Florentine flask still in 250-litre batches. The Arbequina olive is the only olive variety in the world with Protected Denomination of Origin status, and its acidity shifts from year to year, so no two vintages of Gin Mare are identical.

    Tasting notes

    Nose

    The nose is herbal and Mediterranean with rosemary, basil and a light salty olive note.

    Palate

    The palate is complex with juniper in the background, spiced thyme and rosemary, and an earthy depth from olive.

    Finish

    The finish is dry and herbal, with a last trace of citrus.

  • Coole Swan Irish Cream Liqueur

    There is a lake at Coole Park in County Galway where W.B. Yeats counted fifty-nine swans and wrote a poem about them. This bottle takes its name from that poem. What is inside comes from a farm in County Meath, where two dairy farmers needed 231 attempts before they were happy with the taste.

    Coole Swan Irish Cream Liqueur is an Irish Whiskyliqueur made with Single Malt Irish Whiskey, Belgian white chocolate and fresh Irish cream, bottled at 16%.

    Behind the liqueur sits the family business The Scion Spirits Company, based at Otter Island in Tatestown near Navan, County Meath. Philip Brady and Mary Sadlier are dairy farmers themselves, and that is what makes the bottle interesting. Cream is the lead ingredient, not a binder. Only around four percent of milk is cream, and that is precisely the part this liqueur is built on.

    The recipe reached the Irish market in March 2007. It holds fresh Irish dairy cream, Single Malt Irish Whiskey, Belgian white chocolate, water, milk protein, sugar, cocoa and vanilla. Nothing else. No artificial flavourings, and it is noticeably less sweet than most other Irish cream liqueurs. Bottling happens in Bailieborough, County Cavan. Coole Swan has taken a double gold at the San Francisco World Spirits Competition and a gold in the Irish Cream category at The Liqueur Masters in 2021.

    The colour is not added. That pale, almost porcelain-white tone comes from the cream, the white chocolate, the cocoa and the vanilla. The bottle itself is modelled on a nineteenth century Irish milk bottle, and the matt finish is painted onto the glass.

    Tasting notes

    Nose

    Cocoa butter and light milk chocolate first, then vanilla custard and a touch of spice. Something nutty sits behind it, and the whiskey does not hide.

    Palate

    Light and creamy without turning heavy. White chocolate, vanilla and toffee apple, with a darker cocoa note and a little cinnamon towards the middle. The sweetness is kept in check.

    Finish

    Long and clean. Malty, faintly cooling at the very end, and no sticky film left behind.

    On the back of the bottle sits an embossed motif of a cat drinking cream from a bowl. The cat is called Isabella, named after the cat belonging to a Los Angeles radio host who was an early convert to the liqueur.
