    On June 5, 2025, twenty Sall Whisky Friends gathered in the village of Sall with empty glasses and open minds. In front of them stood five samples, each carrying its own story - bourbon, Amontillado, Palo Cortado, Oloroso and PX. By the end of the evening, the choice was made, and a new whisky was born from shared taste and a good dose of stubbornness.

    Sall Whisky Friend Blend #1 is a Danish Single Malt Whisky composed of five different sherry and bourbon casks and bottled at 61.2%.

    The bottle is the result of a shared blending session at Sall Whisky Distillery, where twenty Sall Whisky Friends came together to taste their way to the best combination. Since every drop comes from the distillery's own spirit, this is technically closer to a vatting than a blend - but Friend Blend simply has a ring to it nobody wanted to trade away.

    The foundation is five samples, each with its own character: 30 litres Ex-Bourbon, 4 litres Ex-Amontillado, 10 litres Ex-Palo Cortado, 30 litres Ex-Oloroso and 20 litres Ex-PX. The five whiskies were combined and filled onto a 2nd Fill Ex-Bourbon Quarter Cask, where they married for roughly a year before bottling in a limited run of 146 numbered bottles.

    The release is dedicated to the Sall Whisky Friends, and every bottle carries its own number - a small reminder that this whisky was made together, not behind closed doors.

    Did You Know?

    Sall Whisky Distillery was founded by seven young men from the local area, who in 2016 rallied over 600 backers through a crowdfunding campaign to get the distillery built. The first spirit was distilled in 2017 on a small 100-litre copper pot still, using barley grown organically on a local farmer's own fields - the same soil that still supplies the distillery's grain today.

    On Denmark's windswept west coast, where the North Sea weather rolls straight in, there's a distillery that once had the idea of resting its rye whisky in casks that used to hold maple syrup from Vermont. Back then it was pure curiosity. Today it's one of the most talked-about Danish whiskies ever made.

    Stauning R.Y.E. Maple Syrup Cask Studio Series is a Danish Rye Whisky matured in new American oak casks and finished in Maple Syrup casks from Vermont, bottled at 53.5%.

    The story starts with a single cask, No. 517, which Stauning experimented with a few years back. It turned out to be one of the most awarded Danish whiskies ever, winning the World's Best Single Cask Single Rye category at the World Whiskies Awards 2023. That exact cask sold out fast, and demand for another shot at the same combination never really stopped. With the Studio Series release, Stauning gets as close to the original as it can, even if it isn't the same bottle.

    The grain is Danish rye and barley from local farms, floor-malted and kiln-dried at the distillery, using the same approach the distillery's nine founders started out with. The whisky is double distilled in Stauning's 24 small pot stills, heated by direct fire, an old-fashioned, labour-heavy method most other distilleries don't bother with anymore. From there, the spirit first rests in new, heavily charred American oak casks before moving into casks that once held maple syrup from Vermont. Those last casks are what really leave their mark: a rich sweetness, warm spices like vanilla and cinnamon, and a touch of liquorice and charred wood layered over the rye's natural spiciness. The release is limited to 2,500 bottles from 10 casks.

    Tasting Notes

    Nose

    Warm spice meets dried fruit right away, cinnamon and vanilla from the maple syrup casks, with ripe raisin and a hint of fresh rye bread somewhere behind it.

    Palate

    Caramelised apple and ripe plum arrive first, followed by toasted oak. The sweetness is velvety and kept in check throughout by the rye's spicy, almost peppery edge.

    Finish

    Long and gently warming, with a fruity finish and a mouthfeel that feels softer than you'd expect at 53.5%.

    At the foot of Ben Rinnes, December settles heavy and dark over Speyside, and it's in that stretch of the year that Glenfarclas fills its last casks of the season. This bottle comes from exactly that kind of batch – set aside for nearly a decade while the Grant family waited for the right moment to send it out as this year's Christmas release, this time made exclusively for the Danish market.

    Glenfarclas Jule Malt 2026 is a Speyside Single Malt Scotch Whisky, built from Sherry casks spanning first to fourth fill and bottled at 49.7%.

    This is the second release in Glenfarclas' ongoing Jule Malt series, and the whisky inside was distilled in December 2015 – among the last batches the distillery managed to run before Christmas that year. Only 900 bottles have been produced, and the entire batch has gone to the Danish market. Glenfarclas has drawn on casks from four separate generations of Sherry fill for this blend: the first-fill casks bring power and dark fruit, while the older, repeatedly refilled casks let more of the malt's own character come through. The result is a Sherry-matured whisky with more layers than a single cask type usually gives.

    Glenfarclas has stayed in the hands of the Grant family since 1865, and the distillery is today one of the last in Scotland still owned and run by the same family across six generations. The whisky is still distilled using direct-fired pot stills, the largest of their kind in Speyside, and the finished whisky is never coloured or chill-filtered.

    Tasting Notes

    Nose

    Raisins and candied orange peel arrive first, followed by dark marzipan, a touch of nutmeg and a hint of polished oak.

    Palate

    Dates and walnuts meet a warm, spiced sweetness of ginger and cinnamon, while the Sherry holds it all together without turning sticky.

    Finish

    Long and dry, with a light oak grip and a lingering Sherry sweetness that stays with you well after the last sip.

    Because the barley used is home-grown and more lightly peated than the bought-in malt Kilchoman otherwise uses, the series carries a more delicate, floral character, where the smoke acts as a gentle layer rather than a dominant force.

    A green label, a little gold foil and not one word too many. Behind the quiet packaging sit seven summers in fresh charred oak and a bottling that never met a drop of water. Old Ezra comes out of Lawrenceburg, Indiana — a river town once known as Whiskey City, because nobody else in America handled rye quite like this.

    The Expert's Description

    Old Ezra 7 years Full Proof is an American Straight Rye Whiskey matured for seven years in new charred American oak casks and bottled at 57%.

    It arrived in November 2022 as the rye counterpart to Old Ezra 7 years Kentucky Straight Bourbon Whiskey, which had just been named Best Overall Bourbon at the San Francisco World Spirits Competition that same year. Old Ezra is the heavyweight branch of the Ezra Brooks family, and this was the first rye ever released under the name.

    The whiskey is distilled and matured in Indiana at Ross & Squibb Distillery — the plant formerly known as MGP — and bottled by Lux Row Distillers in Bardstown, Kentucky. It says so in small print at the bottom of the label, and it is worth reading. Lawrenceburg has been distilling rye since 1847 and still supplies rye spirit to a sizeable slice of the American whiskey trade.

    Two mashbills are married together here. One is built on 95% rye and 5% malted barley, and it carries the sharp, peppery rye edge. The other runs 51% rye, 45% corn and 4% malted barley, laying sweetness and body underneath. Between them they explain why the whiskey tastes unmistakably of rye while still coming across rounder than most people expect at this strength.

    The casks are new and charred, exactly as the law demands of a Straight Rye Whiskey. Seven Indiana summers pull vanilla, caramel and dry oak spice out of that burnt layer, and because the whiskey goes into the bottle at cask strength, none of it gets diluted away again. Before bottling the spirit is charcoal filtered, the same treatment the whole Ezra Brooks range receives, which takes the roughest corner off without flattening the whiskey. Gold at both ASCOT and SIP in 2024.

    Tasting Notes

    Nose

    Dry oak and earthy rye spice lead. Then it loosens up: caramel, vanilla, a hint of dark cherry. Give it a quarter of an hour in the glass and tobacco and old leather come forward.

    Palate

    Spiced honey and toffee arrive first, soft and thick. Then the rye asserts itself properly with black pepper, cinnamon and a sharp streak of orange peel. The 57% is clearly there, but it warms rather than burns.

    Finish

    Long and dry. Oak, pipe tobacco and a peppery heat that sits around well after the glass is empty.

    Out at the end of the Kintyre peninsula, where the wind tastes of salt and Campbeltown Loch slaps against the quay, Glen Scotia makes whisky the way it always has. Every year when the town festival comes round, the distillery lets a special bottle out into the world.

    Glen Scotia Campbeltown Festival 2026 is a Campbeltown Single Malt Scotch Whisky matured in 1st fill ex-bourbon casks with a six-month finishing period in 1st fill Ruby Port casks, bottled at cask strength 53.9%.

    The whisky is seven years old and built on the distillery medium-peated spirit, which master blender Ashley Smith only distils a few weeks a year. The first seven years were spent in 1st fill ex-bourbon casks, where the coastal style was allowed to unfold, and then came the six months in Ruby Port. That finish is what draws thick, preserved red fruit in and lays it as a sweet contrast over the smoke. The whisky is non-chill filtered and carries natural colour.

    Ruby Port is a deliberate counterpoint to tawny. Where tawny is oxidative and nutty, ruby is young, fresh and berry-sweet, and it is exactly that fresh sweetness that can hold its ground against peat smoke. On a seven year old spirit eighteen months of port would have been too much — six months hits the point where the two sides can still be told apart.

    Tasting notes

    Nose

    Sweet peat and sea salt, quickly giving way to ripe red cherry and soft vanilla fudge. A touch of cream and red berries settles on top, like raspberries stirred into cream.

    Palate

    Juicy mandarin meets thick jam of blackcurrant and red berries. Underneath it all lie layers of smoky embers, earthy and warm, and a light coastal saltiness that keeps the sweetness in check.

    Finish

    Long and warming with cinnamon and clove, a soft salted note and peat smoke that hangs on well after the last sip.

    The cask arrived leaking. Ten kilos of whisky had gone somewhere along the way, and most people would have written it off. Little Brown Dog poured what was left into a smaller cask instead, and later gave it a spell in a cognac barrique over thirty years old. Sometimes the best thing comes out of something that went wrong.

    The Expert's Description

    Ardlair 2014 Little Brown Dog 12 Years Old is a Highland Single Malt Scotch Whisky matured in a refill bourbon barrel and finished in a cognac barrique over thirty years old, bottled at 52.6%. It was distilled on 22 February 2014 and bottled on 23 February 2026, twelve years and a day.

    The cask history is anything but straightforward. It arrived partly leaking and had already lost around ten kilos in transit, so the whisky was decanted into a smaller refill bourbon barrel. In December 2024 it was then given an extra finish in the cognac cask to lift the fruitiness without drowning the spirit.

    The cognac cask was used with a light hand. The oily, lightly spiced Highland style still stands at the centre, while the vinous sweetness supports and refines it. Ardlair is the Ardmore distillery’s unpeated whisky, and at Little Brown Dog it goes by the in-house nickname Ardless.

    Tasting Notes

    Nose

    The colour is a warm waxy gold. On the nose muscovado sugar, glazed carrots and a yoghurt with hedgerow berries, a fruit profile at once rustic and creamy. A lightly spiced oak note sits beneath it.

    Palate

    Oily and full. Dark syrupy sweetness opens, then a lightly spiced warmth and a vinous fruitiness from the cognac barrique. The whisky opens up markedly with a drop of water, where both fruit and spice step forward more plainly.

    Finish

    Medium to long. Spiced oak, dark fruit and a dry waxy close that holds on.

    Glen Scotia 15 Year Old Old Version is a Campbeltown Single Malt Scotch Whisky matured in American oak casks and bottled at 46%.

    This is the bottling in the old design with a black label and gold lettering that Glen Scotia used until the summer of 2022. The whisky has spent fifteen years in 1st fill and refill American oak casks and is non-chill filtered. There is no sherry or wine cask in play, so it is the salty, oily character of the distillery that carries the bottle.

    Glen Scotia has not had an easy history. The distillery was founded in 1832, and through the twentieth century it stood silent for several periods while the whisky industry in Campbeltown shrank from around thirty distilleries to three. That distilling continues in the town at all is down to equal parts stubbornness and luck.

    Tasting notes

    Nose

    Salted caramel and toasted vanilla, with ripe fruit and a layer of light spices. The citrus note only arrives after a couple of minutes, and beneath it all sits a sea-like tone.

    Palate

    Full and spiced. Oak, dried fruit and honey, with a taut minerality in the middle. The smoke is held back and shows itself as a dry shadow rather than as peat.

    Finish

    Long. Pepper and dark chocolate first, then a slow, salted close that lingers.

The name comes from the Great Orme, a limestone headland at Llandudno whose name derives from the Old Norse word for 'great serpent,' a nod to the Viking sailors who once feared its steep cliffs.

    The first release is limited to around 6,000 bottles, some of which sold directly online at launch in 2025. Where Penderyn's Gold range draws its smoke entirely from the casks, Serpents Tears is different: here the smoke comes from the peated malt itself, making it something new within Penderyn's otherwise light, cask-driven range.

    The nose offers dried leaves, ripe orchard fruit and a note of smoke, backed by toasted bread.

    Palate

    The palate combines sweet peat with creamy vanilla and baked apple, spiced with pepper and a touch of clove.

    Miltonduff 2007/2020 Imperial Milk Stout Finish is a Speyside Single Malt Scotch Whisky from The Coopers Choice, matured in a bourbon cask and finished in an Imperial Milk Stout cask at 51.1%.

    The beer cask came from Spey Valley Brewery and had previously held an Imperial Milk Stout, itself matured in a used Bruichladdich cask, giving this Miltonduff an extra layer of dark malt and chocolate on top of the distillery's usually light style. Only 304 bottles were filled from cask #9087.

    The aroma opens with coconut and ripe pear, while vanilla lingers in the background.

    The palate delivers creamy vanilla and light caramel, with a hint of honeycomb.

The 12 year old is the flagship and has for decades been the bottle you hand a beginner without the enthusiast raising an eyebrow.

Widow Jane was created by aerospace engineer Daniel Preston in Red Hook, Brooklyn, where the distillery is now housed in a former chocolate factory. The whiskey's name and signature water come from the Widow Jane Mine in Rosendale, New York, a historic limestone mine whose cement was used to build both the Brooklyn Bridge and the base of the Statue of Liberty. The mine was named after Jane, wife of the tough mine owner A.J. Snyder, who was beloved by the local community for her kindness. Rosendale limestone contains a higher mineral content than that typically found in Kentucky, and the distillery uses this naturally filtered spring water to proof down each batch.

    The bottle arrived in 2024 as part of the house core collection and is built around the influence of sherry and red wine casks. Compass Box was founded in 2000 by the American John Glaser, formerly marketing director at Johnnie Walker, and the house has since made its name by treating blending as a craft on a level with distilling. Bottling without chill filtration and without colouring is standard at Compass Box — they want the cask to speak unedited.

    Nose

    Dark berries and raisin first, then orange peel, cinnamon and a warm note of toasted oak. A lightly tart fruit note from the red wine casks sits behind.

    Palate

    Rich and layered. Cherry, fig, dark chocolate and spice, with a malt sweetness holding it all together. The 46% gives structure without tightening things up.

    Finish

    Long and warm, with dried fruit, cocoa and a dry, lightly tannic close.

    The distillery in Fort William produces both peated and unpeated spirit, and the peated part is only made in limited periods. This bottling is the standing expression of that style, combining the smoke with the weight and sweetness of the Ben Nevis spirit.

    The smoke is clear but not dominant. It sits as a layer beneath the caramel and the spice rather than taking over the glass, which makes the bottling a different experience from the heavily peated whiskies of Islay.
