    The whiskey is assembled from double distilled malt and grain whiskey from Ahascragh Distillery. After a long primary maturation in Bourbon casks, it gets a finishing period in Oloroso Sherry casks, adding depth, sweetness and spice beyond what is typically found in the younger expressions of the series.

    The whiskey is bottled non-chill filtered and with natural colour.

    Most whiskies use two cask types and call it a day. Here there are three, and two of them are bourbon casks of different sizes. That sounds like a detail. It is not, because the volume of a cask decides how fast the wood works.

    The Expert's Description

    Aberlour Triple Cask Matured is a Single Speyside Malt Scotch Whisky matured in bourbon barrels, bourbon hogsheads and Oloroso sherry casks, bottled at 40%. The three cask types were not chosen for the sake of symmetry but because each one contributes something different.

    A bourbon barrel holds around 200 litres, a hogshead around 250. The smaller cask has more wood contact per litre and therefore works faster and more directly, giving more vanilla and coconut. The hogshead moves more slowly and yields a rounder, maltier character. The Oloroso casks then stack raisins, orange and spice on top of the other two.

    There is no age statement. Aberlour assembles the whisky by flavour profile rather than by date, and three cask types give exactly that freedom. The distillery sits at the foot of Ben Rinnes in the village of Aberlour.

    Tasting Notes

    Nose

    Vanilla and light caramel first, clearly bourbon-driven. Then honey, ripe pear and a gentle coconut note. The sherry sits discreetly behind as orange marmalade and a streak of cinnamon.

    Palate

    Round and lightly creamy. Custard and malt open, then baked apples and a mild spiced warmth from the Oloroso casks. There is more vanilla and less raisin here than in the distillery’s sherry-heavy expressions. Soft the whole way through.

    Finish

    Medium length. Vanilla, malt and a light oak dryness. The sweetness fades calmly with no bitterness.

    Murray McDavid is a Scottish bottler with a long history and a clear philosophy: find interesting casks, experiment with unexpected combinations and bottle with respect for the distillate's character. The Benchmark Series is the line of larger batches – this batch yielded 1,803 bottles.

    Justino Madeira's casks – from the Portuguese Atlantic island – are known for their sweet, nutty and lightly oxidised profile. Caol Ila's young smoke meets it and produces an expression both fresh and surprisingly complex for its age.

    Young, fresh Caol Ila smoke meets sweet, nutty Madeira notes. Dried fruit, a warm spice note and a hint of salt.

    Bunnahabhain 2013/2023 Signatory Vintage 9 Years Old is an Islay Single Malt Scotch Whisky matured in a 1st fill Pinot Noir red wine butt and bottled at 46%.

    Signatory Vintage has bought casks from distilleries across Scotland since 1988 and bottled them under its own name, without dressing the spirit up as something it isn't. This Bunnahabhain from 2013 was drawn from two casks, #13 and #15, and spent nine years pulling colour and spice from the red wine wood before being bottled in March 2023.

    The base spirit is the distillery's rarer peated make, known as Staoisha, which gives the whisky an extra layer of smoke beneath the wine cask's fruity sweetness – a combination you don't see from Islay every day.

    Red berries and a tart wine sweetness meet a faint peaty smoke in the background, tied together by a hint of fresh bread.

    The cask was filled in September 2010 and emptied in 2023, yielding 234 bottles. The whisky is neither chill filtered nor coloured, and the 46 % was chosen so the sherry character stands clear without alcohol dominance.

    Signatory buy casks from distilleries across Scotland and bottle under their own name. A first fill Oloroso butt is among the most expensive and most sought after casks in the trade, and it is rarely spent on a 12 year old — here it was.

    Nose

    Dried figs, walnut and orange peel. There is a dry, almost dusty sherry character typical of Oloroso rather than the sweeter sherry styles.

    Palate

    Full bodied with raisin, dark rye bread and bitter orange. Nuts step forward in the middle, and a spiced draught of clove runs through it.

    Finish

    Long and dry with walnut shell, dark chocolate and a pleasant bitterness.

    Lindores Friar John Cor Chapter II Lowland Single Malt Scotch Whisky is part of the distillery's series named after the monk behind whisky's earliest written record, bottled at cask strength, 60.9%. Lindores Abbey is regarded as the spiritual birthplace of whisky. Scotland's Exchequer Rolls of 1494 record that the monk Friar John Cor was issued eight bolls of malt by order of the King to make 'aqua vitae' — the earliest known written reference to Scotch whisky distillation, equivalent to around 400 bottles by today's standards. Lindores Abbey monastery was founded in 1191 on the banks of the River Tay, and in 2018 archaeologists found remains of a distillation vessel in the ruins. The modern distillery opened in 2017 right next to the historic abbey ruins.

    The manzanilla casks are the unusual element. Manzanilla is a dry sherry from the coast at Sanlúcar, and the casks give a chalky, lightly salted dryness rather than the dark sweetness known from oloroso.

    Bourbon casks make up most of the recipe, which pushes the whisky in a bright and fruity direction. Sandend is the unpeated one of the three permanent 2023 expressions and the easiest to approach.

    The bottling belongs to the distillery's Virgin Oak Series, where Billy Walker and his team set out to explore timber that had never previously held wine or spirit. Spanish oak grows with a tighter grain than American white oak, which means the cask has a higher concentration of tannins and aromatic compounds to give up to the whisky. The effect shows up as a darker, more spice-driven sweetness compared with classic bourbon or sherry casks.

    Although Spanish oak is traditionally tied to sherry production, meeting the wood in its virgin, unused state is unusual - most Spanish casks arrive in Scotland only after years of seasoning with wine. Here, the timber gets to speak for itself from the very first drop.

Cask 900032 was distilled on 27 January 2011 and bottled on 11 January 2023 in Signatory's Cask Strength Collection, giving 597 bottles.

    Ardmore is one of the few Highland distilleries with peat smoke as a core style, and Ardlair is the name given to the unpeated production. Without the smoke the spirit’s own fruitiness and malt sweetness step forward more clearly, which makes the whisky far more receptive to a sherry cask.

    That the cask is refill rather than first fill matters here. A refill Oloroso Butt gives up less colour and less tannin, so the sherry settles as a layer on top instead of taking over. The whisky is bottled without filtration and without added colour.

    Nose

    Raisins and figs first, with roasted nuts and honey behind. There is dried ginger and spice in it, and beneath the sherry sits a bright apple fruitiness that tells you the spirit is unpeated.

    Palate

    Dark chocolate and walnut open, followed by sweet sherry and spiced oak. The vanilla arrives late. At 62.5% the concentration is considerable, and the whisky takes water well, turning rounder rather than thinner.

    The Wiseman American Kentucky Straight Bourbon Whiskey is an American bourbon from Kentucky Owl, bottled at 45.4%. The Kentucky Owl brand was founded by Charles Mortimer Dedman in 1879 and was among the many Bardstown distilleries shuttered for good by Prohibition. The brand lay dormant until a descendant revived it in 2014, in the middle of the modern bourbon boom, quickly gaining a reputation for one-off, exclusive releases. Kentucky Owl was acquired by Stoli in 2017 and is today one of Bardstown Bourbon Company's contract production customers.     The cask comes from the American Koval distillery, known for its oat-based whiskey – an unusual choice for a Scotch grain whisky, giving this release a softer, creamier character with a touch of oatmeal and honey.

    The whisky is matured in a Barolo wine cask, giving an unusual wine-like character to the young Speyside malt. The source distillery is not officially disclosed under the 'Mystery Malt' name. A relatively large run of 1,673 bottles was produced.

    BenRiach The Smoky Twelve 12 years is a Single Speyside Malt Whisky matured in bourbon casks, sherry casks and Marsala casks and bottled at 46 %.

    The whisky is built on the peated spirit of the distillery and matured, somewhat unconventionally, in three cask types. Bourbon gives vanilla, sherry gives dark fruit, and the Marsala wood adds a nutty sweetness different from both sherry and port.

    The combination has given the whisky an almost creamy, soft structure with layers of ripe fruit, aromatic smoky sweetness and warming oak spice. The two extra years over the Smoky Ten read as more depth rather than as more smoke.

    Powerful smoky notes with vanilla, toasted orange peel and roasted almond.

    Palate

    Dark chocolate, fruit, brown sugar, smoke and cocoa. The structure stays creamy and soft despite the smoke.

    East London Rye 2022 is an English Rye Whisky made from 55% malted rye and 45% malted barley, bottled at 47%.

This is the 2022 release of East London Liquor Company's Rye series, with the distillery – founded in 2014 at Bow Wharf – continuing its experimental approach to English whisky production.
