    Bimber Apogee XII is a 12 Year Old Pure Malt Whisky, composed of selected single malts from the Highlands and Speyside and finished in ex-bourbon casks that had previously matured Bimber's own spirit, bottled at 46.3% ABV.

    Bimber Distillery sits in the heart of London and was founded in 2015 by whisky enthusiasts with Polish roots – the name "bimber" is Polish slang for homemade moonshine, a nod to the founders' own journey from home experiments to an acclaimed distillery. With the Apogee series, they step outside their own distillate and show a deep understanding of vatting and cask management in the more classic Scottish tradition.

    The name Apogee means "highest point," a tribute to the oldest and most developed malts used in the blend. It's a whisky that bridges two whisky cultures: Scottish heritage and Bimber's own London craft.

    Nose

    Nutmeg and honeycomb meet brown sugar and soft oak, while cooked orchard fruit and a touch of orange blossom honey give the nose a warm, baked character.

    Murray McDavid's Benchmark Series is an experimental line that systematically explores cask combinations in larger batches. The PX finish here lasts seven months – short enough to preserve Caol Ila's character, long enough for the Spanish dessert wine to leave its mark.

    1,242 bottles were produced. Ximenez-Spinola is one of the most acclaimed PX houses in Jerez, and it is from them that Murray McDavid sourced these casks.

    Dried fruit – raisins and dark plums – blends with Caol Ila's maritime smoke. A note of mocha and orange peel gives depth.

    Murray McDavid's Benchmark Series systematically experiments with unusual cask combinations in larger batches. This batch produced 1,694 bottles. The 14-month finish in Cognac casks contributes a sweet, lightly winey complexity lifting it above a simple bourbon profile.

    Caol Ila at six years is fresh and direct – the smoke is clear, the distillate body is present, and the Cognac finish adds a sweeter frame without erasing the distillate's maritime character.

    Sweet and smoky at once. Sweet peat, ginger and apple – the Cognac cask adds a lightly fruity glow behind Caol Ila's typical maritime smoke.

    BenRiach makes peated whisky a few weeks a year, and some of that peated malt runs heavier than the rest. Smoke Season is built from the most heavily peated malt the house holds, bottled at a strength that does not let the smoke slip away.

    BenRiach Smoke Season Double Cask is a Single Speyside Malt Whisky without an age statement, matured in bourbon casks and virgin oak and bottled at 52.8 %.

    The bottling was assembled by Master Blender Rachel Barrie and uses the most heavily peated malt at the distillery. Speyside is not known for smoke, and BenRiach is one of the few distilleries in the region producing peated spirit as a fixed part of the year.

    The two cask types pull in different directions. The bourbon wood gives vanilla and bright sweetness, while virgin oak, meaning fresh oak that has never held anything before, lays spice and a dry wood structure on top. Together they hold the smoke in place without muting it.

    Powerful peat smoke with burnt sugar, vanilla and a note of toasted wood.

    Widow Jane 10 Year American Straight Bourbon Whiskey has matured for 10 years and is proofed with water from the historic Widow Jane Mine, bottled at 45.5%. Widow Jane was created by aerospace engineer Daniel Preston in Red Hook, Brooklyn, where the distillery is now housed in a former chocolate factory. The whiskey's name and signature water come from the Widow Jane Mine in Rosendale, New York, a historic limestone mine whose cement was used to build both the Brooklyn Bridge and the base of the Statue of Liberty. The mine was named after Jane, wife of the tough mine owner A.J. Snyder, who was beloved by the local community for her kindness. Rosendale limestone contains a higher mineral content than that typically found in Kentucky, and the distillery uses this naturally filtered spring water to proof down each batch.

    Myken Hungarian Dance 2020 is a Norwegian Single Malt Whisky, bottled at 47%, distilled at Myken, the world's first Arctic whisky distillery and Norway's only dedicated whisky distillery. The distillery was founded by Roar Larsen and his wife Trude Tokle, who in 2014 were sailing the Norwegian coast with their four children when bad weather pushed them onto the almost deserted island of Myken, barely 400 metres wide. At the time, only a handful of pensioners remained on the island. The family fell in love with the place and established a distillery that has since revived the island community. The whisky is distilled using desalinated seawater and matured in the distillery's warehouse, known as 'The Whisky Cathedral', where the Arctic climate's dramatic temperature swings drive a distinctive maturation.

    Benrinnes sits at the foot of the mountain of the same name near Aberlour and is owned by Diageo. The distillery has for decades sent almost all of its production into blends, and official bottlings are rare. That is why independent houses like this one are the most practical route to tasting the place.

    That Boutique-Y numbers its releases in batches rather than stating cask numbers, and each batch is made only once. This one gave 241 bottles, and the 50 centilitre format is the house standard.

    Equipo Navazos Single Cask La Bota de Malt Whisky Bota 88 Overseas is a single-cask malt whisky around 12 years old, with a cask history involving maturation overseas, bottled at 46%. Equipo Navazos started in 2005 as a group of Spanish sherry enthusiasts led by Jesús Barquín and Eduardo Ojeda, who found 65 casks of exceptionally fine, over 20-year-old Amontillado hidden away in a bodega in Sanlúcar. Together with a circle of friends, they bought one cask and released it under the name La Bota de Amontillado — the first in what is now the celebrated, chronologically numbered La Bota series. Since then, Equipo Navazos has expanded its repertoire to include white wine, brandy, rum and whisky, always with the same philosophy: finding and bottling exceptional, often overlooked casks.

    Floki Young Malt Eimverk Distillery Whisky was the distillery's first commercial release, made from 100% Icelandic barley, bottled at 47%. Flóki is produced by family-run Eimverk Distillery, Iceland's only whisky distillery, founded in 2009. It took the family four years and 163 trial distillations to perfect the recipe before the first batches of Icelandic whisky were ready for market in 2015. The whisky is named after Hrafna-Flóki, a brave Viking chieftain who, according to the sagas, carried three ravens with him and let them lead him to the island he named Iceland, where he became its first known settler. Flóki is made from 100% local Icelandic barley, a hardy strain that thrives during Iceland's short, intense summer.

    The whisky brings together malts where Californian red wine casks deliver dark fruit and the reddish tone, while bourbon casks build vanilla and pale sweetness underneath. The cask combination has been a running signature for the distillery since the restart.

    Samsara is one of the named releases without an age statement, where cask history rather than maturation time is the pivot. That lets Bladnoch work with younger and older components in the same bottle.

    The last chapter before the whisky. AD4 is the fourth and final Spirit release from Ardnamurchan, and the following year the distillery could finally write whisky on the label. Octaves are in play here too, the smallest casks in the house.

    Ardnamurchan 2019 AD4 Spirit is a Highland Single Malt Spirit matured in sherry casks in the form of hogsheads, butts and octaves and bottled at 57.4% by Adelphi. Approximately 5,100 bottles were made. It is legally a Spirit because it has not spent the three years in cask that Scottish law requires.

    Octaves are the addition compared with the year before. An octave holds around 50 litres, the smallest cask in common use, and with so little liquid per square centimetre of wood it works very fast. It is an efficient way to give young spirit more cask character than the years alone would allow.

    AD4 is the last in the run of Spirit releases that spanned 2016 to 2019. In September 2020 the distillery’s first proper Single Malt Whisky arrived. The spirit is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Dark fruit and syrup first, more concentrated than the preceding years. There are raisins, dates and a clear spiced sherry note, and beneath sit fresh malt and a light peat smoke.

    Palate

    Full and sweet, almost dessert-like in the middle. Dark fruit, spice and burnt sugar open, then the cereal character and the smoke come through. At 57.4% the concentration is marked, and the small casks make themselves felt in the texture.

    Finish

    Medium to long. Spice, dark fruit and a dry, lightly smoky close.

    Third year in the sequence, and now sherry casks only. Ardnamurchan put all of AD3 into hogsheads and butts from Spain, and the difference from the year before is obvious before you have tasted anything: the colour alone tells you what the wood has done.

    Ardnamurchan 2018 AD3 Spirit is a Highland Single Malt Spirit matured in sherry casks in the form of hogsheads and butts and bottled at 55.3% by Adelphi. Approximately 5,000 bottles were made. The designation Spirit is because it has not spent the three years in cask that Scottish law requires before the word whisky may be used.

    The two cask sizes do different things. A hogshead holds around 250 litres and works relatively fast, while a butt of around 500 litres moves more slowly and gives a more measured sherry character. Using both gives you speed and depth in the same release.

    Ardnamurchan makes both peated and unpeated malt, and both styles feature in the house’s releases. The spirit is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Raisins and dried fig first, clearly sherried for something this young. Beneath sit fresh malt and a light peat smoke, along with a nutty note the butts have laid in.

    Palate

    Sweeter and rounder than you would expect from anything under three years. Dark fruit and spice open, then the cereal character comes through along with a peated undercurrent. At 55.3% the concentration is good, and the sherry carries the youth well.

    Finish

    Medium length. Raisins, malt and a lightly smoky dryness that lets go cleanly.

    The Gauldrons Batch 1 is a Campbeltown Blended Malt Scotch Whisky composed of single malt from the region's distilleries and bottled at 46.2%.

    As the very first release in The Gauldrons range, Batch 1 set the tone for what has since become a staple in Douglas Laing's line-up: a maritime, honeyed blend bottled without added colour or chill filtration, in smaller batches to preserve variation and character from cask to cask.

    Nose

    Honey and sea air meet crisp apples and a hint of spiced oak.

    Palate

    Maritime and round, with a clear saline edge and an underlying sweetness that holds balance throughout.

    Finish

    Long and salty, with a lightly spiced close that builds on the nose's honey notes.

    Skördetid, harvest time in Swedish, draws its sweetness from an unusual source: Italian Amarone casks that have given this Mackmyra release a fullness of red grapes and raisins rarely found in Nordic whisky.

    Mackmyra Skördetid is a Swedish Single Malt Whisky partly matured in Italian Masi Costasera Amarone casks and bottled at 46.1%.

    The whisky is assembled from several cask types: primarily first-fill Masi Costasera Amarone casks, first-fill bourbon casks and first-fill Oloroso sherry casks, supplemented by smaller amounts of American oak previously filled with Pedro Ximénez sherry, as well as Mackmyra's own 30-litre Reserve casks. The result is a whisky with rich colour and clear fruitiness from the red wine casks.

    Nose

    Sweet, rich tones of red grapes and raisins, crossed with soft herbal spice.

    Palate

    Full-bodied and fruity with clear Amarone character, where sweetness and spice go hand in hand with Mackmyra's clean, malty base.
