Sall Whisky MULD 1.2 is a Danish Single Malt Whisky matured in ex-bourbon casks and bottled at 50.9% Vol. It is the second release in the MULD series — a distillate-driven expression where the character of the grain and malt takes precedence over cask influence.
Sall Whisky is a Single Farm Single Malt distillery near Ebeltoft in Central Jutland, built around a commitment to full traceability from field to bottle. MULD 1.2 is produced from Prospect and Evergreen spring barley grown on the Kvolbaek and Stadsaard fields, malted as Pale and Vienna for a balanced, fruity malt profile. Yeast strains Distillamax MW and Kveik Hornindal add further complexity. Three years in ex-bourbon casks have given light fruit notes and a gentle sweetness without overshadowing the clean, terroir-driven malt character. Bottled in 624 numbered bottles of 70cl — 100% organic and traceable to field and batch.
Tasting notes
Nose
Fresh and malt-forward. Green apple and pear open things up, with honey biscuit and a light nutty note in the background. Gentle floral quality — almost like freshly malted barley.
Palate
Sweet and direct. The malt character is front and centre, not overshadowed by the cask. Light honey, fresh citrus and a hint of ginger give a lively, clean profile.
Finish
Short to medium with a fresh fruity tone and gentle warmth. Like buttered toast — simple and satisfying.
