For some time I had been toying with the idea of what Ailsa Bay that was released in Denmark as the first country back in 2015 would bring to the culinary world. After I first smelled Ailsa, she told me that she needed acid and everything good for the sea. I caught a whiff of light smoke, seawater that had been left a little too long in the sunlight, crude oil and finally a hint of honey and fudge. In contrast, I was reminded of a opskrift from a vegan friend. The dish was a tart pasta dish, where I wanted to try to make it untraditional by adding shrimp and mussels. After the shopping trip was over and the food was prepared, the big moment came when Ailsa was allowed to show herself as a worthy date. Now you're probably wondering if she swept me off my feet? The answer is clear: Yes! In combination with the acidity of the food, Ailsa complimented the pasta dish with her sweetness, which soon began to bite like any other exciting woman, where notes of light smoke went well with the fresh prawns and mussels, which were soon followed by spices such as white pepper. After the smoke slowly lost its grip, the flavor was replaced by anise, wet grass or for that matter wrap and hazelnuts. Ailsa thanked us for a good dinner with a greeting that in taste can be related to mild pearl tobacco and peat. I would recommend this whisky to those who dare to experiment with food as a dynamic composition that can raise Ailsa Bay to new heights.
