Shirayuki, "white snow", is one of Japan's oldest sake names, brewed by the same family since the mid-1500s in the town of Itami near Osaka. For newcomers, it's a clean, classic sake without unnecessary flourishes; for connoisseurs, one of the few still-active breweries from sake's earliest era, when Itami was once Japan's undisputed center before Nada near Kobe took over that role.

History & Background

The sake is brewed by the Konishi family, whose history in Itami dates back to the 1550s, making Shirayuki one of the oldest still-active sake breweries in Japan. Itami was historically one of the most important centres for sake brewing, before the Nada district near Kobe took over that role. The name Shirayuki, meaning "white snow", refers to the pure, clear colour of the polished rice the sake is brewed from.

Production & Style

The sake is brewed from polished rice, koji mould and pure spring water by traditional Japanese method, with fermentation taking place at low temperatures over several weeks.
