Diamond Armagnac has been aged for 11 years and has been given a rather unusual finish in a cask that previously contained Armagnac, which has also contributed to the beautiful amber color of the rum.     This very limited edition from Compagnie des Indes (CDI) is called Kaiman. The name refers to the alligator-like reptile that, like the rum, also has a strong bite. Only 500 bottles were made worldwide of this very special rum. It is a blend of traditional rum from Guadeloupe, distilled way back in 1973. 10 years ago, the rum was moved to a much larger cask of 1000 liters. It is then blended together with 2 casks where the rum was distilled in 1993. The two casks consist of rum from Guyana and the three well-known stills; Savalle, Enmore and Uitvlugt, and Jamaica from Wedderburn. The blended consists of 72.2% Guadeloupe from 1973 and 27.8% of Guyana/Jamaica. Try Compagnie des Indes Kaiman if you want to taste a very special rum with a good bite.
