Valinch & Mallet Whisky

Valinch & Mallet is the independent bottler that insists whisky is about flavour, not labels. Two friends with a shared passion for whisky and rum chose the cask over the office, and the result is a portfolio of single casks that surprises as often as it delights.

    A valinch is the copper tube you push into a cask to draw a sample. Two Italians named their company after that very tool, and after the mallet that knocks the bung loose. It says rather precisely what they do.

    Ardmore 12 Years Old Valinch & Mallet 2009/2021 is a Highland Single Malt Scotch Whisky matured in a Sherry Hogshead and bottled at 52.2%. Cask 706023 was distilled in 2009 and bottled in 2021, giving 338 bottles.

    Ardmore makes peated whisky as its core style, which is unusual for a Highland distillery. The smoke sits at around 12 to 14 ppm, moderate compared with Islay but clear enough to give the whisky a dry earthy floor. Combined with a sherry cask it produces a profile where dark fruit and smoke pull in opposite directions.

    A hogshead holds around 250 litres, so between a bourbon barrel and a sherry butt. It gives more wood contact per litre than a butt, which is why twelve years in a hogshead can travel further than twelve years in a larger cask. Valinch & Mallet was founded in 2015 by two Italian friends.

    Tasting Notes

    Nose

    Raisins and dark orange first, with peat smoke as a dry undercarriage. Behind them come toasted malt, walnut and a hint of leather. The smoke is not maritime, it reads more like smouldering wood than sea air.

    Palate

    Full and in two halves. The sherry’s dried fruit and chocolate open, then the smoke enters from the side along with black pepper and a dry oak tannin. At 52.2% the concentration is good, and the two elements keep each other in check the whole way.

    Finish

    Long. Smoke, dark fruit and spiced oak leave together, with a dry ash note right at the end.

    Cask no. 304405 was filled in 2008 and emptied in 2022 as a single cask in The Young Masters Edition. The cask yielded 323 bottles, and the whisky is neither chill filtered nor coloured.

    Valinch & Mallet was founded in Italy and quickly worked its way into the group of bottlers people pay attention to — the house was named Scotland's best independent bottler in 2022. Their selection favours casks with clear distillery character over casks that are merely dark.

    Nose

    Wax, light honey and peeled apple. A cool mineral streak runs beneath the fruit, with a touch of coconut from the bourbon wood.

    Palate

    Powerful and oily with barley, vanilla and lemon meringue. The 52.1 % pushes, but the weight of the spirit carries the alcohol, and the texture stays rich throughout.

    Long and warm with pepper, toasted barley and a dry oak edge.

    Two Italians with too much love for Scotch bought a cask from a distillery that no longer exists. Twenty years later it went into bottle. That is how Caperdonich survives.

    Caperdonich 20 years 2000/2020 Valinch & Mallet is a Speyside Single Malt Scotch Whisky matured in an ex-bourbon hogshead and bottled at cask strength of 54.1%.

    The cask is numbered VMT29511 and was filled in 2000, just two years before Caperdonich closed. Valinch & Mallet is an Italian bottling house founded by Davide Romano and Fabio Ermoli, working exclusively with single casks bottled at full strength. The outturn was 315 bottles. Caperdonich mainly made malt for blends and the site was demolished in 2011, so every cask that surfaces is one of the last.

    Tasting notes

    Nose

    Bright and sharply fruity. Green apple, pear and peach, with cereal and a dry vanilla pod behind. After a while in the glass, wax and a hint of mint appear.

    Palate

    Sweetness comes first — honey and baked fruit — and is quickly followed by malt, white pepper and dry oak. The mouthfeel is dense and lightly oily, and the strength carries the flavour a long way without burning.

    Finish

    Medium long and dry, with cereal, oak and a fresh lemon note closing it off.

    The label says The Waxy Highland Distillery and nothing else. That is the kind of silence that says the most, because only one Highland distillery is ever called waxy.

    Clynelish 1996/2020 The Waxy 24 years is a Highland Single Malt Scotch Whisky matured in an ex-bourbon hogshead and bottled at 48.5%.

    The cask is numbered MZ01-4 and gave 353 bottles after 24 years. The release was Valinch & Mallet's hundredth, and the house marked it by leaving the distillery unnamed under the byword The Waxy — an obvious nod to the texture Clynelish is famous for. A bourbon cask over that many years lets the spirit stand forward without much cask sweetness, which is exactly the point of this kind of bottling.

    Tasting notes

    Nose

    Beeswax and lemon oil first, then ripe pear, honey and a cool mineral note. A distant sea air sits under it all.

    Palate

    Dense and oily. Citrus, malt, honey and wax, with white pepper and a dry herbal edge. The 24 years have given depth without the wood taking room from the fruit.

    Finish

    Long and dry, with wax, mineral and a slowly fading spiced warmth.

About Valinch & Mallet

Valinch & Mallet isn't a distillery but an independent bottler that seeks out, selects, and bottles single casks from whisky and rum distilleries around the world. The name comes from two tools of the trade – the valinch used to draw samples from a cask, and the mallet used to open it – and it sums up the house philosophy neatly: it's about the craft at the cask, not the marketing. History & Background

The company was founded in London in 2013 by two friends who had both spent years tasting their way through single casks from Scotland to the Caribbean before deciding to turn the passion into a business. Rather than building a brand around one particular flavour profile, they chose to let each individual cask speak for itself, an approach that quickly earned them a reputation as a bottler for the truly curious. Since then the portfolio has grown to include both whisky and rum, and the house has become a regular fixture at the most respected independent bottling festivals.

Production & Style

Valinch & Mallet doesn't buy distillate in bulk but travels distillery by distillery to find casks with something special to offer. Each single cask is typically bottled without colouring and without chill-filtration, so the natural character of the cask and distillate is fully preserved. The 'Living Cask' series is the house's best-known project: an ongoing, solera-inspired blend where new casks are constantly added, so no bottle ever tastes quite the same as the last.
