Valinch & Mallet is one of the newer independent bottlers on the market, but this 11 year old Glenrothes from a single bourbon cask shows they know how to find good whisky.

A bourbon cask typically gives a lighter, more vanilla- and citrus-driven character than a sherry cask, because it previously held American bourbon rather than Spanish sherry.
