Habitation St. Etienne Rum

Two hurricanes flattened a sugar factory in 1994, and yet the name Habitation Saint-Etienne still lives on in Martinique. The neighbouring Simon distillery took over both the surviving aged stock and the distinctive "creole-style" still, and continues the legacy today under the same name. This is a rum story about rising from the ruins.

  • Habitation St. Etienne 1998 Single Cask Martinique Rhum Agricole bottle
    Item no.: 222555-7553

From one of Martinique's most historic estates comes this single cask release, distilled in 1998 and preserved for decades before reaching the bottle.

    Expert Description

Habitation St. Etienne 1998 Single Cask is a Martinique Rhum Agricole from a single cask, distilled in 1998 and bottled at 47.8%.

The rum is produced by Habitation Saint-Étienne, known as HSE, one of the foremost representatives of the AOC Martinique label for agricultural rum. The distillery owns a site in Gros-Morne, where the buildings and aqueduct are protected as a historic monument, while the actual distillation takes place in Simon, Le François. Rhum agricole differs from traditional molasses-based rum by being distilled directly from fresh sugarcane juice, giving it a more aromatic and precise style. This single cask release from 1998 is a rare example of older, unblended HSE rum.

The result is an aromatic, complex rum, where fresh sugarcane meets oak and spice in a long, elegant finish.

    Palate

    Expert Description

Habitation St. Etienne 2002 Sherry Finish is a Martinique Rhum Agricole, finished in sherry casks, distilled in 2002 and bottled at 45%.

This 2002 vintage has undergone an extra finishing period in sherry casks, adding a sweet, nutty dimension to the classic, aromatic rhum agricole style. The sherry casks complement the fresh, grassy base with a layer of dried fruit and spice that sets this release apart from HSE's purer single cask editions.

  • Habitation St. Etienne Martinique Black Sheriff American Barrel rum bottle
    Item no.: 22227865479-1106-197280423

HSE, one of Martinique's most respected rhum agricole houses, sends this release through American bourbon casks from Kentucky and Missouri for a warmer, more approachable profile.

    Expert Description

Habitation St. Etienne Martinique Black Sheriff American Barrel is a Martinique Rhum Agricole, a blend of rum between 3 and 4 years, distilled from fresh sugar cane juice and aged in American bourbon casks, bottled at 40%.

HSE, whose full name is Habitation Saint-Étienne, was revived in 1994 by Yves and José Hayot and took on its current identity as Rhum HSE in 2008. The Black Sheriff release uses exclusively casks from American bourbon producers in Kentucky and Missouri, giving the rum a warmer, more spiced sweetness than the fresher, more classic agricole style often associated with Martinique.

The result is a rich, aromatic rum where sweetness from the American oak meets classic agricole fruitiness.

    Tasting Notes

    Nose

Vanilla and honey beneath elegant woody notes, with caramel and a hint of black pepper and nutmeg.

    Palate

Round and sweet with raisin, apple tart and lychee, supported by spice and toasted oak.

  • Clear bottle of colourless rum with a bright, minimalist HSE label
    Item no.: 22227865379-9695

No cask ageing, no colour, no detours – just fresh sugarcane juice distilled and bottled almost immediately.

    Expert description

Habitation St. Etienne Martinique Rhum Agricole Blanc is an AOC Martinique Rhum Agricole, distilled from fresh sugarcane juice and bottled at 40% with no prior cask ageing.

Because Martinique's AOC rules allow rhum agricole to be sold immediately after distillation with no minimum ageing requirement, the Blanc expression retains the full fresh, green cane character that is otherwise gradually softened by years of cask influence in the house's other releases such as VSOP and XO. This makes it the purest, most direct introduction to what rhum agricole from Martinique actually tastes like.

    Tasting notes

    Nose

An explosion of fresh aromas with dominant notes of fresh sugarcane and a light floral touch, complemented by tropical fruit, mashed banana and hibiscus.

    Palate

Clean and powerful with vanilla, powdered sugar, grassy cane, lime rind, pepper, a hint of chili, pineapple and banana.

    Finish

Peppery and long, with a persistent finish that echoes the fresh cane character.

Unlike VSOP and XO from the same house, the Blanc expression needs no cask ageing at all, because Martinique's AOC rules allow white rhum agricole to be sold straight after distillation – one of the few rum categories in the world where this is permitted.

    Expert Description

Habitation St. Etienne Martinique Rhum Agricole Blanc is a Martinique Rhum Agricole, distilled from fresh sugar cane juice and bottled unaged at 50%.

This white rhum agricole from HSE, whose full name is Habitation Saint-Étienne, shows the distillate's pure character with no cask influence at all. Unlike the house's Black Sheriff, which ages in American bourbon casks, this release goes straight from the distillation column to the bottle, preserving the fresh, green intensity of the newly harvested cane. The intense, bold nose combines floral and fruity notes with a hint of white pepper, while the palate shows the cane's full ripeness.

The result is a clear, powerful rhum that shows Martinique's agricole tradition in its purest form.

    Tasting Notes

    Nose

Intense and bold with floral and fruity notes plus a hint of white pepper over fresh sugar cane.

    Palate

Clean and powerful with notes of fully ripe sugar cane, supported by a light peppery sharpness.

  • Dark bottle of amber-coloured rum with elegant black and gold HSE label
    Item no.: 22227865379-11

Some of the rums in this bottle are older than most of the people drinking it – a few of HSE's oldest stocks date all the way back to the 1960s.

    Expert description

Habitation St. Etienne Martinique Rhum Agricole Extra Vieux XO is an AOC Martinique Rhum Agricole, blended from rums matured for at least a decade in carefully selected Cognac casks and bottled at 43%.

The XO expression draws on some of the oldest stocks in HSE's cellars at Habitation Saint-Étienne, some of which date back to the 1960s. Because the rum has rested in Cognac casks rather than the more common American oak, it takes on a deep amber colour and a profile that leans on Cognac tradition's finesse rather than rum's typical sweetness.

    Tasting notes

    Nose

Complex yet not overwhelming, with light, fresh fruit notes, a grassy character and sweet mocha, complemented by pronounced notes of cocoa, mocha and pale tobacco with a hint of black pepper and nutmeg.

    Palate

An explosion of flavour, with dry, strong oak, tobacco and smoke, balanced by a pleasant, light floral sweetness.

    Finish

    Surprisingly long and warming.

On an old sugarcane plantation in Gros-Morne, this rum matures for years while the protected brick buildings around the casks are a reminder that distilling here goes back to the 1800s.

    Expert description

Habitation St. Etienne Martinique Très Vieux VSOP is an AOC Martinique Rhum Agricole, matured in American oak casks and bottled at 45%.

The rum is distilled at the Simon distillery in Le François and then aged in the historic cellars at Habitation Saint-Étienne itself in Gros-Morne, where the Hayot family has restored the old sugarcane plantation since 1994. Because it is a Rhum Agricole, it is pressed exclusively from fresh sugarcane juice rather than molasses, giving it a greener, creole starting point that the long ageing in American oak then layers with caramel and spice.

    Tasting notes

    Nose

Candied fruit such as apricot, peach and cantaloupe, followed by roasted almonds, caramel, milky coffee and a touch of clove, with a hint of grape must.

    Palate

Broad and warm on the attack, settling softly on the palate without heaviness, smooth and round with an aromatic finish mirroring the nose.

    Finish

Creole and spiced with a fine, lingering warmth from the long cask ageing.

About Habitation St. Etienne Rum

Habitation Saint-Etienne is a rhum agricole from Martinique, originally a sugar factory later converted into a modern distillery. For the newcomer it's an accessible entry into the rhum agricole category; for the history-minded, the survival story itself is fascinating - after two hurricanes ravaged the site in 1994, both the aged stock and the distillation equipment were rescued and carried on by the neighbouring estate, making every bottle a testament to how Martinique's rum traditions refuse to disappear.

History & Background

Habitation Saint-Etienne was originally a sugar factory, acquired in 1982 by Amédée Aubéry, who later became one of Martinique's leading economic figures and industrialised the factory into a modern rhum agricole distillery. In 1994 the fields were badly hit by hurricanes "David" and "Allen", bringing the factory to its knees, and that same year it was sold to the Hayot family, who already owned the neighbouring Simon distillery. The distinctive "creole-style" still and the surviving aged stock were moved and restored at Simon, and the Habitation Saint-Etienne brand is still produced and sent to market from that factory today.

Production & Style

HSE produces rhum agricole in the French tradition, where rum is distilled from fresh sugarcane juice rather than molasses, giving a fresher, more herbaceous expression.

Signature Style

Fresh, Herbaceous, Elegant
The flavor offers a distinct, green sugarcane character with herbal notes - typical of true rhum agricole.
