Noah's Mill Whiskey

Noah's Mill is bourbon built like a puzzle of rye- and wheat-based barrels ranging from 4 to 20 years old, a grain recipe so unusual that no other bourbon on the shelf tastes quite like it. Willett Distillery blends the barrels by hand, not to a fixed formula.

About Noah's Mill

Noah's Mill is produced by Kentucky Bourbon Distillers, better known as Willett Distillery, in Bardstown and was originally aged 15 years, while the modern release today consists of a blend of whiskeys aged between 4 and 20 years. The special grain recipe combines barrels of rye-based bourbon at varying percentages with barrels of wheat-based bourbon, giving an unusual, elegant flavour with notes of cocoa, caramel, vanilla, toasted nuts and peppermint. Collectors are drawn to the varied age blend and limited batches, while newcomers meet one of the most complex small batch bourbons in its price range.

History & Background

Noah's Mill was developed by Willett Distillery as one of the firm's own brands with a focus on an unusually complex grain composition, where rye- and wheat-based barrels of varying ages and percentages are blended together to create a deeper flavour profile than a single mash bill can provide. The name references a historic mill, and the brand has over the years evolved from its original 15-year aging to the broader age blend that characterises the modern release. The craft-driven approach to blending has made Noah's Mill a fixed reference point for enthusiasts seeking a bourbon with more layers and complexity than most standard releases.

History & Background

There is not much publicly available history on Noah's Mill, and the house keeps a relatively low profile about its origins. What is clear is its position in the range, reflected in the style and character described above.

Production & Style

The bourbon is bottled at a high proof and assembled from older, selected barrels for a deeper character.

Signature Style

Bold, Sweet, Spicy
The bourbon offers a bold, sweet character with a spicy, lingering finish.
