Martes Santo Gin

Martes Santo is the Spanish gin double-distilled in a copper pot still over a hundred years old – a craft where the age of the still itself is as much a part of the story as the botanicals list. This is Spanish gin with patina, made with the calm and care an old machine demands.

In the last of three distillations, the Martes Santo family adds iris petals to the still. That detail gives Flor de Iris its characteristic colour and its name, which means "iris flower" in Spanish.

    Expert's description

Martes Santo Flor de Iris is a Spanish London Dry Gin triple-distilled at the family-run Destilerías Martes Santo in Andalusia and bottled at 40%.

The distillery in the village of Higuera de la Sierra has been family-owned since 1870 and remains one of the few places in Spain where the stills are heated with direct fire and oak wood.

Flor de Iris is distilled up to three times from finely selected botanicals such as juniper, orange and lemon peel, cassia bark, angelica root and grains of paradise. In the final distillation, iris petals are added, giving the gin its characteristic hue.

The triple-distillation method makes the gin extra clean and soft, while the iris adds a delicate, powdery sweetness.

    Expert's description

Martes Santo Organic is a Spanish London Dry Gin distilled at the family-run Destilerías Martes Santo in Andalusia and bottled at 40%.

The distillery has been family-owned since 1870 and is one of the last active Spanish distilleries still firing its stills with direct flame and oak wood rather than steam or electricity.

The organic recipe is built on juniper, orange and lemon peel, cassia bark, angelica root and grains of paradise, joined by jasmine flower and walnut from the house's secret recipe.

The gin is distilled in the classic London Gin style, where all botanicals are added during distillation for a clean, rounded character.

About Martes Santo Gin

Martes Santo is a gin with a mysterious, near-ritual expression, named with a reference to religious tradition.

History & Background

Martes Santo is a relatively young Spanish gin, named after "Holy Tuesday" from Spain's Semana Santa Easter processions, where ceremony and ritual fill the streets. The gin is distilled in a copper pot still more than a hundred years old, a deliberate choice that ties the product to Spain's long tradition of craft distillation. The brand belongs to the wave of Spanish premium gins that has grown alongside the country's gin-and-tonic culture since the 2010s. Detailed information about the founder and distillery behind the brand is scarce outside Spain.

Production & Style

The gin is distilled from juniper and a selected composition of botanicals, giving it its distinctive profile.
