    In the last of three distillations, the Martes Santo family adds iris petals to the still. That detail gives Flor de Iris its characteristic colour and its name, which means "iris flower" in Spanish.

    Martes Santo Flor de Iris is a Spanish London Dry Gin triple-distilled at the family-run Destilerías Martes Santo in Andalusia and bottled at 40%.

    The distillery in the village of Higuera de la Sierra has been family-owned since 1870 and remains one of the few places in Spain where the stills are heated with direct fire and oak wood.

    Flor de Iris is distilled up to three times from finely selected botanicals such as juniper, orange and lemon peel, cassia bark, angelica root and grains of paradise. In the final distillation, iris petals are added, giving the gin its characteristic hue.

    The triple-distillation method makes the gin extra clean and soft, while the iris adds a delicate, powdery sweetness.

    The nose is floral and soft with a powdery iris note, backed by juniper and citrus.

    Palate

    The palate is delicate and round with juniper up front, a floral iris sweetness and spiced depth from cassia bark.

    The finish is soft and lightly sweet, with a last trace of flowers and citrus.
