Uncharted Whisky Co

A new Scottish bottler charting unknown casks and hidden distilleries on a whisky map of its own making. Uncharted Whisky Co is run by two people, not a team of analysts, and it shows in the selection. They choose casks they genuinely love and let them speak for themselves - no polish, no marketing noise.

  • BenRiach Smokestack Lightning 2009 Uncharted 13 years peated Single Malt Scotch Whisky
    Item no.: 22227865480-67093-0389

Smokestack Lightning is a Howlin Wolf song from 1956 about a train passing in the night. Uncharted borrowed the name for a cask of peated BenRiach, and it is hard to think of a better image for whisky that rushes past and leaves a smell in the air.

    The expert's description

BenRiach Smokestack Lightning 2009/2023 Uncharted Whisky Co. 13 years is a Highland Single Malt Scotch Whisky matured in an ex-bourbon hogshead and bottled at 53.4 % without chill filtration and without added colour.

The whisky was distilled in 2009 and drawn in 2023 after thirteen years. The label calls it Highland, which is correct in the formal sense, since Speyside falls administratively within the Highland region. BenRiach sits at Elgin in the middle of Speyside.

Uncharted Whisky Co. is a younger Scottish bottling house that names its releases after music rather than after cask numbers. An ex-bourbon hogshead gives bright sweetness and lets the peated malt stand out clearly, which is a more direct approach than wrapping the smoke in sherry.

    Tasting notes

    Nose

Dry smoke, lemon peel and vanilla. Behind it sit pale cereal and a suggestion of ash.

    Palate

Powerful and dry with smoke, honey and spiced oak. The bourbon cask gives sweetness, but the smoke is allowed to lead.

    Finish

Long and dry with ash, pepper and a last note of honey.

    Investment potential

High. Peated BenRiach from 2009 is rare in independent bottlings, and Uncharted works purely with single casks in small runs. Spirit from before the 2016 change of ownership also grows gradually harder to find.

    Did you know?

Speyside is formally a sub-region of the Highlands, so a Speyside distillery may call itself either on the label. Independent bottlers sometimes pick Highland to sidestep the expectations the word Speyside creates in the buyer.

  • Dalrymple Come As You Are Lowlands blended malt bottle
    Item no.: 22227865480-67093-03896666666

A bottle named after a Nirvana song and a distillery that may not be named. Uncharted Whisky Co. makes a virtue of not taking itself too seriously.

    Expert description

Dalrymple Come As You Are 2012/2023 Uncharted Whisky Co. 11 years is a Lowlands Blended Malt Scotch Whisky matured in an ex-oloroso sherry butt and bottled at cask strength of 55% without chill filtration and without added colouring.

The cask carries the number UC026, was filled in July 2012 and emptied in October 2023 with an outturn of 687 bottles. Dalrymple is the name the bottler uses for malt whisky from the Lowlands where the source may not be disclosed. The Lowlands is Scotland's gentlest region, and eleven years in an active sherry cask gives that light style a depth it otherwise rarely reaches.

    Tasting notes

    Nose

Dark fruit and cereal. Raisin, orange peel and a light herbal note, with cocoa and spice underneath.

    Palate

Full for a Lowland malt. Dried fruit, malt and dark chocolate, with a dry sherry edge and a peppery warmth from the cask strength. The region's lightness is still there under the sweetness.

    Finish

Long and dry, with nuts, dark fruit and a warm spiced close.

Medium. A single cask at cask strength in 687 bottles from a small-scale bottler. Lowland malt in active sherry wood is an unusual combination.

Uncharted Whisky Co. names its releases after songs. Come As You Are is Nirvana from 1991 — the same decade the whisky in the bottle was heading towards, if you count a few years from the record to the cask.

  • Heart of Gold Highland Blended Malt from The Uncharted Whisky Co. in a Sauternes cask
    Item no.: 059763-615-1080

Somewhere in a Scottish warehouse sat a cask nobody could quite place anymore. Pure Highland malt whisky, matured for years on bourbon oak, without a name and without a story, until two curious bottlers from Fintry found it and gave it a new finish and a new chapter.

    The expert's description

Heart of Gold 2013/2024 is a Highland Blended Malt Scotch Whisky, composed of malt whisky finished in a fresh Sauternes cask and bottled at 50%.

Behind the bottle stands The Uncharted Whisky Co., a small independent bottler run by Jack Breslin and Dana de Vos from Fintry, Scotland. The spirit in Heart of Gold is a marriage of malt whiskies from the Highland region, first matured in standard ex-bourbon casks before Uncharted Whisky discovered the parcel and chose to give it a final chapter in a fresh Sauternes wine barrique, cask reference UC030. The whisky was distilled in April 2013 and bottled in March 2024, giving it 10 years of total maturation, with only 363 bottles produced of this release.

Because the original distilleries behind the blend are not disclosed, Heart of Gold is a whisky that lives on its cask treatment rather than a named distillery, the Sauternes cask leaving a clear, sweet signature over the clean Highland malt character.

    Tasting notes

    Nose

Ripe stone fruit and pineapple meet dried apricots and a light lemon-sherbet freshness, with a sweet, wine-like undertone from the Sauternes cask.

    Palate

Candied pineapple and a full, buttery character that moves into honey and freshly baked brioche.

    Finish

Long and sweet, with peaches and a creamy, almost custard-like close where the Sauternes wine sweetness lingers longest.

The Uncharted Whisky Co. does not run a fixed portfolio of regular releases but instead searches for single casks that have somehow been overlooked or forgotten in Scottish warehouses, hence the name, meaning "uncharted".

  • Glen Elgin Tapestry Speyside Single Malt Scotch Whisky bottle from three cask types
    Item no.: 22227865480-67093-0106

It is called Tapestry because three cask types are woven together rather than following one another. That is a different idea from the classic finish, where one cask gets the last word.

    The expert description

Glen Elgin 2009/2022 Tapestry 13 Years Old is a Speyside Single Malt Scotch Whisky matured in oloroso sherry casks, Pedro Ximenez sherry casks and bourbon casks, bottled at 50%.

The whisky was distilled in 2009 and bottled in 2022 after thirteen years. Tapestry is a range from the Uncharted Whisky Company, founded by the Scot Jack Breslin and the Dutch-German Dana de Vos, who both worked in the whisky trade for many years before setting up on their own.

The three cask types each pull in their own direction. The bourbon casks give vanilla and pale fruit, oloroso adds nut and dried fruit, and Pedro Ximenez brings the dark, almost syrupy sweetness. Put together they land on a profile none of them would have given alone. The whisky is bottled at 50% without chill filtration and without colouring.

    Tasting notes

    Nose

Raisin and dried apricot first, then vanilla and walnut, with a note of dark syrup in the background.

    Palate

Full and layered. Yellow fruit and honey from the bourbon wood, dates and nut from the sherry, and a dark sweetness tying it together.

    Finish

Long and warm with dried fruit, a touch of cinnamon and a dry oak close.

    Did you know?

The Glen Elgin fruitiness is no accident. It comes from clear wort, long fermentation and slow distillation, which together clean the sulphur notes out of the spirit, and only afterwards does the whisky get its weight back from the distillery worm tubs.

About Uncharted Whisky Co

Uncharted Whisky Co is a modern Scottish whisky bottler whose name signals an ambition to explore lesser-known distilleries and casks. For the newcomer, it's a good way to meet whisky beyond the big, familiar names that often dominate the shelves. For the collector, the interest lies in the small scale: because the house is run by just two people, Jack Breslin and Dana de Vos, every release is a personal choice rather than a commercial decision, giving the bottlings a rarity and a story larger houses can rarely match.

History & Background

The company is part of the new wave of independent bottlers that has emerged alongside renewed interest in single cask whisky. The Uncharted Whisky Company is run solely by Jack Breslin and Dana de Vos from the small village of Fintry in Scotland, sharing a passion for seeking out and selecting casks they themselves find interesting. Some casks they bottle right away, others they let mature further, and occasionally they finish maturation in a completely different cask than the original - an approach that turns every release into a small experiment.

Production & Style

Uncharted Whisky Co bottles whisky from a wide range of Scottish distilleries, often with a focus on lesser-known names and unusual cask types.

Signature Style

Versatile, Curious, Distillery-Driven
The taste varies considerably by distillery and cask, but an exploratory, curious approach is common.
