Poli Elisir Sambuca is an Italian sambuca liqueur from the Jacopo Poli distillery in Schiavon, made by natural infusion of star anise in alcohol, bottled at 40% ABV.
The Poli family has run its artisanal grappa distillery near Bassano del Grappa in Veneto since 1898, and today fourth-generation Jacopo Poli carries the tradition forward. The distillery produced sambuca from the post-war years until the mid-1980s, after which production was resumed due to rising demand. Elisir Sambuca is made exclusively from star anise, naturally infused in alcohol and then aged for at least 6 months in stainless steel tanks.

The liqueur is clear in colour with an intense aroma of aniseed, reminiscent of fresh fennel. The taste is velvety and pleasantly sweet, dominated by the star anise's characteristic, clean flavour without unnecessary additives.
