Vodka Bornholm

Vodka Bornholm is the Danish answer to the idea of terroir in vodka – distilled from the island's own raw materials with the sea air as an invisible collaborator. Bornholm has spent decades building a reputation for local food quality, and this vodka is a liquid extension of that pride. This is Nordic purity poured into a clear bottle.

    Caramel and salt are old companions, but they rarely end up in a shot glass. Bornholm Spirits took their own vodka, stirred salted caramel into it and bottled the result at a strength where the sweetness does not get burned away.

    It belongs to the Shots by Vodka Bornholm range, where the base is the distillery’s own vodka rather than bought-in neutral spirit. That vodka has rested with Bornholm granite, and the softness is why the caramel can settle on top without running into anything sharp.

    The salt is what saves it. Without it the caramel would turn cloying after two sips. With it the sweetness gets a counterweight, and the shot closes dry instead of syrupy.

    It has to be served ice cold. At room temperature it turns heavy, while cold tightens it up and makes the caramel into something you want to reach for again.

    Nose

    Melted caramel and butter. Behind them sit a thread of vanilla and a small salted breath.

    Palate

    Creamy and full with clear caramel. The salt arrives late and pulls the sweetness back before it becomes too much.

    Finish

    Medium. Toffee and cream fade out, and the salt is left standing on its own.

    Salted liquorice splits a room down the middle, and that is half the point. Here it meets a vodka from Nexø that has rested with Bornholm granite. The result is black, cold and fairly uncompromising.

    The range is called Shots by Vodka Bornholm and uses the distillery’s own vodka as its base instead of bought-in neutral spirit. You can tell: underneath the liquorice sits a soft grain sweetness that keeps the shot from ending up as sweets in a glass.

    At 16.4% this is low for a shot, and that is no accident. The strength never cuts through the liquorice, so the flavour is left to fill everything. In exchange the bottle needs to be kept cold, ideally in the freezer until it is wanted.

    Bornholm Spirits makes it in Nexø on the eastern side of the island, where the house also produces organic schnapps, aquavit and vodka. It works equally well as a party shot or poured over a scoop of vanilla ice cream.

    Nose

    Liquorice root and salt. A thread of anise and something dark, almost earthy, sits behind them.

    Palate

    Thick and sweet for a moment, then the salt breaks through. The liquorice is powerful and keeps going, with no alcoholic heat to interrupt it.

    Finish

    Long and salty. The sweetness goes first while the liquorice stays put on the palate.

    There is a particular kind of darkness on Bornholm in November. The sea hammers the granite, the light goes early, and behind the windows the pots begin to steam. Gløgg Bornholm was made for exactly that hour.

    Gløgg Bornholm is a Danish Gløgg built on a wine base by Bornholm Spirits and bottled at 12%.

    It comes from Den Bornholmske Spritfabrik, a distillery that spends most of the year on aquavit, snaps and gin. The gløgg is their winter detour, and it is built on wine rather than juice or concentrate. You can taste the difference: there is a light acidity underneath the sweetness that keeps the whole thing from turning sticky.

    On top of the wine base sit cinnamon and cardamom, and beneath everything, cherry, giving the sweetness something to lean on. The spices are allowed to step forward without drowning out the fruit. The ingredient list is short: wine, ethanol, sugar and natural flavourings. It may contain sulphites.

    Nose

    Cinnamon and cardamom arrive first, dry and warm. Behind them sit dark cherries and a hint of orange peel.

    Palate

    Sweet without turning syrupy. Cherry and plum fill the middle while clove and cinnamon add edge. The wine base holds it all together.

    Finish

    Medium and spiced. The warmth lingers in the throat, and a dry berry note appears right at the end.

    Ruby red vodka sounds like a colouring agent at work. Here the colour arrived the long way round: from a Danish rosé wine blended in after distillation. The bottle is the same champagne bottle as always. The contents are somewhere else entirely.

    Vodka Bornholm Rosé Edition is a Danish Vodka from Bornholm Spirits, blended with Danish rosé wine and bottled at 37.5%.

    The wine is Barfod Cabernet Cantor 2021, and it accounts for both the colour and a large part of the aroma. Cherry, strawberry and raspberry sit up front, and beneath the fruit come black pepper and thyme. Those are notes you rarely meet in a vodka.

    The base is the crystal clear Vodka Bornholm, which has rested with Bornholm granite and is therefore easy to handle. At 37.5% it sits below a standard vodka, and that pulls the bottle towards something you sip rather than knock back.

    It is made in small batches only and released as a limited edition. Served properly cold with tonic or sparkling water, it is built for light evenings rather than for the freezer.

    Nose

    Cherry and strawberry with raspberry behind them. A dry thread of thyme keeps the sweetness in place.

    Palate

    Soft and light. The red fruit fills the middle, then a twist of black pepper arrives and gives it an edge.

    Finish

    Medium. The fruit withdraws slowly while the pepper and a herbal streak stay behind.

    The bedrock under Bornholm is older than most of Europe. It has been lying there for two billion years, and now a piece of it sits down in the tank alongside the vodka. It sounds like a gimmick. It is not quite that.

    Vodka Bornholm is a Danish Vodka from Bornholm Spirits, made from organic wheat and bottled at 40%.

    After distillation the vodka is left to rest with Bornholm granite for four to six months. The stone releases minerals into the liquid, and the result is a softer, rounder vodka where the alcoholic edge has stepped back. The granite comes from Rønne and is more than two billion years old.

    The wheat is organic, and the bottle is a champagne bottle with a wooden cap that can be put back on. It is a piece of packaging theatre, but a practical one: pour a single glass and the rest of the bottle does not have to stand there with a loose stopper in the neck.

    Bornholm Spirits sits in Nexø on the east coast of the island and has been making the vodka since late 2018. It is also known as Smagen af Vodka Bornholm, and it is built as much for drinking neat as for going into a drink.

    Tasting notes

    Nose

    Clean and light. Mild grain sweetness, a hint of white bread and something cool and mineral behind it.

    Palate

    Soft and round from the start. The wheat gives a muted sweetness, and no sharp alcoholic heat arrives to interrupt it.

    Finish

    Short and clean with a mineral lift. The sweetness falls away quietly without leaving bitterness.
