    Duften har umiskendelige toner af blommer og rosiner. Smagen er smooth med en let sødme, som dækker over alkoholen og giver brandyen en behagelig og afrundet eftersmag.

    Ximenez-Spinola vineriet blev grundlagt i 1729 af Phelipe Zarzana Spinola, og det blev lige fra begyndelsen dedikeret til udelukkende at producere Pedro Ximenez. På daværende tidspunkt tappede vingården vinen under navnet Zarzana Spinola, men da dette navn var noget af en udfordring, for ikke at sige en umulighed at udtale på engelsk , krævede en stor engelsk kunde, at man ændrede dette til Ximenez – Spinola, hvilket man efterfølgende har gjort.
    I dag laves der stadig udelukkende vine på Pedro Ximenez, og selv om man stadig er yderst traditionel i sin vinificering, forsøger man dog at eksperimentere med druetypen, så man ikke kun laver sherry. Et eksempel er Late Harvest’en, som er den eneste af sin slags i distriktet.

    Det helt exceptionelle ved Spinola Brandy Criaderas er brugen af kastanjefade under lagringen. Indtil den spanske borgerkrig i 1939 var der tradition for at bruge kastanjefade i Spanien, men da en stor del af skovområderne blev fældet under krigen, gik bødkerne efterfølgende i stadig højere grad over til at bruge amerikansk egetræ for til sidst helt at ophøre med brugen af kastanjetræ. Fadene på Bodegas Spinola er alle minimum 70 år gamle og afgiver derfor kun en yderst begrænset mængde tannin, hvilket er med til at give brandyen en rundere og blødere smag.

    Vinifikation
    Vinen, der destilleres, tages fra en Solera, der blev startet i 1984. Der destilleres på en potstill, inden spritten hældes på brugte kastanjetræfade, hvor den lagrer i minimum 12 år

    Production process: Obtained from the Pedro Ximenez grapes made raisins. At the end of the summer, the grapes are spread out on mats to concentrate sugars, aromas and flavours. Then, the matured grapes are carefully pressed to obtain a raisin juice which will become the PX wine after several years in oak.
    Aging: Oxidative aging by Solera and Criadera system during 5 years in American oak barrels in our hundred-years-old cellar. It is the most precious wine from our cellars, result of a long and delicate process exclusive to the sweet PX from Montilla-Moriles.
    Tasting notes: Dark mahogany colour with intense aromas to raisin and fig. Very pleasant and characteristic on palate. Good match with blue cheeses and a wide range of desserts, vanilla ice cream and dark chocolate. Perfect as a dessert on itself.

    Production process: Obtained from the Pedro Ximenez grapes made raisins. At the end of the summer, the grapes are spread out on mats during 10 days to naturally concentrate the sugars, aromas and flavours. The result is a very particular sweet wine which requires 3 kgs. of grapes to produce 1 litter of PX.
    Aging: Oxidative aging through Solera and Criadera system. Aged during 20 years in American oak barrels in our hundred-year-old cellar. The barrels used for the aging belong to the winery since its foundation in 1902. It is the most awarded wine from our Cellars, excellent old sweet PX from Montilla-Moriles.
    Tasting notes: Dark mahogany colour with intense aromas to matured fig, vanilla, liquorice, roasted coffee, chocolate and dry fruits with a wooden aftertaste thanks to its old age. Sweet, soft and creamy.
