Ximénez-Spínola Old Harvest is a Spanish Fortified Wine made exclusively from Pedro Ximénez grapes with an alcohol content of 17%. The higher alcohol percentage compared to the house's younger vintage editions suggests a longer maturation period, during which the wine has developed extra depth and complexity. The bodega, founded in 1729, sun-dries its grapes for at least 21 days before pressing - a method that significantly concentrates the sugar content and gives the characteristic syrupy sweetness.
