"We store our whiskey on casks from the great American Jack Daniel's distillery. We have really good stock options in the old malt cellars and ceilings, says Niels, who is looking forward to the first release in 2012 of perhaps the world's first 100% organic whiskey. The name of the wonder is also related to the old island, Funen.

The second release from Nyborg Distillery presents a whisky shaped by salt-kissed winds and oak. This dram combines warmth from first-fill Bourbon casks with depth from first-fill virgin oak, creating a unique flavor profile.

The whisky is sweet and full-bodied, with a subtle hint of smoke reminiscent of the soft glow from a horizon at twilight. During its six-month sailing season, this whisky has taken on the characteristics of a cask at sea, imparting intense maritime notes that are characteristic of coastal whiskies.

Nyborg Distillery presents a Danish single malt whisky with a pronounced sherry character, distilled in May 2017 and bottled in August 2025. This release was aged for eight years in a 1st fill Oloroso sherry butt and bottled as a single cask at a powerful 56.3% ABV. Only 638 bottles were released, making it an exclusive and collectible edition.

The nose opens with classic sherry notes: dried fruit, vanilla, caramel, and dry Oloroso, immediately signaling depth and complexity. The palate is intense and spicy with distinct flavors of caramel, cloves, and tobacco, creating a warm and dark profile. The finish is long and dry with leather, tobacco, and an almost landscape-like expression – like a walk through a sun-drenched vineyard.

This Organic Single Malt Danish Whisky Ørbæk of 64,6% is a really exciting product. In 2012, Whisky.dk stopped by Ørbæk Brewery with two empty 30L casks and asked: "Isn't that something about you guys making whisky? Will you fill our barrels with 'new make'?" And they did. About 6 years later they returned: "Now we want our whisky bottled!" And they did.
This is a blend of the two casks and only 53 bottles were bottled. Bottled on the occasion of Whiskymessen March 3, 2018.

Nyborg destilleri has chosen to call part three of their Iberian Beauty series Ultimate Splendour - they are quite fond of this whisky, and they hope you will be too.

Ultimate Splendour offers richness, sweetness and complexity, as well as a developed fruitiness. From 2019 to 2021, every December 1/3 is bottled from the same cask. In September 2019, we filled a 500L Oloroso sherry cask that was completely empty of the sherry that had been on it for 40 years. Before that, the whisky had been stored in two STR vinfade from Portugal.
