Isle of Fionia New Make is an organic Danish new make spirit bottled at 46%. Distilled at Isle of Fionia / Nyborg Distillery in the historic DSB train depot in Nyborg, Funen, this is the unaged white dog – the raw spirit before whisky maturation begins. Made from 100% organic barley and distilled in copper pot stills. No cask influence, no shortcuts, just the pure distillate straight off the still.

Tasting notes

Nose

Fresh and green with clear young malt, grain bread and a gentle sweetness of fresh fig and vanilla from the barley.

Palate

Clean and direct with soft malt body, a hint of citrus and a lightly spiced, peppery finish. Oily texture from grain oils not yet mellowed by maturation.

Finish

Short to medium with malted grain and a clean, mineral note.
