Thy Danish Whisky

Whisky.dk is the first in Denmark to distribute their products (apart from selling them themselves) - something we are very proud of.
Our first experience with Thy Whisky took place at the Whisky Fair in 2016 - where they wrote this text:

Then we head away from the safe confines, far to the northwest and south, all the way to the Whisky Fair in Kolding. We look forward to chatting with colleagues and good whisky noses, and to sharing a bit of our drops.

For the occasion, we have a little nugget of gold, a special release for the fair, our Barrel No°3 nicknamed Kræn Kræmmer. We're talking a small Sherry cask with whisky made from the old 2-rowed barley variety Imperial, floor-malted and distilled on the good copper apparatus.

Only 100 bottles were produced from this small cask, after the angels had taken their fair share. For the fortunate guests at the fair, an exciting whisky awaits with a vinous sweetness from the sherry cask, reminiscent of hazelnuts and walnuts, while notes of anise and estragon add extra richness to the taste, lingering long before finishing with a vinous dryness from the sherry and a delightful fruitiness.

Thy Spelt-Rye 2020 is the latest addition to Thy Whisky's series, which they call Spelt-Rye. Produced in collaboration with Nordisk Brænderi. They make their spelt rye on the family farm Gyrup in Thy. In the middle of the storm-blasted North Sea dunes and the soft meadows down towards the Limfjord. Surrounded by hawboere, characterized by the sand and the North Sea, and fjordboere surrounded by the gentler fjordland to the east.

Made from 42% Svedjerug, 11% spelt and 47% Odyssey spring barley and aged in a fresh virgin American oak barrel, with only 1078 bottles. Not cold filtered and natural color grown and brewed at Gyrup.

Thy Whisky Bøg is a tribute to the scent of campfires and the distinctive smokehouses along Thy's beautiful, windswept coast. Inspired by the natural beauty of the area, Bøg is crafted from organic barley sourced from the fields surrounding the distillery. Each grain is meticulously malted and smoked on their drum malting floor, where the smoke originates from beechwood. The process of single distillation is carried out with special care to preserve the malted and robust smoky notes that characterize this whisky. After distillation, it is carefully aged in old sherry casks that previously held oloroso and PX sherry. The result is a warm and smoky whisky with a subtle sweetness reminiscent of baked fruits and malt, as well as a deep fruity sweetness from the aging process in sherry casks.

For this special occasion, they have chosen a type of whisky that they have never bottled before. The distillate is redes 'Kara' distillate with a hint of peat smoke. The whisky has been aged for 4-4 1?2 years in ex-bourbon and PX sherry casks.

Aromas of burnt caramel, the deep sweetness of PX sherry and fresh vanilla from the bourbon barrels merge into a very round and complex sweetness. The peat adds a touch of 'green', acidic notes such as grass and citrus fruits. They have bottled the whisky at 49.5 % alc.vol. where the whisky is intense and aromatic but at the same time feels very soft on the tongue. This Thy Whisky No 17 has been named STOVT - an organic Danish Single Malt Whisky at 51,2% Stovt is a very special whisky for Thy Whisky. It is blended from a selection of their single malt whisky barrels. Both bourbon and oloroso sherry casks, with and without smoke, with light and slightly burnt malt types and from different vintages.

Finally, it has been given a short finish in stout casks that have aged Limfjordsporter (their favorite stout) at Thisted Bryghus. This is the third time they have bottled a "Stovt". This time they have turned up the beechwood smoke a bit and the bourbon barrels have a larger part of the credit for the cask character. The whisky is composed of barrels that are 3-6 years old. The result is a lightly smoky whisky with a complex sweetness with notes of bourbon vanilla, fruit, soft toffee, burnt caramel and a hint of sweet licorice. Thy Whisky No 20 Maltmod is a single malt whisky shaped and created by experiments in Thy Whisky's own maltings. It is characterized by a rich and alluring aroma of caramel, which stems from experiments in their maltings with dark 'caramel malts', which otherwise hardly ever find their way into traditional whisky production. The intense 'Cara' new make has been aged in 12 small bourbon octaves (50 liters), then larger bourbon casks, and finally blended with two oloroso casks, which have then been given time to accumulate in the barrels.

The result is a whisky with great vanilla sweetness and intense burnt caramel with underlying fruit notes. On the nose, there are notes of leather and cedar with a faint hint of tobacco. The taste starts with sweet vanilla toffee, nougat and a little pickled fruit and ends in burnt caramel with a hint of cloves and oak. Thy Whisky No 23 - Hawboen is composed of 3-8-year-old barrels, some with a mild beechwood smoke, others with our unpeated 'Pale' new make. We have bottled the whisky at 51.5% vol., where the whisky is balanced between strength, intensity, smoothness, and aroma. It is a fruity and mildly beechwood-smoked whisky. The whisky has vanilla sweetness, citrus, smooth caramel, toasted coconut, warm spices, beech sap, a gentle warming smoke, and a hint of a maritime, salty impression.

In addition to a few single casks, "Hawboen" is the first purely bourbon cask-matured whisky, bottled since 2016. It will be the second-to-last bottle in their numbered series (1-24), which concludes in 2024, ten years after their first bottling.

"Thy Whisky No 24 - 8 years" is a bottling of 8-10-year-old bourbon casks, making it our oldest whisky to date. And it tastes absolutely fantastic!

After the long maturation period in the cask, the whisky has developed a wonderfully intense aroma of tropical fruits, vanilla, baked apples, and cream caramel. The whisky is well-oiled, and the aftertaste lingers for a long time. It is the first time that Thy Whisky formally assigns an age statement to a bottle - because they believe it deserves it! In many ways, it showcases the direction in which they plan to work with their bourbon casks in the future.

We are releasing the whisky for sale on Friday, February 9th, at 9:00 PM, marking the 10th anniversary of their very first bottling in 2014.

Yes, gin is all the rage right now, but that doesn't change the fact that whisky is and will remain the king of spirits, simply because it takes a minimum of three years to make and requires a lot of care and love in the process.
