Danish New Make

An unaged whisky spirit that captures the distillate's raw, unfiltered character, before time in the cask shapes it. It's a glimpse behind the scenes of whisky-making - the flavour normally only the distiller experiences, before the years in cask take over. For the curious, new make is a direct route into what a Danish distillate actually tastes like, without the cask's sweet, spiced layers.

    Before whisky exists, there is only this: a clear, powerful spirit straight from the still, with no cask in sight. On the Faroe Islands they call it new make, and this small bottle captures one of the very first moments of Faer Isles Distillery's future whisky, caught before time and wood got the chance to shape it.

    Faer Isles New Make Single Malt is an unaged whisky spirit from the Faroe Islands bottled at 59.5% ABV.

    The bottle holds new make spirit from Faer Isles Distillery in Vestmanna - the clear spirit that comes straight off the stills, before it has ever touched a cask. This particular batch was distilled on the distillery's Müller hybrid still, used before the current Scottish copper stills from LH Stainless were installed. The release was originally reserved for members of Faer Isles' Founders' Club and is counted among the distillery's first single malt spirit releases.

    Faer Isles is working toward a lightly peated whisky with a distinct oceanic character, matured in the traditional Faroese hjallur - an open-slatted timber storehouse where salt, humidity and wind penetrate the casks. This new make spirit, however, carries no cask influence at all and therefore shows the raw, unaged character of Faer Isles' malt spirit.

    Powerful and oily, with malt firmly at the centre and a touch of fruit.

The distillery is run by Jens Knobelauch with a focus on whisky and apple brandy, using a traditional craft approach. Raw Spirit is the distillate in its most raw form — unaged, untouched and straight from the still. The peated malt gives a pronounced smoke character right from the new make stage. This is a limited release, partially sold directly at the distillery.

    Nose

    Strong peat notes up front. Light malt sweetness behind the smoke. Herbs and a slightly earthy quality.

Both expressions are unaged new make spirits. NOBS Distillery is run by Jens Knobelauch as a farm distillery focused on craft production.

    Nose

    Smoke with a softer edge than Raw Spirit. Sweet malt, lightly herbal and faintly fruity. The peat is present but not overwhelming.

    Finish

Danish New Make is the term for unaged whisky spirit from Danish distilleries, bottled directly after distillation without cask ageing. For newcomers, it's an eye-opening experience to taste the spirit in its rawest form, while connoisseurs use new make to understand exactly what a given distillery's raw materials and distillation style contribute, before the cask adds its own layer on top.

History & Background

New make is part of a growing interest among whisky enthusiasts in experiencing the spirit in its purest, most unfiltered form, before the cask leaves its mark. Several Danish distilleries have embraced the category as a way to give customers a look into production while they wait for their first whiskies to mature enough for bottling. New make bottlings therefore often also work as a kind of promise of what's coming - a preview of a distillery's style long before its first official whisky release. The category is still relatively new to the Danish market and is therefore typically only available in limited runs.
