An Orkney Distillery

An Australian couple with backgrounds in engineering and pharmacy built their own distillery in Orkney - the first new one in 132 years. From a still house beside their own home, they've crafted gin, vodka and now whisky with a raw, Nordic character. It's one of the most personal distillery stories in Scottish spirits.

    Orkney 17 (HP) 2005/2023 Signatory Vintage 17 Year Old is a Single Malt Scotch Whisky from a single Oloroso sherry butt, bottled at cask strength 55.3%.

    The name Orkney, paired with the bracketed hint (HP), is Signatory Vintage's discreet compromise: the distillery cannot be named, but the cask code DRU17/A63 and the nickname point unmistakably to Highland Park. The whisky spent its entire maturation in a single cask, number 27 — nothing blended in, nothing added.

    The cask was filled on 7 May 2005 and bottled on 17 February 2023, yielding 612 bottles with natural colour and no further dilution.

    Nose

    Raisins, orange peel and dark chocolate sit on top of a light peat smoke, with a hint of sea salt hinting at its coastal origin.

    Palate

    Rich and sherry-driven, with fig, damson jam and a warm clove spice, underscored by a muted, mineral smokiness.

    Same vintage, same secret, but a different cask — and therefore a whole different story. This Orkney 17 (HP) comes from Cask #8, a sister cask to the better-known releases, but with its own, more spiced expression.

    Orkney 17 (HP) 2005/2023 Signatory Vintage Cask #8 is a Single Malt Scotch Whisky from a single Oloroso sherry butt, bottled at cask strength 55.6%.

    Like other Orkney (HP) releases from Signatory Vintage, the distillery cannot be named, but the cask code DRU17/A63 and the name Orkney point towards Highland Park. Cask #8 was distilled the same day as several sister casks but matured on its own, developing its own, more spiced sherry character.

    The cask was filled on 7 May 2005 and bottled on 23 January 2023, yielding 596 bottles with natural colour.

    Nose

    Raisins and orange peel meet a light peat smoke and a hint of dark chocolate.

    Palate

    Full-bodied and spiced, with fig, vanilla and a subtle, mineral smokiness.

    Hidden once more behind the name Whitlaw is Highland Park from Orkney, this time matured in casks given an extra turn through the fire. Rechar butts are not common, and the effect is unmistakable.

    The whisky was distilled in September 2014 and bottled in September 2024 by Signatory Vintage, matured for 10 years in Rechar Butts. These are large 500-litre casks that have been re-charred inside to renew the active char layer, intensifying the interaction between wood and spirit and giving deeper notes of caramel, toasted oak and gentle smoke.

About An Orkney Distillery

An Orkney Distillery, operating under the name Deerness Distillery, is located in Deerness in Orkney and was the first new distillery on the islands in over 132 years. The story of a couple who designed and built the distillery themselves next to their own home makes the house one of the most personal examples of Scottish micro-distilling, and it's what makes Deerness compelling both for newcomers wanting to see the craft up close and for collectors chasing the earliest releases from one of Orkney's rarest distilleries.

History & Background

Stuart and Adelle Brown emigrated from Australia to Orkney, where Stuart, a trained engineer, designed the distillery himself, while Adelle, a trained pharmacist, contributed her expertise to refining the spirit. The distillery was established in 2016 next to the couple's home, and its first products, Sea Glass Gin and Into the Wild Vodka, launched in May 2017. In 2024, the distillery expanded with a dedicated still room housing three new copper stills for whisky production, which began in March 2025.

Production & Style

The distillery is named after the Deerness peninsula, believed to be named for deer bones found near the nearby Brough of Deerness.
