NM01 is the first in Brewer's Series of New Makes, from Holyrood Distillery.

NM01 showcases the complementary nature of using Brewer's yeast and Distilling yeast together. Their Brewer's yeast (American Ale yeast) imparts a clean mouthfeel with notes of peach and soft citrus. Their second yeast strain, Distiller's Yeast M strain is super efficient at converting fermentable sugars, building upon the flavours created by their Brewer's yeast.

NM03 is their second iteration that uses a specialty malt to explore how they affect their spirit's flavour. NM03 utilises Chocolate Malt, which is a heavily toasted malt, adding dark, cocoa rich chocolate, flavours to this New Make. For the same reason, Chocolate Malt is traditionally used for the Brewing of dark beers, porters and stouts.

NM04 is the fourth release in Brewer's Series of New Makes, from Holyrood Distillery.

NM04 - Made by Edinburgh is the culmination of our extensive exploration of heritage beer yeasts and specialty malts. In creating this unique New Make, they combined their learnings from their previous releases in the Brewer's Series. Edinburgh ale yeast, with a mash bill recipe inspired by an 80 Shilling Ale recipe; a combination of distilling malt and two specialty malts; Crystal Malt, and Chocolate Malt.
