Holyrood New Make

In 2019, Holyrood opened as Edinburgh's first city-centre distillery in almost a hundred years, just a stone's throw from Holyrood Palace. This is whisky built in a capital city, not tucked away in the countryside, where modern technique meets classic craft. A sign that Scotch whisky can still find new homes.

    Holyrood Brewers Series NM03 Chocolate Malt New Make is an unaged new make spirit made from chocolate malt, drawn straight after distillation, bottled at 60%. Holyrood Distillery opened in 2019 as the first single malt distillery in central Edinburgh since 1925. The distillery was founded by Canadian couple Rob and Kelly Carpenter along with former Macallan master distiller David Robertson, and is housed in a renovated 'engine shed' that was once part of the Innocent Railway terminus. The distillery is known for experimenting with yeast strains sourced from the city's breweries.

    Tasting notes

    Nose

    The nose is rich with toasted malt, cocoa and a hint of caramel.

    Palate

    The palate is intense and grainy with chocolate malt and pronounced alcohol strength.

    Finish

    The finish is short, toasted and lightly bitter.

About Holyrood

Holyrood Distillery is Edinburgh's first city distillery in almost a century, founded in 2019 close to Holyrood Palace. For newcomers it's an accessible, modern entry into Scotch single malt and gin; for collectors it's notable as one of Scotland's youngest distilleries, with its earliest releases only recently reaching the market.

History & Background

Founders David Robertson and Rob Carpenter, both with backgrounds at major whisky houses, wanted to bring distilling back to a city that historically housed over a dozen distilleries but had not had a single one in more than 150 years. The distillery was partly financed through crowdfunding, giving ordinary whisky enthusiasts the chance to become part-owners.

Production & Style

The distillery deliberately experiments with different yeast strains and malt varieties to create a broad spectrum of flavour profiles from the same distillate, an approach setting it apart from many traditional distilleries.
