What started as leftover run-off from whisky production ended up as an entirely new kind of beer. Grant's distillery just wanted to rinse some bourbon casks with beer before ageing whisky in them - but the workers discovered the "waste" tasted amazing and started taking it home in soda bottles. That's how Innis & Gunn was born, from a pure accident nobody dared ignore.

About Innis & Gunn

Innis & Gunn is a Scottish craft beer brand that came about by accident, when William Grant & Sons experimented with using bourbon casks from whisky production to age beer. For the newcomer it's an accessible entry into cask-aged beer with a clear sweetness from the bourbon oak; for the connoisseur, the discovery story itself is one of the most retold anecdotes in modern British brewing history - a mistake that turned into an entire new production line.

History & Background

Whisky distillery William Grant & Sons wanted to give one of its whiskies a finish that echoed barley, the whisky's base ingredient, and decided to rinse some American bourbon casks with a heavily malted ale from Caledonian Brewery, brewed specifically for the purpose by Dougal Gunn Sharp. The beer was only meant to give the casks a touch of ale before the whisky was filled in, and was regarded as pure waste liquid - until management noticed that distillery workers were bottling it in soda bottles and taking it home because it tasted surprisingly good. The discovery became Innis & Gunn, and the beer, now brewed at Belhaven Brewery under head brewer Dougal Gunn Sharp, marked the start of an entirely new production line of whisky-cask-aged beer.

Production & Style

The beers are brewed using classic Scottish methods and then matured further in used bourbon or red wine casks for extra complexity.
