Danish Nature Brew honours a drink the Vikings themselves would have recognised, just refined for a modern palate. It's ancient honey wine, made relevant again.

    A mead that has sat quietly for a year usually ends up in a glass and nowhere else. This one went onto a copper still instead. What came off was dark and severe, and it only settled down after a spell in sherry casks. Honey, it turns out, can bite back.

    Bersærk Organic Mead Danish Nature Brew Mead 50 cl 47% is a distilled Danish Mead, matured in sherry casks and bottled at 47%.

    Bersærk is the second in the line of organic mead products from Danish Nature Brew in Kolding, and the road to the bottle is long. The mead is first hand-brewed from organic ingredients, fermented and matured for at least a year as perfectly ordinary mead. Trolden Bryghus then takes over, drawing the spirit off small copper stills. Small stills work slowly and keep vapour and copper in contact for longer, which goes a long way towards explaining why the distillate never turns harsh.

    The sherry casks handle the rest. They pull the honey character towards prunes, raisins and caramel and lay in the dry tobacco note that makes Bersærk resemble a dark rum or a sherried whisky far more than anything brewed from honey. This is a Limited Edition from the 2020 vintage, and 381 numbered bottles were made in total.

    Distilled mead is a very small category. Most mead brewers bottle their mead as it is, and only a handful send it through a still and then into wood afterwards.

    Tasting notes

    Nose

    Dark honey first, the sort that has begun to crystallise in the jar. Behind it sit prunes and raisins, a trace of vanilla and a dry streak of tobacco from the cask.

    Palate

    Full and almost oily in the mouth. Caramel and dried fruit carry the whole thing, while the alcohol runs as a warm band down the middle without ever stinging. The sherry cask shows most clearly here, nutty with a touch of bitterness.

    Finish

    Long and dry. Tobacco and caramel hold on for some time, and right at the end the honey returns, now with no sweetness at all.

    Danish Nature Brew draws on centuries-old recipes and gives them a modern Nordic twist using organic ingredients. Bifrost is brewed with wild honey from Zambia — home of Victoria Falls, where rainbows often arch over the falling water. That's where the name comes from, since Bifrost is the bridge between Asgard and Midgard in Norse mythology.

    This bottle is from batch 1, and the mead is a pure natural product with no added preservatives or sulfites.

    Tasting Notes

    Nose

    Honey and ripe apple lead the way, with a floral edge that calls to mind a late summer afternoon.

    Palate

    Full and round, with the honeyed sweetness kept in check by a bright acidity from the apple must. A hint of white fruit rounds it off.

    Gentle and honeyed, closing with a light wine-like character that invites another sip.

    Honey, apple must and patience. That is very nearly the whole recipe for Danish mead, and in the town of Kolding, Danish Nature Brew still brews it from recipes far older than any label could hold. Three of them stand side by side here in miniature: one pale, one dark, one cask-aged.

    Danish Nature Brew Miniature Gift Set Danish Mead 3x10 cl 14% is a gift set holding three hand-brewed organic Danish Mead, all bottled at 14%.

    The set contains Gunlöd, Bifrost and Mimer, each in its own 10 cl bottle. Gunlöd is the pale one, matured for at least 12 months and kept fresh and sweet in a style that sits well beside ripe cheese and dessert. Bifrost is the dark one, given at least 18 months, and it leans towards port and sherry. Put it next to dark chocolate and it comes alive.

    Mimer is the odd one out. It is built on Danish honey and unfiltered Danish apple must, then matured for a minimum of 24 months, twelve of which are spent in American oak casks from Stauning Whisky. The wood lends body and a clear streak of smoke and coal, which is why Mimer drinks more like a whisky than a dessert wine.

    All three are fully organic and hand-brewed in Kolding. The format is well judged: 10 cl gives you enough to taste properly, and little enough that three people can work through all three in an evening without leaving half-empty bottles behind.

    Tasting notes

    Nose

    Honey in three registers. Gunlöd opens bright and fresh with apple and blossom. Bifrost is darker, carrying dried fruit and a nutty edge. From Mimer a dry wisp of smoke rises, the kind you meet in an emptied whisky cask.

    Palate

    Gunlöd is sweet without ever turning sticky, held up by acidity. Bifrost sits closer to port, dark and nutty across the middle. Mimer is the fullest of the three, where honey sweetness runs into oak, coal and smoke and pulls the whole thing somewhere else entirely.

    Finish

    Short and clean on Gunlöd. Longer and more sherried on Bifrost. Mimer lingers the longest, dry smoke on top and a trace of apple underneath.

    Pour it cold, in a small glass, once the plates have been cleared. That is the moment you discover mead does not have to be heavy and cloying. There is apple in this one, there is citrus, and there is an acidity that cuts straight through the honey.

    Gunlöd Danish Nature Brew DNB Organic Mead 50 cl 14% is an organic Danish Mead fermented from organic honey, apple must and citrus fruit and bottled at 14%.

    Gunlöd is the pale one in the range from Danish Nature Brew in Kolding. Organic honey is the base, but it never stands alone. Freshly pressed, unfiltered organic apple must joins the ferment along with organic citrus fruit, and the two draw acidity and freshness into a drink that can otherwise turn heavy on its own. The balance between honey sweetness and acidity is the entire point of the bottle.

    Fermentation and maturation take a minimum of 12 months. Everything is hand-brewed, the mead is fully organic, and there are neither sulphites nor artificial additives in it. Nor is it filtered hard, so a slight haze in the bottle is entirely normal and a sign that nothing has been tightened up afterwards.

    In the glass it looks like a pale dessert wine, and that is where it belongs at the table too. It can take over wherever port would otherwise stand, it handles ripe cheese and dessert with ease, and it is increasingly used as the sweetening element in cocktails and welcome drinks.

    Nose

    Floral honey arrives at once, bright and unmistakable. Behind it sit freshly cut apple and a strip of lemon peel, and there is a waxy quality across the whole thing, the sort you meet standing close to a hive.

    Palate

    Sweet, but never syrupy. Honey fills the front, then the acidity from the apple must cuts in across the middle and clears the way. Citrus peel is clearest at the end and keeps the whole thing upright.

    Finish

    Short, fresh and clean. A trace of honey and a dry citrus note hang on, but the mouth is ready for the next sip quickly.

    Somewhere in central Jutland, honey and apple juice sit fermenting side by side for a year or more, quietly turning into something that tastes like myth. Gunlöd takes her name from the giant Suttungr's daughter, the one who guarded the sacred mead until Odin tricked his way to it and flew off as an eagle. That story gets retold in every bottle.

    Gunlöd is an organic mead from the Danish brewery Danish Nature Brew, made from honey and fresh apple juice and bottled at 14%. Behind the label is Ronnie Gram from Kolding, who got into mead-making after a beekeeper colleague was left with 200 kilos of honey that had started fermenting on its own. What began as an experiment turned into a brewery that now supplies restaurants and wine shops across Denmark. This bottle is from Batch No. 1, produced in 2019, one of the earliest releases of Gunlöd ever made. The mead is brewed from organic honey, unfiltered and freshly pressed organic apple juice, and organic citrus fruit, then fermented and aged for at least 12 months before bottling. The apple juice gives it an acidity you don't find in a traditional honey-and-water mead, and that combination is what sets Gunlöd apart in the Danish mead scene.

    Nose

    Blossom honey meets fresh apple, with a touch of citrus lifting the aroma and keeping it away from anything heavy or syrupy.
