    Mead is one of the oldest drinks in the world, poured long before anyone had heard of a single malt. Mimer carries the name of the wise giant from Norse mythology who guarded the well of wisdom, and there's something fitting about a bottle that's been given the time to slowly merge honey's sweetness with the depth of whisky.

    Mimer Mead is a Danish handcrafted mead from Danish Nature Brew, matured in whisky casks from Stauning Whisky Distillery and bottled at 14%. It's brewed in Kolding from fine Danish spring honey sourced from the Mossø area and unfiltered Danish apple must, and the long time spent with the wood shows clearly in the glass.

    After fermentation, Mimer rests for at least 24 months, including 12 months in American oak casks that previously held Stauning's whisky. That heritage is what gives the bottle its notes of smoke and char alongside the honey's sweetness, setting it apart from the lighter, fresher meads most people know.

    Tasting Notes

    Nose

    Honey and toasted oak meet a hint of smoke, almost like the warmth of an old warehouse.

    Palate

    Sweet honey with a dark, lightly charred edge of caramel, lifted by a fresh acidity from the apple must.

    Finish

    Long and warm, with a slow trail of dried fruit and a last whisper of smoke from the whisky cask.
