Somewhere in central Jutland, honey and apple juice sit fermenting side by side for a year or more, quietly turning into something that tastes like myth. Gunlöd takes her name from the giant Suttungr's daughter, the one who guarded the sacred mead until Odin tricked his way to it and flew off as an eagle. That story gets retold in every bottle.

    Expert Description

Gunlöd is an organic mead from the Danish brewery Danish Nature Brew, made from honey and fresh apple juice and bottled at 14%. Behind the label is Ronnie Gram from Kolding, who got into mead-making after a beekeeper colleague was left with 200 kilos of honey that had started fermenting on its own. What began as an experiment turned into a brewery that now supplies restaurants and wine shops across Denmark. This bottle is from Batch No. 1, produced in 2019, one of the earliest releases of Gunlöd ever made. The mead is brewed from organic honey, unfiltered and freshly pressed organic apple juice, and organic citrus fruit, then fermented and aged for at least 12 months before bottling. The apple juice gives it an acidity you don't find in a traditional honey-and-water mead, and that combination is what sets Gunlöd apart in the Danish mead scene.

    Tasting Notes

    Nose

Blossom honey meets fresh apple, with a touch of citrus lifting the aroma and keeping it away from anything heavy or syrupy.

    Palate

Sweet without being cloying, carried by honey and ripe apples, with a fine acidity from the apple juice cutting through the sweetness and keeping it balanced.

    Finish

Short and fresh, with a last touch of citrus peel and honey fading out quietly.

    Did You Know?

Danish Nature Brew started almost by accident. A beekeeper colleague of founder Ronnie Gram was left with 200 kilos of honey that had begun fermenting on its own. That's what kicked off a brewery that now makes mead based on old Nordic recipes, with a modern culinary twist.

Frequently Asked Questions about Gunlöd Danish Nature Brew Organic Mead

What does Gunlöd mead taste like?

Gunlöd tastes of blossom honey and fresh apple, with an acidity from the apple juice that keeps the sweetness in check. That makes it lighter and fresher than many meads, which can come across heavy or syrupy.

Is Gunlöd mead sweet or dry?

It's sweet, but never cloying. The freshly pressed apple juice brings an acidity that balances the honey's sweetness, so the mead comes across as light rather than heavy.

Can Gunlöd mead be aged, or should it be drunk now?

Mead generally keeps well in the bottle for several years if stored dark and cool. This particular bottle is from Batch No. 1, dating back to 2019, so it's already carrying some age, and that hasn't done it any harm.

How should Gunlöd mead be served?

Chilled, as a light aperitif before a meal, or alongside dessert and cheese. It also works well as the base of a drink, paired with prosecco for instance.

Can Gunlöd mead be used in cocktails?

Yes, Danish Nature Brew uses Gunlöd themselves in several of their own recipes, including a light mead cocktail mixed with prosecco and ice. It works well as the sweetness and aroma element in drinks where you'd normally reach for a liqueur.

Where does the name Gunlöd come from?

Gunlöd comes from Norse mythology. She was the daughter of the giant Suttungr and was tasked with guarding the sacred mead until Odin tricked his way to it and flew off in the shape of an eagle.

What defines Danish Nature Brew's mead?

The brewery is based in Kolding and brews according to old Nordic recipes with a modern culinary twist. They prioritise organic ingredients and craftsmanship over mass production, and their mead is used today both in restaurant kitchens and at home.
