    Stauning Rye Floor Malted is a Danish Rye Whisky bottled at 48%. Stauning Whisky was founded in 2005 by nine friends in Skjern, West Jutland. Rye is the distillery's original expression and flagship from the very beginning. Made from locally grown rye and floor-malted barley – all malted on their own lofts. "Floor Malted" in the name is not a marketing gimmick: it is a genuine description of a technique they use every single day. Matured in ex-bourbon and ex-sherry casks.

    Tasting notes

    Nose

    Fresh and spiced rye, light honey and a hint of blossom. Bread and soft vanilla. Not heavy, but with substance.

    Palate

    Spiced and direct. Rye grain and pepper, followed by sweet maltiness and light caramel. A trace of dried fruit from the sherry casks.

    Finish

    Medium length and spiced. The rye spice persists, followed by a clean, gentle sweetness.

    Where the Clyde bends past old shipyards just outside Glasgow sits one of the Lowlands' last surviving distilleries. Auchentoshan does something almost no other Scottish distillery bothers with: they distill three times instead of two, and locals have long called the result their "breakfast whisky" – that's how light and gentle it is.

    Auchentoshan 12 Years is a Lowland Single Malt Scotch Whisky matured in bourbon and sherry casks and bottled at 40%.

    The distillery sits at the foot of the Kilpatrick Hills just outside Glasgow and has been making whisky since 1823. What sets Auchentoshan apart is its triple distillation – a method historically found almost nowhere else in Scotland outside the Lowlands, and more commonly associated with Ireland. The spirit runs through three copper stills instead of the usual two, producing a lighter, cleaner distillate that then matures in a combination of bourbon and sherry casks for at least 12 years. The name Auchentoshan comes from the Gaelic Achadh an Oisein, "corner of the field", and the distillery also goes by the nickname Glasgow's Malt Whisky, thanks to its closeness to the city.

    The distillery is now owned by Suntory Global Spirits, who took it over in 1994 through Morrison Bowmore Distillers. During the Second World War, one of Auchentoshan's warehouses was hit by a German bomb, and production stood still for several years before resuming in 1948. The soft, lightly sweet character that still defines the whisky today has made it a natural first stop for anyone new to single malt.

    Toasted almonds and a lightly caramelised sweetness meet fresh citrus notes and a touch of honey.

    Signatory Vintage Glen Spey 11 year Un-Chillfiltered Collection is a Single Malt Scotch Whisky from Speyside matured in 1st use hogsheads, bottled at 46% non-chill filtered. Glen Spey is one of the most retiring distilleries in all of Speyside. Founded in 1878 by grain merchant James Stuart, who initially built the site as a harbour mill before buying Macallan and selling Glen Spey to English wine merchants W. & A. Gilbey in 1887 — the first Scottish distillery to come into English hands. Since then the distillery has primarily been used as a supplier to blends.

    This bottle is released by Signatory Vintage as part of their Un-Chillfiltered Collection — always bottled at a minimum of 46% and without chill filtration, preserving all the natural oils and structure. The spirit was distilled on 16 September 2010 and rested in a pair of 1st use hogsheads before being bottled on 7 January 2022. The result is a full, rounded version of a distillery otherwise known for its light and delicate style — thanks to Glen Spey's distinctive purifiers on the spirit stills, which increase reflux and create a cleaner, more perfumed spirit.

    Nose

    Floral tones meet ripe pears and apples, spiced with a trace of vanilla from the casks. Beneath it all lies a light malty sweetness reminiscent of freshly baked cake.

    The release comes from an earlier version of Virgin Oak, which Deanston later gave a new design. Deanston has distilled in a converted cotton mill by the River Teith since 1966 and uses no peat at all.

    Ardnamurchan The Midgie is a Highland Single Malt Scotch Whisky composed of 50% ex-American bourbon casks, 48% port barriques and 2% sherry casks, bottled at 48%. The whisky is made from 75% unpeated and 25% peated malt.

    The cask make-up is unusual in that the port barriques account for almost half. Most distilleries use port as a short finish, while The Midgie carries the casks as a full half of the blend. That gives red fruit and a vinous sweetness that does not normally take up so much room.

    The ratio of peated to unpeated malt is also set differently from the house standard: only a quarter is peated here, where AD/ is an even split. The smoke is therefore a suggestion rather than a floor. The whisky is neither chill filtered nor coloured.

    Rossville Union 5 Year Master Crafted Straight Rye Whiskey has matured for 5 years, the brand's core expression, bottled at 47%. Rossville Union is named after the Rossville Distillery, founded in 1847 by George Ross in Lawrenceburg, Indiana, during rye's golden age. Ross built his distillery atop a water reservoir, providing limestone-filtered water that prevented sulphur and iron compounds from harming the whiskey's flavour. After Prohibition, the distillery was bought by Canadian company Seagram in 1933, and after several changes of ownership, MGP took over the site in 2011. Rossville Union Rye, launched in 2018, was MGP's first rye product under its own name, after decades of supplying rye whiskey to other brands.

    The whisky was created in partnership with golf ambassador Colin Montgomerie to celebrate The 153rd Open at Royal Portrush in Northern Ireland. After maturing in American oak, the whisky is given a final finish in Italian Chianti red wine casks, which lends it a signature fruitiness and a hint of red berries.

    Tasting Notes

    Nose

    Red berries and sweet honey meet ripe peach and pear, with a light touch of red wine.

    Palate

    Lively and fruity with more red berries, sweet honey and juicy pear, carried by the Chianti casks' soft tone.

    Finish

    Soft smoke emerges towards the end, giving a warm, rounded finish.

The distillery is housed in a restored 1800s building on the Baraboo River, near Circus World, and produces its whiskey grain-to-glass from local grain and water.
